Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
- In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
- Bake in preheated oven for 25 minutes, or until lightly browned.

Steps:
- Heat olive oil over medium heat in a large skillet. Stir in ham and cook until the edges are slightly browned, about 3 minutes.
- Stir in garlic; cook until fragrant and edges are barely golden, about 1 minute.
- Pour chicken broth over ham and garlic; bring to a simmer. Stir in butternut squash, red pepper flakes, and salt. Cook until squash is tender, about 15 minutes. Stir in black pepper and reduce heat to low.
- Gently stir mascarpone cheese into squash mixture until completely incorporated. Stir in Italian parsley. Remove from heat and cover.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and return to pot.
- Pour butternut-mascarpone sauce over spaghetti, stirring until combined. Sprinkle Parmigiano-Reggiano cheese over spaghetti and serve.

- Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
- Cook egg noodles just until al dente, according to package instructions. Drain.
- While the noodles are cooking, place mustard, ham, condensed soup, and optional frozen green beans in a large bowl.
- Pour the drained, cooked, hot noodles over the rest of the ingredients in the bowl and stir to combine.

SPAGHETTI SQUASH CASSEROLE

- Preheat oven to 350.
- In a bowl, mix ham, spaghetti squash, and mushrooms. Set aside.
- In a separate bowl, combine soup and milk (or half n half). Mix well. Fold in half of the cheese.
- Spray a 11 x 7 baking dish.
- Pour the ham ingredients into the pan. Sprinkle the broccoli florets and cheese over the top of the ham.
- Pour the soup bowl ingredients over top the ham and broccoli ingredients.
- In a small bowl, combine the seasoned breadcrumbs and butter together. Sprinkle over the soup layer.
- Bake for approximately 30 - 35 minutes.
- Optional: You can bake the dish after step 6, and in the last few minutes of cooking time, add the breadcrumbs and broil to a desired brownness if your oven runs hot and may burn the crumbs before the cooking time is up.

- 1. Prep: Bake squash at 375 for an hour and let cool. Once cool slice in half and clean out the seeds. With a fork remove the "spaghetti" and place in a bowl to use later. And save the squash shells, too.
- 2. In a pan melt the butter and lightly brown the garlic (about a minute or two), then add the onion and cook until translucent. Stir in the half and half until heated through and add the diced ham, until heated, then stir in the frozen peas 1/2 cup at a time. When heated through (about 3-5 minutes) add in the shredded cheeses (or parmigiano as an alternative)and salt and pepper to taste. Now mix the ham and peas into the squash "noodles" and put back into the squash shells. Top with more cheese (about a small handful) and microwave for 2-3 minutes or until additional cheese is melted.

- Preheat oven to 350 degrees. Place squash & onions in large pot with small amount of water over medium heat. Bring to simmer and cook until tender, about 8 - 10 minutes, then drain into colander. Place in large bowl and mash with potato masher. Add butter and stir til melted. In separate bowl, combine eggs, parsley, cheese, salt and pepper and add to vegetable mixture.
