LEFTOVER HAM CASSEROLE

Leftover Ham Casserole with noodles, ham, corn, creamy garlic sauce and crunchy panko topping. Easy comfort food dinner for busy days!

1 tablespoon butter
2 teaspoons minced garlic
1/2 teaspoon Italian seasoning
1/4 teaspoon dried oregano
1 3/4 cup half and half
1 1/2 tablespoons cornstarch
1/2 cup Parmesan cheese
3/4 cup shredded cheddar cheese
4 cups uncooked wide egg noodles
15 oz can whole kernel corn (drained and rinsed)
2 cups chopped leftover ham
2 tablespoons butter (melted)
1/4 cup panko breading or crushed Ritz crackers

Steps:

  • Cook noodles according to instructions on the packaging. Drain and rinse with cold water. Set aside.
  • Preheat oven to 375 degrees F.
  • In a medium saucepan, melt butter over medium heat.
  • Add garlic and stir. Saute for 3 minutes, or until very fragrant.
  • Add seasoning and stir in. Saute for 1 minute.
  • Mix cornstarch with half and half. Slowly, pour it over garlic, stirring constantly.
  • Simmer until the sauce thickens. Add cheese and stir until melted. Set aside.
  • Butter a 9"x7" casserole dish.
  • Combine noodles, ham, corn and the sauce and spread the mixture in a prepared baking dish.
  • Combine melted butter and Panko breadcrumbs. Sprinkle over the noodle casserole.
  • Bake casserole in preheated oven for 20 to 25 minutes or until it bubbles on the edges and the topping is toasty and golden.
  • Remove from oven and cool before serving.

2 cups cubed cooked ham
1 (11 ounce) can whole kernel corn, drained
1 (10.75 ounce) can condensed cream of asparagus soup
3 eggs, beaten
2 tablespoons prepared yellow mustard
2 tablespoons butter
¾ cup chopped onion
¾ cup chopped celery, with leaves
2 tablespoons garlic salt
½ cup seasoned bread crumbs
¼ cup grated Parmesan cheese
¾ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 1 1/2 quart casserole dish with vegetable oil cooking spray.
  • In a medium bowl, mix together the cubed ham, corn, cream of asparagus soup (undiluted), eggs and mustard. Melt butter in a skillet over medium heat. Add onions, celery and garlic salt; cook, stirring until tender. Stir the onion mixture into the egg mixture. Transfer to the prepared casserole dish. Sprinkle a layer of bread crumbs over the top, then cover with a layer of Parmesan cheese.
  • Cover the dish, and bake for 40 minutes in the preheated oven. Uncover, sprinkle Cheddar cheese over the top and return to the oven for an additional 20 minutes, or until cheese is melted and the top is golden brown. Let stand for 5 to 10 minutes before serving.

6 ears corn, shucked
5 tablespoons unsalted butter
4 sprigs thyme
1 large onion, diced
3 stalks celery, thinly sliced
1 large clove garlic, minced
Kosher salt
1 8-ounce ham steak, diced
2 large russet potatoes, peeled and cut into 1-inch cubes
6 scallions, chopped
2/3 cup heavy cream

Steps:

  • Slice the corn kernels off the cob and reserve the cobs. Heat 4 tablespoons butter in a large pot over high heat. Add the thyme, onion, celery, garlic, 1 teaspoon salt and all but 1/2 cup each corn kernels and ham; cook 1 minute. Add the potatoes, corn cobs and 5 cups water. Cover and cook until the potatoes are very tender, 20 to 25 minutes.
  • Meanwhile, heat the remaining 1 tablespoon butter in a skillet over medium-high heat. Add the reserved corn kernels and ham and cook until the ham is browned, about 6 minutes. Add the scallions and cook until softened, about 1 minute.
  • Remove the corn cobs from the soup and discard. Stir in the heavy cream and cook until heated through, about 1 minute. Ladle the soup into bowls and top with the corn-ham mixture.

Got this years ago from the good old Womans Weekly, great quick snack and a great way to use up left over bread!!! I sometimes pop in some chesse as well. Cases can be frozen for 2 months and reheated in an oven for 10 minutes. The filling can also be frozen for 2 months but thaw filling before reheating.

