- Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
- In large bowl, mix potatoes, ham and 1 1/2 cups of the cheese. Spread in baking dish. In same bowl, mix sour cream, milk and seasoned salt with wire whisk until well blended. Spoon over potato mixture; stir to mix. Cover baking dish with foil.
- Bake 45 minutes. Sprinkle with remaining 1/2 cup cheese. Bake uncovered about 10 minutes longer or until bubbly and thoroughly heated.

- Press hash brown potatoes between paper towels to remove excess moisture. Transfer potatoes to an 8-inch pie dish and press into the bottom and up the sides of the dish to form a crust. Drizzle with melted butter.
- Bake in preheated oven until golden, about 25 minutes. Remove from oven and reduce heat to 350 degrees F (175 degrees C).

HASH BROWN EGG CASSEROLE WITH HAM

- Preheat your oven to 400 degrees F.
- Spray a 9x13 inch pan with nonstick spray, or grease with butter.
- Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
- Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
- Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
- Remove the casserole and reduce the oven temperature to 350.
- Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
- In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
- Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
- Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
- If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

HAM & CHEESE HASH BROWN BAKE (RECIPES FOR LEFTOVER HAM)

- Preheat oven to 375 and spray a XX baking dish.
- Melt 2 TBS butter and saute the onions until they are cooked through (about 4 minutes).
- Add in the remaining 2 TBS butter and Hash Browns and saute for 5 minutes.
- Season well with salt & pepper.
- Remove from heat and add in ham, cheese and scallions and toss until incorporated.
- Scrape into your baking dish.
- Whisk eggs and milk in a small bowl, season with s&p.
- Pour egg/milk mixture slowly and evenly over-top and if you choose sprinkle on some additional cheese, ham and s&p.
- Bake for 35 minutes or until firm and brown around the edges.
- Allow the casserole to rest for 10 minutes before cutting it into squares.
- This can also be prepared, covered and stored in the fridge overnight before cooking.
- **It is not necessary to saute the potatoes...You can choose to simply add them and 2 TBD melted butter to the onions and mix. I like a little more color on the hash browns, which is why I choose to do that. Either way tastes great!
HAM AND HASH BROWN CASSEROLE

- If baking immediately, preheat the oven to 350°F. Spray a 13 x 9 inch baking dish with cooking spray.
- In a skillet cook the bacon until crisp then remove to paper towels to drain. Reserve 2 Tbsp of drippings in the pan.
- Cook the red bell pepper until it begins to soften then add the green onion. Season with salt and black pepper to your taste. Add oil to the pan, if needed. Cook for 1 minute longer then remove from the heat.
- In a large mixing bowl mix the cooked vegetables with the remaining ingredients, reserving a few bacon crumbles, green onion and 1 cup of shredded cheddar cheese for the top.
- Spread evenly into the baking dish.
- Sprinkle the remaining shredded cheese on top. If making in advance, cover with plastic wrap and chill until baking.
- To prepare, place into a preheated 350°F oven and bake for 50 minutes or until the potatoes are tender and the top is golden.
- Rest for 10 minutes then serve.

- Preheat the oven to 350 degrees F. Add the butter to a large heavy skillet. Once foaming and melted, add the garlic, ham, onions and some salt and pepper.
