Brunch for a bunch? Serve your bunch ham and cheese sandwiches that magically turn into a tasty egg bake.

1 loaf (1 lb) French bread, cut into 1/2-inch slices
2 tablespoons Dijon mustard
8 oz thinly sliced cooked ham
8 oz thinly sliced Swiss cheese
4 eggs
2 cups milk
1/4 cup grated Parmesan cheese
1/4 cup Progresso™ plain bread crumbs
2 tablespoons chopped fresh parsley
3 tablespoons butter or margarine, melted

Steps:

  • In ungreased 13x9-inch (3-quart) glass baking dish, arrange half of the bread slices, overlapping as needed. Brush bread in dish with mustard. Top evenly with ham and Swiss cheese, overlapping as needed. Top with remaining bread slices, arranging them over first layer of bread slices to make sandwiches.
  • In medium bowl, beat eggs and milk with wire whisk until well blended. Carefully pour over sandwiches. Cover; refrigerate at least 1 hour but no longer than 12 hours.
  • Meanwhile, in small bowl, mix Parmesan cheese, bread crumbs, parsley and butter. Set aside.
  • Heat oven to 375°F. Sprinkle crumb topping over casserole. Bake uncovered 30 to 35 minutes or until sandwiches are puffed and golden brown.

2 cups cubed fully cooked ham
2 cups shredded Swiss cheese
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup sour cream
1/2 cup chopped green pepper
1/2 cup chopped onion

Steps:

  • In a greased 13x9-in. baking dish, layer half the noodles, ham and cheese. , In a large bowl, combine the soup, sour cream, green pepper and onion; spread half over the top. Repeat layers. Bake, uncovered, at 350° for 40-45 minutes or until heated through.

8 ounces cooked ham, cubed
2 cups shredded Cheddar cheese
1 ½ cups diced Swiss cheese
6 eggs
3 ½ cups milk
½ teaspoon onion powder
2 cups crushed cornflakes cereal
½ cup butter, melted

Steps:

  • Lightly grease a 9x13 inch baking dish. Line the bottom of the dish with half the bread cubes. Sprinkle with ham, Cheddar cheese, and Swiss cheese, and top with remaining bread. In a bowl, beat together the eggs, milk, and onion powder. Pour evenly over bread. Cover, and refrigerate overnight.
  • Preheat oven to 375 degrees F (190 degrees C). In a small bowl, blend the crushed cornflakes and melted butter. Spread evenly over the casserole.

This quick and easy breakfast casserole featuring croissants, ham and cheese, is perfect for breakfast, brunch, or even dinner!

3 large croissants
8 ounces chopped cooked ham
1 1/2 cups shredded Swiss cheese
6 eggs
1 cup half and half
1 tablespoon honey
1 teaspoon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
Fresh parsley, for garnish

Steps:

  • Spray a deep-dish pie plate or 9x9 inch baking pan with cooking spray. Cut croissants in half lengthwise, then tear or cut each half into 5-6 pieces. Place croissant pieces in prepared pan. Sprinkle with ham and cheese.
  • In large bowl, whisk together eggs, half-and-half, honey, mustard, salt and pepper.
  • Pour egg mixture over croissants; press croissant pieces into egg mixture to moisten completely. Cover tightly with foil and refrigerate for at least 8 hours but no longer than 24 hours.
  • Preheat oven to 325 degrees. Bake, covered, for 35 minutes. Uncover and bake 25 to 30 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Garnish with fresh chopped parsley, if desired.

Steps:

  • Butter a 9x13x2 inch ovenproof dish.
  • Layer the dish with the bread, then the ham, then the Swiss cheese.
  • Whisk together the eggs, milk, butter, dry mustard, and salt and pepper.
  • Pour over bread mixture and cover.
  • Refrigerate overnight.
  • Uncover and bake for 50 minutes at 350°F.
  • Let stand for 5 minutes.

A non-processed version of Recipe #224911. It still uses prepackaged stuffing mix, but you can substitute homemade croutons, or leftover homemade stuffing (don't use the water either if your stuffing is already prepared).

1 (6 ounce) package seasoned stuffing mix
1 1/2 cups hot water
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1 pinch salt
1 pinch pepper
1 pinch nutmeg
1 cup swiss cheese, shredded
3 cups cooked ham, cubed
1 lb asparagus spear

Steps:

  • Preheat oven to 350°F.
  • Combine stuffing and hot water in a medium bowl and let sit for 5 minutes.
  • In a medium sauce pan over medium high heat, melt butter. Once melted, sprinkle flour over the top and whisk to combine.
  • Continue to whisk for a minute, allowing the flour mixture to cook a little. Then add the milk, all at once, whisking continuously to prevent lumps. Once all of the milk has been incorporated, bring to a boil. Remove from heat.
  • Add a pinch each of salt, pepper, and nutmeg. Then add, a handful at a time, the cheese. Whisk in each addition until it is completely melted and then add the next handful (there should be plenty of heat in the mixture to melt all of the cheese).
  • Wash asparagus and snap woody ends off (or trim bottom 2 inches off). Cut the rest into 2 inch pieces. Place in a 9"x13" baking dish along with the ham. Pour the cheese sauce over the top and stir to combine. Top with the stuffing.
  • Bake for 30 minutes at 350F or until golden brown and bubbly.
