Buttery baked-potato halves can be served on theside of our Beef Tenderloin with Shallot Mustard Sauce.

2 large russet potatoes, scrubbed
1 tablespoon butter
4 sprigs fresh thyme
Coarse salt

Steps:

  • Heat oven to 425 degrees. Cut the potatoes in half lengthwise, and arrange, cut sides up, in a baking dish.
  • Transfer baking dish to the oven on the lower rack, and bake until potatoes are golden brown and puffy on top, 40 to 50 minutes. Serve each topped with a dab of butter and a fresh thyme sprig and sprinkled with coarse salt to taste.

4 large russet potatoes
2 teaspoons vegetable oil
3 tablespoons butter
1 tablespoon minced green onion
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ cup shredded white Cheddar cheese
½ cup heavy cream
1 egg yolk
1 tablespoon butter, melted
1 teaspoon paprika

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Rub potatoes with vegetable oil and place on the prepared baking sheet.
  • Bake in the preheated oven until a paring knife easily inserts into the center of a potato, about 1 hour. Set aside to cool until easy to handle, about 10 minutes.
  • Cut 1/3 off each potato lengthwise. Scoop flesh from each potato to within about 1/8-inch of the skins. Transfer flesh to a bowl.
  • Combine potato flesh with butter and green onion; stir until butter is melted evenly into potato. Add salt, black pepper, cayenne pepper, and cheese; stir until cheese is melted. Pour cream and egg yolk into potato mixture; mix to combine. Season with salt to taste.
  • Place small piece of potato skin inside the bottom of each larger potato shell. Fill each potato with an equal amount of cheese mixture. Gently press the surface of the filling with a fork to create texture. Brush tops with melted butter and sprinkle with paprika.
  • Bake stuffed potatoes until golden brown on top, 20 to 30 minutes.

1/4 c grated parmesan cheese
1/4 tsp paprika

Steps:

  • 1. Cut the potato in half lengthwise.
  • 2. Brush the cut sides with olive oil or butter.
  • 3. Mix Parmesan and paprika together.
  • 4. Dip the cut sides in the Parmesan and paprika mix.
  • 5. Place the potato, cut sides down, on a greased pan and bake at 350 for 1/2 hour

I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

4 large baking potatoes
8 slices bacon
1 cup sour cream
½ cup milk
4 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 1 hour.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
  • Bake for another 15 minutes.

1/4 cup butter
grated parmesan cheese
garlic powder

Steps:

  • Preheat oven to 400 degrees.
  • Melt butter and pour into a 9x13 inch pan and spread evenly across the bottom.
  • Generously sprinkle parmesan cheese and lightly sprinkle garlic powder and any other desired seasonings all over the butter.
  • Place potato halves face down on the butter and seasonings.
  • Place in preheated oven and bake for 40 to 45 minutes. Cool for 5 minutes before removing from pan.
  • Serve on a plate with a side of sour cream for dipping.

  • Preheat oven to 400 degrees F. While oven is preheating, place ¼ cup of butter on a large pan or cookie sheet (as long as it has sides). Place in the oven to allow the butter to melt.
  • When the butter is melted, remove pan from the oven and sprinkle your seasonings over the butter. When I'm in a hurry, I will just do seasoning salt, but you can do whatever your family enjoys.
  • Place potatoes cut side down on the butter. Using a pastry brush, brush some of the excess butter onto the backs of the potatoes so they get crispy and flavorful as well.
  • Bake 30-40 minutes, depending on the size of your potatoes. You can always check the doneness of a potato but poking it with a sharp knife. If the knife comes out easily without resistance, your potatoes are done. Cool for a full 5 minutes before removing from the pan.
