HADDOCK WITH SOUR CREAM
How easy is this? Cole slaw and salad , easy meal for us to make ! Enjoy ! Again as many of my other recipes this one is for my Flavors of Cape Cod Group and the recipe came from the cookbook with the same name and entered by Evelyn Mora.

Steps:
- 1. Pre-heat oven to 350 DF Place haddock on aluminum foil in pan and cover with soured cream. Sprinkle with salt and pepper, than spread stuffing mix over all. Sprinkle with marjoram and paprika over stuffing.
- 2. Bake at 350 degrees F for 30 minutes or longer, depending upon thickness of fish.
CREAMY SMOKED HADDOCK & SAFFRON KEDGEREE

Steps:
- Cook basmati rice, leave to cool. Heat oven to 160C/140C fan/gas 3. Grease a large ovenproof dish with some of the butter. Push the egg yolks through a sieve and roughly chop the whites.
- Gently heat the cream in a frying pan until just below boiling point, then add the fish. Cover and poach for 4 mins. Place the wine in a pan with the saffron and warm to infuse. In a large bowl, mix together the rice, cayenne, curry powder, nutmeg, seasoning, chopped egg whites and saffron-infused wine. Lift the fish out of the cream and flake into the bowl - removing any bones as you find them. Scrape in the cream and gently mix together once more.
- Tip everything into the buttered dish and dot the top with the remaining butter. Bake to heat through for 20 mins, then serve scattered with the parsley and sieved egg yolk, with lemon wedges on the side.

FISH BAKED WITH SOUR CREAM
Although I haven't made this dish in ages, it was one of the first I tried when DH and I were dating, and I made dinner for him! For that reason, I'm glad I found this cookbook (Betty Crocker's New International) to share this sentimental (for us) dish. I remember it being a very tasty dish; it's not very colorful, but it does have a nice flavor, and when made with light sour cream, isn't too detrimental to the waistline! It's described as both Hungarian and Austrian in its origin, "betyar fogas", and the note says that it's often accompanied by boiled russet potatoes. I used to serve it with a colorful salad, since a white fish dish and white potatoes was way too bland!

Steps:
- Put fish into a rectangular baking dish (approx. 12 x 7. 5 x 2), sprayed lightly with a baking spray.
- Preheat oven to 350 degrees fahrenheit.
- Over medium to medium-high heat, melt butter in a skillet large enough to hold mushrooms and onions.
- Saute mushrooms and onions about 3 minutes, until mushrooms are golden, sprinkling with thyme when about halfway through.
- Spoon mushroom and onion mix over fish and sprinkle lightly with salt and pepper.
- Sprinkle about 1 1/2 T parmesan (or to taste) over the mushroom and onion mixture.
- Mix remaining cheese into sour cream.
- Spread sour cream over mushroom/onion mixture, using a spatula.
- Sprinkle with bread crumbs.
- Bake uncovered for about 25- 30 minutes, or until fish flakes with fork.
- Sprinkle with parsley and paprika and serve.

COD OR HADDOCK BAKED IN CREAM
Easy and delicious. I usually serve this with a seasoned white & wild rice blend and green beans.

Steps:
- Preheat oven to 350 degrees.
- Cut fish into four serving size portions.
- Rinse and pat dry with paper towels.
- Place fish in an 11" x 7" baking pan.
- In a mixing bowl, stir together whipping cream, 2 tbsp Parmesan cheese, wine, garlic, salt and pepper. Pour over fish.
- Bake uncovered for 20-25 minutes or until fish flakes easily with a fork.
- Take fish out of sauce and place on a serving platter.
- Stir sauce to blend and pour over fish.
- Top with 1 tbsp Parmesan cheese.
HADDOCK IN MUSTARD SAUCE

If you have the time to make your own stock, please use it here, if not, use the best fish stock you can purchase. I thought this would also be excellent with dill replacing parsley for the final garnish.

- Combine the stock and milk in a skillet large enough to hold all of the fish in a single layer.
- Bring to a simmer over medium heat.
- Add the fish, salt, and pepper; and cook uncovered for 5 - 7 minutes, or until the fish just flakes when you touch it with a fork.
- Carefully move the fish to a heated platter, cover, and keep warm.
- Bring the poaching liquid to a boil, and reduce to 1 cup (about 10 minutes).
- Reduce heat to medium, add the cream, and cook for 2 more minutes.
- whisk in the mustard, sugar, and sour cream, bring back to a simmer.
- Whisk in the butter, a bit at a time, until fully incorporated.
- Add any juice that has accumulated on the platter, then strain the sauce over the fish.
- Sprinkle with parsley, then serve immediately.

- Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.
- In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.

- Melt butter in pan over medium heat and stir in flour, salt, pepper, and nutmeg whisking until smooth.
- Add milk slowly, whisking to get out any lumps and make smooth.
- Add the cheese, stirring until melted.
- Place haddock in greased baking dish.
- Sprinkle with salt and pepper.
- Pour sauce over haddock.
- Drizzle over sherry and sprinkle with paprika.
- Bake at 325*F. for 45 minutes.
