Sharon Crider uses up leftover ham to create this stovetop supper. "The delicious combination is great to serve anytime," says the Junction City, Kansas cook.

- In a 10-in. skillet, melt butter over medium heat. In the skillet, layer half of the potatoes, salt, pepper, onions, green pepper and ham; repeat layers. Cover and cook over medium heat for 10-15 minutes or until potatoes are tender., Pour eggs over the top. Cover and cook for 3-5 minutes or until eggs are nearly set. Sprinkle cheese. Cover and cook 3-5 minutes or until eggs are nearly set. Sprinkle with cheese. Cover and cook 3-5 minutes longer or until cheese is melted and eggs are completely set. Cut into wedges. Sprinkle with parsley.

Steps:
- Press thawed potatoes between paper towel to remove moisture; set aside.
- In a 10-inch ovenproof skillet, combine apple, onion, water, and sage; bring to boiling; reduce heat; cook uncovered, over medium-high heat until onion is tender; remove from heat.
- Stir in potatoes and ham.
- In medium bowl, combine milk, eggs, cheese and salt; pour into skillet over potato mixture; do not stir.
- Bake, uncovered, in a 350°F oven for 30-35 minutes or just until center appears set.

HAM & POTATOES IN A SKILLET
My mom showed me this trick to flavor potatoes to go with a ham slice. Easy and delicious. Serve with green beans and/or a salad.

Steps:
- Dice potatoes into small pieces. I use thin skinned potatoes and don't bother to peel, but if you prefer, peeled potatoes work well too. (The potatoes can be cooked in advance, or, of you want a really speedy meal, you could use the pre-cut pre-cooked diced potatoes from the produce section).
- Boil potatoes in lightly salted water until soft, about 25 minutes. Drain.
- Fry ham in heavy skillet over medium heat for about 3 minutes, flip and cook for a few more minutes, until there's a nice bit of juice in the pan. Add brown sugar to the pan, and turn ham to coat. simmer for about 5 minutes, turning occasionally, until ham is heated through.
- Add potatoes to pan (you don't have to remove the ham, just lift it with a fork and put the potatoes underneath). Stir to coat evenly.
- Serve.
SKILLET HAM, CABBAGE AND POTATOES

- In a large skillet over medium heat, saute onions in the margarine. When tender add cabbage and stir. Pour water over, cover and simmer gently on medium low for ten minutes.
- Add potatoes and mix. Cover again and allow to simmer for ten more minutes. Additional water may be needed. Sprinkle seasoning salt and paprika over cabbage and potatoes. Allow to simmer covered for an additional 5 to 10 minutes until cabbage is soft and potatoes are nearly cooked. Mix ham in and finish cooking until ham is hot and potatoes are done.

- In large skillet over med heat, saute chopped onion in margarine. When tender add coarsely chopped cabbage and broth. Stir. Cover and simmer for 10 minutes.
- Add sliced potaotes and mix. Simmer 10 minute Additional broth may be needed. Sprinkle seasoned salt and paprika over potatoes and cabbage. Allow to simmer covered for an additional 5 - 20 minute Mix in ham. Cooking until ham is warm and potatoes are done.

- Melt butter in a large skillet over medium heat; add ham and brown sugar. Cook and stir ham until browned, about 5 minutes. Remove ham with a slotted spoon to a plate, reserving drippings in the skillet.
- Stir cream of mushroom soup, evaporated milk, water, onion, salt, and pepper into the reserved drippings in the skillet; add potato slices and carrot pieces. Place a cover on the skillet, reduce heat to low, and cook mixture at a simmer until potatoes and carrot are tender, about 35 minutes. - Spray a large skillet with pam.
- In the skillet cook ham, celery, and onion till vegetables are tender.
- Stir in potatoes, fresh green beans if using them, water, thyme and pepper.
- Bring to boiling; reduce heat.
- Cover and simmer for 20 minutes or till potatoes are tender and most of the liquid is absorbed.
- If using frozen green beans, add to ham and potato mixture the last 7 minutes of cooking.
- To serve, sprinkle with parmesan cheese.
