Dip into Alton Brown's kicked-up Guacamole recipe, loaded with jalapenos, tomatoes and cilantro, from Good Eats on Food Network.

3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
1/2 jalapeno pepper, seeded and minced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

Steps:

  • In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

This recipe is one that my aunt gave me, and I have made some modifications. If you don't have peppers, I recomend Dave's Insanity Sauce (added 1 teeny drop at a time to taste).

6 Hass avocadoes
1 lime
1/4 cup diced onion
1/4 cup diced plum tomato
1/4 cup diced bell pepper
1 tablespoon hot peppers or 1 tablespoon hot sauce, of your choice
1/2 teaspoon salt, to taste
1/4 cup beer (Corona if possible) (optional)
4 diced garlic cloves

Steps:

  • When selecting Haas Avocados, it is important to make sure that they are ripe if you want to use them right away.
  • Ripe Characteristics: *Skindarkens as it ripens. *Fruityields to gentle pressure when ripe."http://www.avocado.org/avocado-facts/hass-avocados.php".
  • Rinse off produce.
  • Take avocados and take a sharp knife and slice to the pit lengthwise, then carefully slide knife around keeping the blade against the pit cutting the avocado in half.
  • pull the pieces apart.
  • Using the blade of the knife wack the pit embedding the knife into it and turn, this should free the pit.
  • Using a spoon scrape the flesh of the fruit from the skin, need the stem of the avocado make sure to remove any unwanted bits.
  • Place fruit into mixing bowl and repeat for the rest of the avocados.
  • Using a masher, or spoon, mash the avocados until they are a homogeneous paste.
  • Dice the produce to the desired thickness that you like.
  • You can keep the seeds in if you like.
  • Dice the garlic as fine as you wish.
  • Add this mixture, except hot peppers to the bowl.
  • Take the lime and put it into a microwave for about 15-30 seconds.
  • This will bring more juices out of the lime.
  • Then cut it in half and squeeze the juice into the bowl.
  • Add the beer, if you desire.
  • Thouroughly mix the ingredients.
  • Slowly add hot pepper/sauce and seeds, testing for hotness.
  • When it is ready, salt to taste, remember that the tortilla chips will also be somewhat salted.
  • It is best to test the guacamole with a chip.

Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.

juice from 1/2 of a lime

Everybody loves guacamole, and everyone has an opinion as to what an authentic guacamole should be. I leave it up to you whether to add onion and chile - but please don't make it in a food processor. Guacamole should have texture; use a fork or a mortar and pestle to mash the avocados.

Number Of Ingredients 8

1/2 small red onion, minced optional
3 ripe Haas avocados
1 medium ripe tomato, chopped
Juice of 1 to 2 limes, to taste
1 small garlic clove, minced
1/4 teaspoon lightly toasted cumin seeds, ground
1 small serrano chile, seeded and minced optional
Salt, preferably kosher salt, to taste

Steps:

  • If you are including onion in your guacamole, place the onion in a small bowl and cover with cold water. Soak for five minutes, then drain, rinse and dry on paper towels.
  • Cut the avocados in half, remove the pits and scoop out the flesh. Mash in a mortar and pestle or with a fork. Do not use a food processor. Add the chopped tomatoes and lime juice, and continue to mash. Stir in the onion, garlic, cumin, chile and salt to taste. Taste and adjust seasonings. If not using right away, cover with plastic, placing it directly on top of the guacamole. Stir before serving to restore the green color.
