1 pound fully cooked ham, diced
2 cups shredded cheddar cheese
6 large eggs
3 cups whole milk
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Dash cayenne pepper
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1/4 cup butter, melted
1 cup crushed cornflakes

Steps:

  • Arrange six slices of bread in the bottom of a greased 13x9-in. baking dish. Top with ham and cheese. Cover with remaining bread. , In a bowl, beat eggs, milk, Worcestershire sauce, mustard, salt, pepper and cayenne. Stir in onion and green pepper; pour over all. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Pour butter over bread; sprinkle with cornflakes. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

8 eggs, lightly beaten
½ cup fat-free milk
½ teaspoon salt

Steps:

  • In a medium saucepan cook broccoli in boiling, lightly salted water 3 minutes; drain. Rinse with cold water; drain again.
  • Coat a 2-quart rectangular baking dish with cooking spray. Add potatoes and chives to prepared dish; toss to combine. Top with broccoli, ham, and cheese.
  • In a medium bowl combine the eggs, milk, salt, pepper, and garlic powder. Pour egg mixture over potato mixture. Cover with foil and chill overnight.
  • To serve, preheat oven to 350 degrees F. Bake, uncovered, 50 to 55 minutes or until eggs are set (160 degrees F). If necessary to prevent overbrowning, cover with foil the last 10 minutes.

1 1/2 cups fat-free half-and-half or milk
1 cup refrigerated or frozen fat-free egg product, thawed, or 4 eggs

Steps:

  • Spray 8-inch square (2-quart) glass baking dish and large nonstick skillet with nonstick cooking spray. Heat skillet over medium-high heat until hot. Add onion and carrots; cook and stir 3 to 4 minutes. Add broccoli; cook and stir 2 to 3 minutes or until vegetables are crisp-tender.

2 tablespoons olive oil
12 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground black pepper

One 12-ounce loaf rustic Italian bread, crusts removed, cut into 1-inch cubes, preferably stale (about 6 cups)
2 cups shredded Swiss cheese

Steps:

  • Butter a 9-by-13-inch baking dish.

Overnight Cheesy Broccoli Strata is an easy make-ahead breakfast casserole loaded with broccoli, leeks, and plenty of cheese. It's perfect for busy mornings or weekend brunch!

1 tablespoon extra virgin olive oil
1 cup chopped broccoli
1 large leek (white and light green parts only, halved and sliced into half moons)
3 cloves garlic
6 large eggs
2 cups skim milk*
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
8 ounces french bread or baguette (cut into 1" cubes (I used La Brea Bakery Whole Grain Loaf))
1 1/2 cups grated cheese (divided (I used a blend of Monterey Jack and cheddar))

Steps:

  • Heat the olive oil in a large saute pan over medium heat. Add the broccoli, leek, garlic, and a pinch of salt and pepper and saute for 3-5 minutes or until the leek has softened and the broccoli is crisp tender. Set aside to cool.
  • Spray an 8x8" baking dish with cooking spray.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. Add the broccoli mixture and 1 cup of the cheese and stir until incorporated. Add the cubed bread and toss gently until it's well coated with the egg mixture. Pour into the prepared baking dish and cover with plastic wrap for 8 hours or overnight.
  • Preheat the oven to 350 degrees. Remove the plastic wrap and top with the remaining 1/2 cup cheese. Bake the strata for 50-60 minutes or until golden brown and puffed in the middle. 2 1/2 cups shredded Sharp Cheddar cheese

4 green onion diced
1 teaspoon dry mustard
1/2 teaspoon smoked paprika
1 teaspoon dried parsley
salt & pepper to taste
1 cup bread (cubed)
2 Tablespoons melted butter
1/2 cup shredded Sharp Cheddar cheese

  • When ready to make:

  • In a large pan melt the butter over medium heat. Add the onion and broccoli and cook them together for about 5 minutes, or just until they soften. Season the vegetables with 1/2 teaspoon of salt. Remove the pan from the heat and set it aside.
  • In a small bowl whisk together the eggs, milk, and half and half. Season the mixture with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  • Spray a baking dish with cooking spray. Spread 1/3 of the bread cubes on the bottom of the dish. Top the bread crumbs with 1/3 of the cheeses, broccoli and onions, and ham. Repeat this layering two more times, ending with the remaining cheese sprinkled over the top of the dish. Pour the egg mixture evenly over the top. Cover the dish and refrigerate it overnight.
  • Remove it from the fridge and let it sit on the counter for at least 30 minutes. Preheat the oven to 350°F and bake it uncovered for 50-60 minutes. It’s done when a toothpick comes out clean when you test the center. Let the strata stand for about 5 minutes before slicing and serving.
