2 tablespoons olive oil
1 medium onion, chopped

PUERTO RICAN BEANS (HABICHUELAS GUISADAS)

Puerto Rican Beans (Habichuelas Guisadas) image

These beans are so good. I've been experimenting with them for a long time and finally got them to taste like I remember growing up. *Note: You can use red kidney beans or pink beans if you don't like the roman beans. Additional Note: This is not a weeknight after work dish. It's time consuming but worth it. Tastes much better than canned beans.

Provided by Joanne

Categories     Grains

Time 3h15m

Yield 6 serving(s)

Number Of Ingredients 18

1 (16 ounce) bag goya roman beans
1 cup cubed calabaza squash (optional) or 1 cup cubed russet potato (optional)
2 tablespoons tomato paste
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon fresh ground black pepper
3 chicken bouillon cubes
3 (1 1/2 ounce) packages Sazon Goya seasoning (with Cilantro and Tomato)
water
10 stuffed manzanilla olives
1/4 cup olive oil
1 cup sofrito sauce (see my Sofrito, or see substitute)
1 small onion, chopped
2 cubanelle peppers, chopped
6 garlic cloves (mashed in a mortar and pestle or finely chopped)
1/4 cup fresh cilantro, chopped
1/4 cup chopped fresh cilantro
you can add chopped ham, chorizo or bacon, to the beans if you'd like. if so brown the meat in the saute pan before you add the sofrito

Steps:

  • Soak beans in enough water to cover overnight.
  • Empty Beans into colander and wash with cold water. Discard any split/broken beans or beans that look odd in color and/or size.
  • Place beans in large pot with cold water (add enough cold water to cover beans by about 3 inches).
  • Cook beans on high heat until they come up to a boil.
  • Reduce heat to Medium and partially cover with lid. Cook beans for 45 minutes to 1 hour or until beans start to soften stirring occasionally, and adding water as needed (some water will evaporate during cooking). Remember to always have beans covered with at about 3 inches of water.
  • Meanwhile, heat a saute pan on medium/low heat. Add olive oil, Sofrito (if using), or the substituted ingredients.
  • Saute for 3 minutes, then add tomato paste, Goya sazon, Chicken bouillon cubes, oregano, cumin, black pepper and Olives. Continue to cook for another 2 minutes. Remove from heat, set aside.
  • After beans have cooked for about and hour, add the chopped Calabaza or potato (optional) and sofrito with the seasonings to the beans. Mix well, add more water if needed. Cook for additional 1/2 hour on medium heat partially covered, then 1/2 hour on medium heat uncovered stirring occasionally.
  • When beans are done, garnish with 1/4 cup chopped cilantro.

DOMINICAN BEANS

Dominican Beans image

These creamy Dominican beans, flavored with garlic, onion, cubanelle pepper, and adobo seasoning, cooked in the Instant Pot or pressure cooker, make the perfect vegetarian side or meatless main dish.

Provided by Gina

Categories     Dinner     Side Dish

Time 9h15m

Number Of Ingredients 11

1 lb dried red kidney beans
2 tablespoons olive oil
6 cloves crushed garlic
1 tablespoon tomato paste
1/4 bunch cilantro sprigs
1 red onion (cut into 8 pieces)
1 cubanelle pepper (cut in 4 pieces)
2 chicken bouillon cubes (I use Maggi (or veggie for vegetarian))
1 1/2 teaspoons adobo seasoning
kosher salt (or to taste)
white rice (for serving (not counted in macros))

Steps:

  • Put beans in the pressure cooker or Instant Pot and cover them with water so there's 2 inches over them (10 cups).
  • Soak overnight, but don't drain.
  • Next day, cover and seal the pressure cooker (or Instant Pot) over medium heat, when the pot comes to pressure cook high pressure 20 minutes. Natural release.
  • While the pressure releases, in a large skillet, heat oil over medium-low heat and add garlic, tomato paste, cilantro, red onion, pepper, bouillon cube and saute about 10 minutes, stirring.
  • Open the pressure cooker when the steam releases, take 25% of the beans and liquid and transfer to the blender. Puree well then return to the pot.
  • Add adobo seasoning and salt (about 1 teaspoon), or to taste.
  • Add the sauteed vegetables to the beans and bring to a boil over medium heat. (In the Instant Pot use the saute button.)
  • Boil uncovered over medium-low heat until the texture becomes creamy and the liquid reduces, about 30 minutes stirring often.
  • Remove cilantro, pepper and onion and serve over rice. Makes 9 cups.

1/3 cup diced potato, pumpkin and/or baby carrots
8 pimento stuffed olives
2 tbsp fresh cilantro, chopped (for garnish)

  • Pick over the beans for small rocks or debris and discard any that are damaged or discoloured. Rinse well and drain.
  • Place the rinsed beans, 1 teaspoon salt, and 1 bay leaf in the Instant Pot. Add 5 cups of water, close the lid and set the valve to "seal". Pressure cook on high for 20 minutes. When finished, allow to natural release for at least ten minutes, and then carefully finish with quick release. Soaked beans will cook more quickly than unsoaked beans so if you used soaked beans, reduce the time by 5 minutes.
  • While the pressure is releasing, heat 2 tablespoons olive oil in a large heavy-bottomed pot over medium heat. Add onion, green pepper, garlic, and oregano and sauté until slightly softened, about 4-5 minutes. Add the tomato paste, and bouillon cube, if using. Sauté another 2 minutes.
  • Add the cooked beans and liquid from the Instant Pot to the pot with sautéed vegetables, along with 2 teaspoons salt, and freshly cracked black pepper to taste. Stir in the squash and cilantro sprigs and bring to a gentle boil.

  • Skip this soaking step if you're using canned or frozen beans.Place the sorted beans into a strainer then them under cold running water to remove any dirt.Transfer the beans into a large dutch oven (the same pot you'll cook them in) and cover them with 4" of cold water. Cover the pot and allow the beans to soak, in the refrigerator, for 8-12 hours. Avoid soaking the beans longer than 12 hours as they may split from over-saturation.
  • Place the sorted and rinsed beans in a large dutch oven and cover them with 2" of cold water.Cover the pot, and bring the water up to a boil over medium-high heat. Allow the water to boil for 2 minutes. Remove the pot from the burner, then allow the beans to soak for 1 hour (pot covered). Strain the soaking water, but save it for cooking the beans in- this only applies to the quick soak method's water.
  • In the rinsed and dried dutch oven, heat the olive oil over medium-high heat. When the oil begins to shimmer, add the onions, bell pepper, and minced garlic to the pot. Sauté the aromatics, stirring often, until they become glossy and begin to take on color- about 5 minutes.
  • Stir the soaked (or drained, canned**) beans into the sofrito. Add the meat (if you're using any) to the pot. Add the water to the pot and stir everything together. If you've used the quick soak method: add enough fresh water to the reserved soaking liquid to equal 6 cups. **If you are using canned beans: strain the liquid from the canned beans and add enough cold water to that liquid to equal 3 cups.