20 slices white bread
125 g butter, melted
30 g butter
3 finely chopped green shallots
100 g finely chopped leg ham
2 tablespoons plain flour
1 cup milk
310 g corn kernels, drained

Steps:

  • Remove crust from bread flatten bread with a rolling pin and cut bread into rounds using a 7cm plain cutter.
  • Press bread rounds into greased patty pans and brush bread cases with melted butter.
  • Bake in a moderately hot oven for about 15 minutes or until lightly browned. Let cases stand in pans for 5 minutes before removing.
  • Serve bread cases with warm ham and corn filling decorated with red strips of pepper if desired.
  • Ham and Corn Filling (Can be done in microwave).
  • Melt butter in a medium saucepan add shallots and leg ham stir over a low heat until shallots are just soft. Add flour, stir over medium heat for a further minute and gradually stir in milk, stir over low heat until mixture boils and thickens stir in corn kernels. I pop the filled cases back in the oven for a few minutes before serving, but you dont have to.

This is a recipe I came up with a few years ago when I had a leftover ham bone from dinner, and it's wonderfully tasty. Good for using the leftovers after Christmas or Easter dinners. Serve with good, crusty bread and be ready to provide seconds. :)

1 ham bone, with at least 1 cup of meat remaining on bone
water, to cover
4 tablespoons butter
4 tablespoons flour
2 cups milk (whole milk preferred)
1 1/2 cups frozen corn or 1 (15 ounce) can corn
1 tablespoon dried onion flakes or 1/4 cup freshly minced onion
1 -2 clove garlic, minced
salt and pepper, to taste
paprika, to taste

Steps:

  • On a firm non-breakable surface, take a clean hammer and crack the middle of the ham bone so that marrow can escape during cooking.
  • Place ham bone flat in the bottom of a pot and add enough water to just cover.
  • Simmer over medium heat for 30 minutes.
  • Remove bone and cut off the remaining tender ham meat; set meat aside.
  • Turn up the heat on the ham broth and reduce down until you have about a couple of cups of broth, or to desired strength.
  • Skim the fat from the broth.
  • Melt butter in a large pan; remove from heat and mix in flour until smooth.
  • Slowly add 1 cup milk, stirring constantly.
  • Return pan to stove and cook on low heat until milk thickens.
  • Stir the corn, the ham pieces you set aside earlier, dried minced onion, and minced garlic into thickened milk; then slowly stir in the remaining milk and the ham broth.
  • Cook on low for about 15 minutes, but do not boil.
  • Add salt, pepper, and paprika to taste.
  • *Note: how much meat you leave on the bone is up to you, but I like to have a couple of cups of ham bits mixed into this chowder.
  • Optional: you can add a cup of cooked, chopped potato chunks to the soup near the end of the cooking, if you like.

8 bacon strips, cut into 1-inch pieces
1 medium onion, finely chopped
1 cup sliced celery
1/2 cup diced green pepper
3 cups cubed peeled potatoes (about 3 medium)
3 cups chicken broth
4 cups whole milk, divided
4 cups fresh or frozen whole kernel corn, divided
2 cups cubed fully cooked ham
2 tablespoons butter
3 tablespoons minced fresh parsley
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce, optional

Steps:

  • In a large saucepan, cook bacon until crisp. Remove bacon to paper towel to drain, reserving 1/4 cup drippings in pan. Saute the onion, celery and green pepper in drippings for 5 minutes. Add potatoes and broth. Reduce heat; cover and simmer for 10 minutes. , Place 1/2 cup milk and 2 cups corn in a blender; cover and process until pureed. Pour into saucepan. Add ham and remaining corn; simmer for 10 minutes or until vegetables are tender. Stir in the butter, parsley, salt, pepper, pepper sauce if desired and remaining milk; heat through. Garnish with bacon.

  • Bake at 190°C degrees for 10 minutes until crisp and lightly golden.

2 cups potatoes, cubed
2 cups cooked ham, cubed
1 (15.25 ounce) can whole kernel corn, drained
¼ cup finely minced fresh parsley
¼ cup butter
1 tablespoon chopped onions
⅓ cup all-purpose flour
1 ¾ cups milk
⅛ teaspoon ground black pepper
4 ounces processed cheese food, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
  • Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
  • Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.

2 celery ribs, diced
1/4 cup onion, diced
2 tablespoons margarine or 2 tablespoons butter
