ANTIPASTO SKEWERS
Antipasto Skewers are great make-ahead party appetizers!

Steps:
- Cook tortellini according to package instructions.
- In the meantime, in a large bowl, combine all remaining ingredients except for the pepperoni (artichoke hearts, olives, peppers, and any other veggies you are using).
- Add cooked tortellini to the bowl, then pour in olive oil and sprinkle dried basil, salt, and pepper. Gently coat all ingredients by mixing with a wooden spoon.
- Cover and refrigerate for at least 30 minutes, up to overnight.
- Thread ingredients on skewers in your preferred order. Serve immediately, or cover and refrigerate until ready to serve.

OLIVE, PEPPERONI & MOZZARELLA BITES

Steps:
- Slice Mozzarella cheese into 1/2" x 1/2" cubes. Drain olives from liquid. Using a toothpick, skewer an olive and push 1/3 way up the toothpick. Fold a piece of pepperoni into half or quarters and skewer next. Finally skewer mozzarella. Do not push toothpick all the way through mozzarella, only half way through as you do not want guests poking themselves in the mouth with the toothpick. If making ahead of time, arrange on tray and cover with saran wrap so that it does not dry out. When serving, serve plain or with a drizzle of pizza sauce on platter.

- Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, olives and salad dressing. Toss to coat; cover and refrigerate for 4 hours or overnight., Drain mixture, discarding marinade. For each appetizer, thread a stuffed olive, a folded pepperoni slice, a tortellini, a folded salami piece and a ripe olive on a toothpick or short skewer.

ANTI-PASTO APPETIZERS
I made this for a Christmas party. It was a hit! Even my kids love it and they were excited to be able to help prepare it. I put down 30 minutes of prep time, but it doesn't include 4 hours for marinating.

Steps:
- Cook tortellini according to directions on package. Drain well and cool completely.
- Place tortellini and olives in bowl. Pour in dressing and mix. Marinate at least 4 hours (the longer it marinates, the stronger the flavor).
- Drain tortellini and olives well.
- Cut salami into quarters.
- Cut pepperoni in half.
- Cut 40 small chunks of cheese
- On a toothpick put: 1 olive, 1 salami, 1 tortellini, 1 pepperoni, and one chunk cheese.
- Repeat process until all is used up.
- Refrigerate until ready to use.

MOZZARELLA TOMATO OLIVE COCKTAIL SKEWERS

Steps:
- Cut the mozzarella into bite sized pieces. If you are lucky enough to find the small balls, keep them whole. Place in a medium bowl and stir in the tomatoes, olives, oil, garlic, thyme, salt, pepper and red pepper. Cover and refrigerate 1-3 hours.
- If basil leaves are large, cut into smaller pieces.
- Thread the marinated cheese, tomatoes and olives onto skewers, placing the basil leaves inbetween. Place skewers on a platter; garnish with additional fresh basil. Enjoy!
