Pineapple and green chilies flavor this salad from Margaret Pache. "I used to make this with rice, then decided to try couscous for something different," explains the Mesa, Arizona cook.

Number Of Ingredients 10

3/4 cup chicken broth
1 cup uncooked couscous
1 can (20 ounces) pineapple tidbits, drained
1 can (4 ounces) chopped green chilies, drained
1/4 cup chopped pecans, toasted
3 green onions, chopped
2 tablespoons olive oil
1 tablespoon minced fresh mint
1 garlic clove, minced
4-1/2 cups baby spinach

Steps:

  • In a small saucepan, bring broth to a boil. Stir in couscous. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork. In a large bowl, combine the couscous, pineapple, chilies, pecans, onions, oil, mint and garlic; toss to coat. Refrigerate until chilled. Serve over spinach.

Couscous side dish that is easy to make and kid friendly. It goes great with any seafood dish and would be excellent served with Teryaki Chicken. I served with Grilled Tuna Steaks and steamed green beans. Use leftovers as a healthy mid-day snack :-)

Number Of Ingredients 10

1 cup couscous, dry
1 cup chicken broth
1 cup diced red pepper
1 cup pineapple tidbits
1/4 cup pineapple juice
1 tablespoon olive oil
1 tablespoon spicy brown mustard
salt
pepper
1 tablespoon dried parsley

Steps:

  • Bring chicken broth (or water) to boil in medium saucepan.
  • Add dry couscous to boiling liquid, stir just to coat couscous, remove from the heat and cover with lid.
  • Let sit for 5 minutes.
  • While couscous is setting; mix well with whisk the pineapple juice, olive oil and Spicy Brown Mustard (can use Dijon or Whole Grain), salt/pepper to taste. Set "dressing" aside.
  • Remove lid from saucepan and fluff couscous with fork.
  • Add pineapple tidbits, diced red pepper, "dressing" and parsley to couscous and mix well.
  • Enjoy!

1 fresh pineapple, leave outer skin on
2 cups cooked ham, cut into chunks
6 cherry tomatoes, halved
1 cup celery, sliced
1/4 cup green onion, sliced
1/2 cup sour cream
1/2 teaspoon dill weed
1/2 teaspoon hot mustard
1/4 teaspoon salt
1/4 teaspoon lemon juice
1/8 teaspoon garlic salt
1/8 teaspoon pepper

Steps:

  • Cut pineapple in half lengthwise through crown. Remove fruit. leaving shells intact. Core and dice fruit.
  • In large bowl, combine pineapple, ham chunks, cherry tomatoes, celery and green onions.
  • In small bowl, combine all remaining ingredients for dressing, blending well.
  • Spoon dressing over pineapple combination, tossing gently to mix.
  • Pile salad into pineapple shells to serve. Makes 4 to 6 servings.

1 cup couscous
1/2 teaspoon salt
1/2 lb cubed ham
4 ripe plum tomatoes
12 large basil leaves
2 green onions
1 cup garbanzo beans
1/2 cup stuffed olives
1 tablespoon olive oil
1 tablespoon lemon juice

Steps:

  • Cook couscous according to package direstions.
  • Let stand for 5 minutes.
  • Cube ham.
  • Coursely chop tomatoes.
  • Thinly slice basil and green onions.
  • Rinse, drain garbonzo beans.
  • Fluff couscous with fork in large serving bowl.
  • Stir in ham, tomatoes, basil, onions, beans, olives, oil, and lemon juice.
  • Garnish with basil.
