2 oz. BAKER'S Unsweetened Chocolate
6 Tbsp. butter
1 cup sugar
2 eggs
1/2 cup flour
3 graham crackers, coarsely broken
1 cup JET-PUFFED Miniature Marshmallows
1/3 cup semi-sweet chocolate chips

Steps:

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350ºF.
  • Microwave unsweetened chocolate and butter in large microwaveable bowl on HIGH 1 to 1-1/2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Stir in sugar. Blend in eggs. Add flour; mix well. Pour into 9-inch square disposable foil pan sprayed with cooking spray.
  • Place on unlit side of grill; close lid and cook 20 min. Top with combined cracker pieces and marshmallows; cook 25 to 30 min. or until toothpick inserted in center of brownie comes out with fudgy crumbs and marshmallows are golden brown. (Do not overcook.) Remove from grill. Immediately top with chocolate morsels; cool completely.

Nonstick baking spray
3 sticks (1 1/2 cups) unsalted butter
6 ounces bittersweet chocolate (64-percent cacao), chopped
1/4 cup heavy cream
1 cup all-purpose flour (see Cook's Note)
1 1/4 cups Dutch-process cocoa
1 3/4 cups granulated sugar
1/2 cup packed dark brown sugar
1 3/4 teaspoons kosher salt
1 tablespoon pure vanilla paste or extract
2 teaspoons instant espresso powder
6 large eggs, chilled

Steps:

  • Arrange a rack in the center of the oven and preheat to 350 degrees F. Spray a 13-by-9-inch baking pan, preferably metal, with nonstick baking spray. Line the pan with parchment paper leaving a 2-inch overhang on the longer sides. Lightly coat with nonstick spray.
  • Melt the butter in a large saucepan over medium heat, swirling occasionally, until the butter is a deep golden color, about 5 minutes; the butter will hiss and spit as the whey evaporates so be careful. As the foam subsides the butter will go from a canary yellow color to golden. When it does, take it off the heat. Add the chocolate and cream to the butter and let it sit, stirring occasionally, until the chocolate is melted.
  • Sift the flour and cocoa powder through a fine-mesh sieve into a medium bowl. Beat the granulated sugar, brown sugar, salt, vanilla, espresso powder and eggs in the bowl of a stand mixer fitted with the whisk attachment. Start on low speed and gradually increase to high speed until the eggs are pale, very thick and fluffy, about 8 minutes (start your timer when you get to high speed). Do not be tempted to skimp on the mix time; this step is key to getting the signature shiny, crackled brownie top. Reduce the speed to low and slowly pour the warm chocolate into the eggs; beat until completely incorporated. Gradually add the dry ingredients and beat until just combined; do not overmix. Use a rubber spatula to scrape the sides and bottom of the bowl and fold until the batter is completely combined.
  • Scrape the batter into the prepared pan. Bake until the brownies are glossy and just barely firm, and an instant-read thermometer inserted into the center registers 205 degrees F, 25 to 35 minutes. Don't let the thermometer touch the bottom of the pan or you will get a much higher reading. (The cook time will be at the higher end of the range if using a glass or ceramic baking dish.)
  • Let the brownies cool completely to allow the crumb to set before slicing, about 3 hours.
  • Use an offset spatula to loosen the brownies from the sides of the pan. Use the parchment overhang to lift the brownies out of the pan. Remove the parchment and cut into 24 squares.

10 tablespoons unsalted butter, cubed
1 cup sugar
3/4 cup cocoa powder
1/2 teaspoon ground cinnamon
1/4 teaspoon fine salt
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup all-purpose flour
Nonstick cooking spray
12 BBQ-flavor kettle-cooked potato chips, broken in half

Steps:

