NO-FUSS HAM PATTIES



No-Fuss Ham Patties image

Folks always want more whenever I make these ham patties. They're fast and easy to make, too.

1 egg, lightly beaten
3 tablespoons sweet pickle relish
8 tablespoons dry bread crumbs, divided
1-1/2 teaspoons ground mustard
10 ounces ground fully cooked ham
2 to 4 tablespoons whole milk, optional
3 tablespoons butter

Steps:

  • In a large bowl, combine the egg, pickle relish, 6 tablespoons bread crumbs and mustard. Crumble ham over mixture and mix well. Gradually add milk if mixture is too thick. Shape into four patties. Sprinkle each side with remaining bread crumbs. , In a large skillet, cook patties over medium heat in butter for 4-5 minutes on each side or until a thermometer reaches 160°.

Easter ham turns into a perfect combo of pancakes and croquettes for a nice way to use up some of the leftovers. Serve with a honey mustard sauce or any variety of chutneys. Applesauce is also a nice accompaniment.

1 cup finely chopped cooked ham
1 ½ cups cold mashed potatoes
3 green onions, finely chopped
1 egg
1 tablespoon Dijon mustard
½ teaspoon dried dill weed
½ teaspoon salt
½ teaspoon ground black pepper
1 ½ cups panko bread crumbs, divided
½ cup vegetable oil for frying, or as needed

Steps:

  • Mix ham, mashed potatoes, green onions, egg, Dijon mustard, dill weed, salt, black pepper, and 1/4 cup panko bread crumbs together in a bowl until thoroughly combined. If mixture is too moist to hold together, mix in an additional 1/4 cup of crumbs.
  • Place remaining panko crumbs into a shallow bowl.
  • Scoop about 1/3 cup of the mixture and form into a ball; slightly flatten into a patty. Press both sides of patty into the panko crumbs; tap off any loose crumbs. Repeat with remaining mixture.
  • Heat vegetable oil in a skillet over medium heat until very hot; pan-fry 2 or 3 patties at a time in the hot oil until golden brown on each side, 3 to 4 minutes per side.

French Savory Cake with Ham, Cheese, and Olives image

This French savory cake is filled with scrumptious, savory ingredients: salty ham, aged cheese, and briny olives. A must for a francophile happy hour!

1 1/2 cups 187 g / 375 ml all-purpose flour
2 tsp 10 ml baking powder
1/2 tsp 2 ml Herbes de Provence
1/2 tsp 2 ml kosher salt, or fine sea salt
1/2 tsp 2 ml freshly ground black pepper
4 eggs
1/2 cup 125 ml plain yogurt
1/4 cup 60 ml extra-virgin olive oil
1 cup 113 g / 4 oz grated Comté, Gruyère, or aged cheddar cheese
3/4 cup 100 g / 3.5 oz diced cooked ham
3/4 cup 85 g / 3 oz pitted green or black olives

Steps:

  • Preheat oven to 350°F (175°C). Grease a 9 x 5-in (23 x 12 cm) loaf pan (see note for other size options). Line the bottom and two longer sides of the pan with a sling of parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, herbes de Provence, salt, and pepper. In a second bowl, whisk together the eggs, yogurt, and olive oil. Pour the mixture over the dry ingredients and stir, using a spatula, until just combined. Fold in the cheese, ham, and olives. Transfer the batter to the prepared loaf pan. Use the spatula to smooth out the surface.
  • Bake until the bread is puffed and golden and a toothpick inserted in the center comes out clean, about 45 minutes. Remove from oven and let cool for 15 minutes. Pull on the parchment paper to unmold the cake, running a knife around the pan if necessary. Transfer to a wire rack and let cool completely.
  • Slice the bread and serve at room temperature, or warm in a 300°F (150°C) oven for 10 minutes before serving.
  • STORAGE: The flavors of this French savory cake keep developing as it sits, which makes it even better the next day. If you can, make it in advance, let it rool completely, then wrap it tightly in plastic wrap. Warm in a 300°F (150°C) oven for 10 minutes before serving.
  • French savory cake will keep refrigerated, tightly wrapped, for up to 1 week, or frozen for up to 1 month.
  • NOTE: The batter can also be baked in two small loaf pans (6 x 3.5 in / 15 x 9 cm) for about 25 minutes, or in a standard muffin pan. Line the pan with parchment paper cups. Divide the batter between the cups and bake for 20 minutes, or until the savory cupcakes are lightly golden and a toothpick inserted in the center comes out clean.

