KNIFE-AND-FORK CHILI TURKEY BURGERS
Rachel brought these outrageously different burgers to me one afternoon while I was hard at work on this book. Turkey is an especially lean meat, so you really have to add some moisture to it; Rachel's done that here by using veggies. She made a lot of these, like we always do, to be sure we have leftovers -- and I couldn't stop eating them for the next two days! Now, five years after we were introduced to eating low-carb, I've all but forgotten that burgers once came with a bun!

- Make the Burgers: Mix all the ingredients together with your hands, except the oil, in a bowl.
- Divide the meat mixture into 10 equal-sized patties.
- Heat the oil in a large skillet over medium-high heat. Working in batches, cook the burgers, turning once, until lightly browned and cooked through, about 7 minutes per side. (An instant-read thermometer inserted in the center of the thickest burger should read at least 165 degrees F.)
- Divide the burgers among plates--2 to a plate. Dollop each serving with mayonnaise and stack lettuce, tomato, onion, and pickle on top.
- Mix all ingredients together in a small bowl. Refrigerate until ready to serve.

- Preheat an outdoor grill for medium-high heat, and lightly oil grate. Place the ground turkey, onion, cilantro, chipotle chile pepper, garlic powder, onion powder, seasoned salt, and black pepper in a mixing bowl; mix well. Form into 4 patties.
- Cook the hamburgers on the preheated grill until the turkey is no longer pink in the center, about 4 minutes per side. Place the mozzarella slices on the patties 2 minutes before they are ready. Serve on the toasted buns.

BACON & CHEDDAR CHIPOTLE BURGERS
I had ground beef thawed, a 1/2 used can of chipotle in adobo and didn't know what to make. I honestly didn't even think about using the chipotles until I came across a recipe here using them. I didn't really follow that recipe much though :-) I looked at around 20 burger recipes trying to decide what to do. As I started looking, I started writing a list of the items from each recipe that sounded good. Then I put them together and made this. I found that my Kaiser rolls had molded and had to do a "quick bread change" and I think it came out better for it. The handsome man (DB) liked it so much he asked me to write it down immediately, then he had me read it back to him to make sure I didn't forget anything LOL.

Steps:
- Mix all ingredients for meat together in a medium sized bowl. Allow to sit while preparing other items.
- Mix all ingredients for dressing. Place into refrigerator until ready to use.
- Slice tomatoes, onions & mushrooms.
- Melt butter under medium heat, add olive oil & syrah, saute mushrooms until cooked & slightly browned. Set aside.
- Cook bacon. I prefer to fry it but use whatever method you prefer. Set aside.
- Toast sour dough bread.
- Form meat into two large patties the same shape as your bread.
- Place patties on pre-heated grill & grill until moderately charred on the outside and medium or medium rare on the inside.
- When patties are almost done place cheese on patties. Cook until melted.
- Spread dressing on bread, to the thickness you prefer.
- Place patty on bread along with all toppings (mushrooms, bacon, tomatoes, & onions.
- Enjoy!

CHICKEN FETTUCCINE, CAJUN STYLE
This recipe came out of the Oregonian from Portland, Oregon by Hall Street Bar & Grill in Beaverton. When I made this I left out the cayenne pepper in both places. It was too spicy for me.

- To Prepare Sauce:.
- Heat butter in saucepan over medium heat.
- Add onion and whole garlic cloves and saute for 5 minutes.
- Remove whole garlic and stir in minced garlic, thyme, cayenne pepper, white pepper,.
- black pepper, and basil.
- Continue cooking until onions are dark brown but not burned, about 20 minutes.
- Stir in chicken stock, Worcestershire, and Tabasco sauces. Simmer for 20 minutes.
- Add tomato sauce and bring mixture to low boil.
- Stir in sugar and green onions. Simmer for 1 hour.
- Sauce can be made ahead of time and refrigerated until ready to use.
- To prepare Chicken Seasoning Mix:.
- Thoroughly combine the kosher salt, white pepper, garlic powder, cayenne pepper, black pepper, cumin, and basil.
- To Finish:.
- Toss seasoning mix with chicken cubes until cubes are evenly coated. In medium saucepan, melt 1/2 C butter. Saute chicken over medium heat until done, about 10 minutes.
- Heat sauce and prepare fettuccine according to package directions.
- Drain cooked pasta. Stir chicken into sauce and continue heating until hot.
- Toss with cooked fettuccine. Serve immediately. Sprinkle each serving with grated parmesan cheese.

There are plenty of fancy recipes for hamburgers, but as most of you know.. the best burgers are those ones that you get at the neighborhood bar. Whats the secret? The big secret is that there is no secret! The grill cook is just trying to fill the order as quickly as possible with no special effort. The simplicity is what makes bar burgers taste so good. One of the keys is to buy meat labeled hamburger.. no lean ground meat for these. Look for the packages with the grind marks visible.. These are the best!!

- Heat griddle or cast iron pan on medium high heat.
- Without disturbing grind marks, carefully divide hamburger into 6 sections.
- Place hamburger sections on hot griddle.
- Press hamburgers down onto griddle with a heavy spatula. Use pressure. this causes the hamburgers to stick to the griddle and prevents shrinkage.
- Sprinkle tops with salt and pepper and any other spices you may want to use.
- When the edges look cooked and juices rise to the top, turn over but dont press down again.
- When bottoms are browned, and burger is to desired doneness, remove from griddle and set aside.
- Cover with foil or wax paper.
- Spread cut sides of buns lightly with butter.
- Place butter side down on griddle until lightly browned.
- Place burgers on buns and top with your favorite toppings.

- Mix beef, milk, onion, garlic, and Worcestershire; form into patties and refrigerate 15 minutes or more.
- Grill burgers over medium heat on the grill for about 6 minutes, turn and continue to cook until desired doneness.