  • Preheat the oven to 350 degrees F.
  • In a heatproof bowl set over (but not in) a saucepan of gently simmering water, combine the butter, sugar, cocoa powder, cinnamon and salt. Stir continuously until the butter is melted and the mixture is smooth and hot to the touch, about 8 minutes
  • Remove from the heat and stir with a silicone spatula until cool, about 2 minutes. Stir in the eggs, one at a time, and then the vanilla until the mixture gets very shiny and smooth, about 2 minutes. Your arm may get tired but t10 more stirs and you are done! Now rest for a second, and then fold in the flour. The batter will be very thick.
  • Spray two 12-cup nonstick mini muffin tins with nonstick cooking spray. Scoop scant 2 tablespoons of batter into each muffin cup, depending on size of tins. Bake until the centers have just set, 6 to 8 minutes. Cool briefly and then invert onto a plate or quarter-sheet tray. While the brownies are upside down, poke 1 piece of broken chip into the bottom. Turn right-side up and serve.

4 ounces cream cheese, softened
1/4 cup packed brown sugar
3 tablespoons creamy peanut butter
8 prepared brownies (2-in. squares)
4 cups vanilla ice cream
1/2 cup hot fudge ice cream topping, warmed
1/2 cup chopped salted peanuts

Steps:

  • Cut unpeeled bananas crosswise in half, then lengthwise in half. Place quartered bananas on an oiled grill rack, cut side down. Grill, covered, over medium-high heat on each side until lightly browned, 2-3 minutes. Cool slightly., In a small bowl, beat cream cheese, brown sugar and peanut butter until smooth., To serve, remove bananas from peel; place over brownies. Top with cream cheese mixture, ice cream, fudge topping and peanuts.

4 ounces plus 1/2 cup Hershey's semi-sweet chocolate chips, divided
1 1/2 ounces unsweetened chocolate
2 extra large eggs
2 teaspoons instant coffee granules, such as Nescafe
1 1/2 teaspoons pure vanilla extract
1/2 cup plus 1 tablespoon sugar
1/4 cup plus 1 tablespoon all-purpose flour, divided
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 pint vanilla ice cream

Steps:

  • Preheat the oven to 350 degrees. Melt the butter, 4 ounces of chocolate chips, and the unsweetened chocolate together in a medium bowl set over simmering water. Set aside for 15 minutes. In a large bowl, stir (do not beat) together the eggs, coffee, vanilla and sugar. Stir the chocolate mixture into the egg mixture and allow to cool to room temperature. In a medium bowl, sift together 1/4 cup of the flour, the baking powder and salt and add to the chocolate mixture. Toss together the remaining 1/2 cup of chocolate chips and one tablespoon of flour in a medium bowl and add them to the chocolate mixture. Spoon the mixture into five 3 1/2 inch cast iron skillets and place them on a sheet pan. Bake for 25 minutes. Don't over bake! Serve warm with a scoop of ice cream on top.

2 cups (400 g) unbleached superfine (golden caster) sugar
2 sticks (225 g) unsalted butter, melted
½ cup (60 g) good-quality cocoa powder
1 ancho chile pepper, soaked in warm water until soft, then drained and finely chopped
1 tsp. vanilla extract
4 extra-large eggs
1¾ cups (225 g) all-purpose (plain) flour
½ tsp. baking powder
Pinch fine sea salt

Steps:

  • Set up a charcoal grill for indirect cooking at 350-400°F (180-200°C), adding a chunk of cherry wood to the coals for a gentle smoke.
  • Line a rectangular steel or disposable aluminum baking pan, measuring approximately 13 x 9 inches (33 x 23 cm), with parchment paper.
  • Mix all the ingredients together in a large bowl, adding them in the order they appear in the ingredients list and folding in each time you add a new ingredient.
  • Pour the brownie mixture into the lined baking pan. Pop in the barbecue for around 25 minutes, until the mixture is just set. You don't want the brownies to be too overcooked, as the centers should be a bit soft and fudgy.

These are absolutely the chewiest, moistest, fudgiest brownies ever! I have tried adding so many different things to the batter, and they ALWAYS comes out great. They are also great without ANY add-ins! BUT by varying the add-ins, you can make different brownies every week (or day!!) SUPER EASY PREP! So, add "whatever floats your boat" and you will not believe how yummy they come out :) Oh, and the recipe doubles just fine--use a 9 x 13 inch pan instead and add a few more minutes of baking!
