A strata -- literally, "layers" -- is a savory bread casserole. Essentially, you pour an egg mixture over bread and cheese and let soak in overnight.

Unsalted butter, for greasing dish
1 pound Italian loaf, crust removed, cut crosswise into 1/2-inch slices
1 cup diced Virginia ham (1/4-inch dice)
2 cups grated Swiss cheese
2 tablespoons minced chives
3 small tomatoes, cored and sliced into 1/4-inch rounds
8 large eggs
4 cups milk
2 tablespoons Dijon mustard
2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Butter a 9-by-13-inch baking dish. Arrange half of the bread slices in the bottom of the dish. Sprinkle with half of the ham, cheese, and chives. Add another layer of bread and cover it with the remaining ham, cheese, and chives. Arrange the tomato slices on top.
  • In a large bowl, whisk the eggs, milk, mustard, salt, and pepper until well combined. Pour mixture over the bread and cheese layers. Cover and refrigerate overnight.
  • Preheat oven to 350 degrees. Let strata come to room temperature (about 25 minutes). Bake strata, uncovered, until golden and fluffy and a knife inserted comes out clean (60 to 70 minutes). Let stand 20 minutes before serving.

1 tablespoon unsalted butter, room temperature
10 large eggs
2 1/2 cups whole milk
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 teaspoon salt
1 loaf bread, Pullman or sandwich style, cut into 1-inch pieces
1 pound boiled or baked deli ham, chopped
5 scallions, chopped (1/2 cup)
8 ounces sharp cheddar, shredded

Steps:

  • Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
  • Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
  • Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.
  • Preheat the oven to 350 degrees Fahrenheit. Pull strata out of fridge and let come to room temperature for 15 minutes. Bake the strata, uncovered, until puffed and lightly golden brown, about 1 hour to 1 hour and 20 minutes. Let rest for 5 minutes before serving.

4 oz. Sliced swiss cheese
5 slice potato bread or other firm white bread
5 large eggs
2 1/2 c. whole milk

Steps:

  • Heat oven to 350°F. Coat a small nonstick skillet and a shallow 2-qt baking dish with nonstick spray.
  • Heat skillet over medium-high heat. Add onion and sauté 4 minutes, or until golden and soft. Add ham, spinach and cheese; stir to mix well.
  • Spread half the ham mixture over bottom of prepared baking dish. Top with bread, slices overlapping, then remaining ham mixture. Whisk remaining ingredients in a medium bowl until blended. Pour evenly over strata. Cover and refrigerate up to 1 day.
  • To bake: Heat oven to 350°F. Bake uncovered 40 to 50 minutes until puffed and lightly browned.

Unsalted butter, for the baking dish
2 tablespoons olive oil
12 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground black pepper
3 cups half-and-half
1/4 cup grated Parmesan
10 large eggs
One 12-ounce loaf rustic Italian bread, crusts removed, cut into 1-inch cubes, preferably stale (about 6 cups)
2 cups shredded Swiss cheese
6 ounces diced ham

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
  • Whisk the half-and-half, Parmesan and eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Swiss cheese, followed by the cooked mushrooms and the ham. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. 12 ounces rye bread (about 5 cups) or 12 ounces pumpernickel bread, cut into 1-inch cubes (about 5 cups)
1/2 cup ham, chopped
1 teaspoon olive oil (optional)
1/2 small onion, minced
3 garlic cloves, roughly chopped
1 lb mushroom, sliced
3 cups milk
6 eggs, beaten slightly
1 teaspoon dried thyme
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
6 ounces shredded swiss cheese, divided (about 1-1/2 cups)

Steps:

  • Preheat oven to 400 degrees. Spread bread cubes in a single layer on a baking sheet; bake 20 minutes, till slightly dried.
  • While bread is baking, heat a large skillet over medium heat. Add ham and saute a few minutes. Add oil (if desired) and stir in onion, garlic, and mushrooms. Saute till onion and garlic are golden and soft and mushrooms have released their liquid. Remove from heat and set aside.
  • Whisk together milk, egg, thyme, pepper, and salt.
  • To assemble the strata, layer half the bread cubes in the bottom of a lightly greased 9 by 13 inch glass baking dish. Sprinkle with half the ham mixture and 1/3 of the swiss cheese. Repeat layers. Gently pour egg mixture over layers and top with remaining 1/3 swiss cheese. Cover tightly with aluminum foil and refrigerate* at least 4 hours, preferably overnight.
  • To bake the strata, preheat oven to 350 degrees. Bake strata, still covered with foil, for 30 minutes. Remove foil and continue baking for 20-30 minutes, until cheese on top is melted and egg portion is set (check by inserting a knife in the center--if it comes back without egg on it, you're set!).
  • Let strata rest 5 minutes before serving.
  • *Refrigeration time not included in recipe prep/cooking time.

Dried cranberries

2 1/2 cups chopped broccoli
2 1/2 cups shredded Sharp Cheddar cheese
6 eggs
3 1/2 cups milk
4 green onion diced
1 teaspoon dry mustard
1/2 teaspoon smoked paprika
1 teaspoon dried parsley
salt & pepper to taste
1 cup bread (cubed)
2 Tablespoons melted butter
1/2 cup shredded Sharp Cheddar cheese

Steps:

  • **DISH CAN BE MADE A DAY AHEAD
  • When ready to make:
  • Preheat oven to 350. Grease a 9x13 casserole dish
  • Add the bread crumbs to the bottom of the casserole dish.
  • Layer on the ham, broccoli, onion, and cheese.
  • Combine the milk and the eggs in a large bowl. Whisk until completely blended. Add in the dry mustard, paprika, and parsley. Mix until combined.
