CROCK POT HAM BONE AND BEANS
Many variations to Ham Bone (or Hocks) and beans but this is pretty much how I remember it from my childhood. I find by not soaking the beans they have better texture and flavor.I use Great Northern Beans as my favorite choice of bean for this recipe. I have used 15 bean mix with good results just omit the ham flavor packet.

Steps:
- Add onion and celery to crock pot.
- Place ham bone or hocks on top of onion and celery.
- Pour rinsed beans around ham and sprinkle with pepper.
- Add bay leaves and garlic.
- Add chicken stock and stir to combine all ingredients cover and cook on low for 8 hours.
- When ham is tender (6-7 hours) Remove meat from bones (discarding fat and bones) and return meat to the pot. Stir to combine and break up ham pieces.
- To thicken smash some of the beans on the side of crock pot.
- When done skim any fat off and discard bay leaves.

HAM BONE SOUP
Don't let that leftover bone from your holiday smoked ham go to waste! Put it to use in this hearty, delicious soup, which can be made with ingredients you probably have in your fridge and pantry. It's nice if you have a little meat left clinging to the bone after you've carved off all the ham, but even if you don't, the bone alone will add rich flavor and smokiness to the dish. You'll need to soak the dried beans overnight, so plan accordingly. Luckily this recipe makes a big batch as the soup keeps well in the freezer (see Cook's Note).

- The day before you want to make the soup. put the beans in a large bowl and add cold water to cover by several inches. Soak overnight (or at least 8 hours) in the refrigerator.
- Drain the beans and rinse. Heat the olive oil in a large Dutch oven over medium heat. Add the carrots, celery and leeks and season with 1 teaspoon of salt. Cook and stir until the vegetables are softened, about 5 minutes.
- Add the tomato paste and thyme and stir to coat the vegetables. Let the tomato paste toast for 1 minute, stirring, then add the bay leaves and 12 cups of water. Add the beans and nestle the ham bone in. Bring to a simmer and cook, uncovered, until the beans are almost tender, 45 minutes to 1 hour.
- Add the escarole, another 2 cups of water and 1 teaspoon salt. Return the soup to a simmer and cook until thickened and the beans and escarole are very tender, 20 to 30 minutes.
- Remove the bay leaves and ham bone from the soup and let cool until you can handle the bone. Shred any useable meat left on the bone and stir back into the soup. Season with salt and pepper before serving.

Steps:
- Sort through dry beans removing any sticks, stones or other foreign items.
- Soak beans in water overnight.
- Drain beans, rinse under cold water and set aside.
- Place the cooked ham bone or ham hocks in a large sauce pan.
- Add the dry beans.
- Add enough water to cover the beans and bones by about three inches.
- Place over medium heat, bring to a low boil and let cook for one hour.
- Remove the bone, set aside and let cool.
- Add chopped onion.
- Add chopped celery.
- Add sugar.
- Add salt.
- Add Black Pepper and stir well.
- Remove any meat from the bone and discard the bone.
- Return the meat to the pot with the beans.
- Continue to cook the beans until they are soft and tender.
- Taste the beans and add additional salt and/or black pepper to taste.
- Mix flour and water, removing any large lumps as you stir.
- Stir the mixture in the beans and let cook for a few minutes longer to thicken.
- Serve warm and enjoy!
HAM AND BEANS (CROCK-POT)
This is how I have been making my ham and beans for years. . .I think you either love these or hate these!!! Total comfort food for me, as I make them very similar to my dad's recipe which I had growing up. Perfect served with corn bread on a cool fall or winter day. I add 3 T of Andrea's Sauce (a savory steak marinade with flavors of worchester, garlic, and onion), but Recipezaar does not recognize it. This freezes well, so don't be afraid to serve it once and freeze the leftovers for later!

- Rinse and sort thru beans (has anyone ever really found a rock in these?). Cover with water and let sit overnight.
- In the morning, drain water, rinse again and place beans in the crockpot. Dump in all of the other ingredients (except ham bone) and give it a few good stirs.
- Put the ham bone in the crockpot, cover and cook on high for 6-8 hours.
- Remove the bay leaf, ham bone and fish out any bones that may have fallen off during cooking. Stir the beans a few times. Remove 1 cup of the beans and place in a bowl, mash them with a potato masher or back of a spoon, then return to the beans and stir; this helps thicken it up a bit.
- Take off any meat left on the ham bone, chop and return it to the crockpot.
- Stir again and serve!

- Place bean mix into a large bowl and cover with several inches of water; soak for at least 24 hours. Drain completely.
- Bring chicken stock to a boil in a pot large enough to hold the beans and, eventually, the ham bone. Add the soaked beans; reduce heat and simmer until tender, about 1 hour.
- Bring stock and beans back to a boil. Add ham bone, onion, carrots, celery, garlic, and bay leaves. Reduce heat to low and simmer until vegetables are soft, about 1 hour. Add chopped ham, liquid smoke, and mustard powder. Stir and let simmer until flavors blend, about 30 minutes more.
- Remove ham bone from the soup. Season with salt and pepper.

This is cheap eating at it's best. Really good for scraping by at the end of the month if your cash gets low. Goes best with freshly baked corn muffins drizzled with honey.

- Sort beans and soak in enough water to cover overnight.
- Or you may sort them and place in a saucepan with 2-inches of water to cover.
- Bring them to a boil, boil for 3 minutes, then cover and remove from heat.
- Allow to sit for one hour after boiling (don't lift the lid).
- Whichever method you use, rinse and drain the beans before placing them in the crock pot.
- Put the rinsed beans, garlic, onion, salt, pepper, parsley, cloves, ham (chopped into large chunks) or ham hocks into the crock pot along with 6 cups water or broth.
- Cover crock, and cook on low for about 8 hours, or until beans are tender and creamy.
- Skim any excess fat, if necessary, before serving.
MOM'S HAM BONE BEAN SOUP
This is the bean soup my mom used to make whenever we'd finished a ham -- using the ham bone makes a wonderful stock for the soup. Enjoy!

- Soak beans according to package directions, either overnight, or quick 1 hour soak. Drain and rinse beans.
- Add water, ham bone and broths to beans in stockpot. Cut 1 stalk of celery into 3 pieces and add to beans along with chopped onion and bay leaves. Bring to boil, cover partially, lower heat and simmer 90 minutes, or until beans are tender. Remove bay leaves and celery.
- Add tomatoes, chopped carrots and other two stalks of celery, chopped finely. Remove bone and take off any remaining ham and chop finely. Add additional ham if needed to make 2 cups and add to soup.
- Use a potato masher or immersion blender to blend slightly, thickening the soup with the mashed beans.
- Great served with a dolop of horseradish.

HAM AND BEANS
My Mom created this recipe and I really enjoyed it as a child. As an adult, my taste changed just a bit so I modified her recipe to 'kick it up' a bit. It is fabulous even though the ingredients list is quite short! This is a must make with leftover ham and everyone agrees it's absolutely delicious.
