HAM AND PICKLE GRILLED CHEESE SANDWICH

Steps:
- Butter one side of each slice of bread and spread mustard on the other side.
- Heat a skillet to medium high.
- Place one slice of bread butter side down into the skillet.
- Top the slice of bread with cheese, ham, more cheese, pickles, more cheese and then the other slice of bread.
- Turn the sandwich over to toast the second slice of bread.
- Remove from heat and enjoy!

Steps:
- Smear both sides of bread slices with mayonnaise. Combine cheeses in a bowl. Sprinkle 4 slices bread with half of cheese mixture, dividing equally. Top each with 3-4 pickles. Divide prosciutto among sandwiches; top with remaining cheese. Cover with remaining bread.
- Melt 2 tablespoons butter in each of 2 large heavy skillets over medium-low heat. Add 2 sandwiches to each skillet and cook until bread is golden, 9-10 minutes. Add 1 tablespoons butter to each skillet, flip sandwiches, and cook until bread is golden and cheese is melted, 9-10 minutes longer.

- To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
- Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
- Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.

I grew up loving grilled cheese sandwiches. Later I started adding ham. Here is my current, kicked-up a notch version. Definitely not your momma's grilled cheese.

Steps:
- Spread spicy mustard on one side of each slice of bread. I use jalapeno mustard.
- Distribute cheese evenly among the 8 pieces of bread.
- Pan fry ham until slightly caramelized. Remove and set to one side.
- Pan fry onions in half the butter until caramelized. Remove and set to one side.
- Melt remaining butter in pan or griddle.
- Place 4 slices of bread (chees side up) on the pan or griddle and move around to sop up the butter.
- Distribute the ham slices among the four slices in the pan or griddle.
- Top each with caramelized onions.
- Top with remaining 4 slices (cheese side down).
- Put a thin pat of butter on top of each sandwich, then flip when golden brown.
- Brown remaining side, moving around in the pan or griddle to ensure even coating of butter.
- Remove from heat and cut in half diagonally and serve with chips and a big dill pickle slice.

- In a small bowl combine cream cheese and chopped dill pickle.
- Spread mixture on slice of bread.
- Top with ham, mustard, and swiss cheese and another slice of bread.
- Heat a non stick frying pan over medium heat.
- Butter outside of sandwich.
- Grill about 4 minutes each side.

- Heat a small nonstick frying pan to medium.
- Butter one side of each slice of bread.
- Place on slice of bread butter side down into the frypan.
- Layer cheese, ham, cheese, ham,& cheese.
- Fry for 1 1/2 minutes and check underside to see if bread is golden brown.
- Flip sandwich if ready, if not leave in pan for no longer than 1 more minute.
- Remove sandwich from pan and rest on spatula to allow the sandwich to cool without getting soggy.
- Slice& eat.