Another one of my savoury "cake" recipes from France. This recipe is slightly more substantial than my Recipe #316039, as this recipe contains ham with white wine and port! Serve this as alternative sandwich bread or as a light snack spread with cream cheese or butter. This cake recipe will also make fantastic little appetisers if the loaf is cut into small cubes and served with olives, cubes of cheese and savoury spreads. Please note that the texture of this savoury cake is NOT like a sweet dessert cake - it will be slightly holey with a robust and slightly chewy texture, almost like sourdough.

4 eggs
1 2/3 cups plain white flour
2 1/2 teaspoons baking powder
1/3 cup olive oil
2 tablespoons butter, melted
1/2 cup dry white wine
1/4 cup port wine
1 1/2 cups pitted green olives or 1 1/2 cups pitted black olives
2 cups chopped ham
2 cups gruyere or 2 cups emmenthaler cheese
salt
pepper

Steps:

  • Heat oven to 200C or 400°F.
  • In a bowl beat the eggs until pale yellow and frothy.
  • Stir in flour, baking powder, olive oil, melted butter, wine and port.
  • Chop the ham, cube the cheese and slice the olives.
  • Stir in ham, cheese, olives, salt and pepper to taste.
  • Pour into greased bread tin, loaf tin or cake pan (11 X 4 inches would be a good size).
  • Bake for about 50 minutes, or until well risen and golden brown.
  • Serve cold in slices or as sandwich bread.
  • This can be frozen in slices or as one whole loaf.

2 1/2 cups shredded cheddar cheese
nonstick cooking spray
3 cups Bisquick
1 1/4 cups milk
1/2 cup sugar
1 egg
1/2 teaspoon salt
1/2 cup shredded gruyere cheese
1/2 small red onion, sauteed
1/4 lb deli ham, cut into pieces
2 tablespoons chives, chopped
1/4-1/2 cup unsalted butter, room temperature (plus more for serving)

Steps:

  • Make the cheese garnish:.
  • Place 1 ½ cups of cheddar cheese in a microwave safe bowl and microwave in 15 second intervals, stirring in between, until smooth and pliable.
  • Scoop the cheese into the mold, pressing and spreading into the bottom. You don't want to fill the entire mold - just the Han Solo indentations and enough to cover the entire rectangle.
  • Microwave for 15 seconds then tap on the counter. Freeze until solid at least 1 hour.
  • Carefully remove the cheese from the mold and set aside in the fridge.
  • Make the savory cake:.
  • Preheat the oven to 350 degrees F. Line a 7x11 inch cake pan with parchment paper and spray with nonstick spray.
  • Combine the Bisquick, milk, sugar, egg, and salt in a large bowl and beat with an electric hand mixer until combined.
  • Add the Gruyere cheese, sautéed onion, ham, and chives and fold with a spatula to combine.
  • Pour the mixture into the prepared cake pan and bake until lightly golden brown, about 30-35 minutes or until a toothpick comes out clean.
  • Let the cake cool completely in pan. Meanwhile, take the Han Solo cheese garnish out of the fridge and let come to room temperature.
  • Run a small offset around the edges of the cake and invert onto a cutting board. Remove parchment paper and then invert again. If needed, level the top of the cake with a serrated knife.
  • Place the cheese garnish on top of the cake and trim the cake with a serrated knife so that the cake and cheese have the same dimensions.
  • Set the cheese garnish aside and spread the softened butter over the top of the cake.
  • Place the cheese on top of the butter, pressing to adhere.
  • Transfer the cake to a platter and serve with more ham and butter.
