8 ounces shortcrust pastry (225g)
1 (14 ounce) can evaporated milk (400g)
12 ounces dark muscovado sugar (350g)

Steps:

  • Preheat oven 400°F, 200°C, Gas 6.
  • Roll out pastry and use to line 10 inch (25cm) flan ring and bake blind for 15-20 minutes until cooked.
  • Let it cool.
  • Whisk evaporated milk and sugar together for 10-15 minutes until light and fluffy.
  • Pour into the pastry case and bake for 10 minutes.
  • It will have a slightly sticky top but will not set completely until it has cooled completely.
  • Serve cold.

140g unsalted butter
100g golden caster sugar
1 large egg
250g plain flour , plus extra for dusting
410g can evaporated milk
300g dark muscovado sugar
300g double cream
zest 1 lemon

Steps:

  • To make the pastry, put the butter and caster sugar in a food processor. Add the egg and whizz for 30 secs, then tip in the flour and blitz for a few secs more until the dough just comes together - be careful not to overwork it.
  • Dust your work surface with flour, bring the dough together with your hands and lightly knead, shaping the pastry into a flat disc. Cover with cling film and chill in the fridge for 30 mins. Heat oven to 180C/160C fan/gas 4.
  • Roll out the pastry to £1 coin thickness and use to line a deep 23cm tart tin, then return to the fridge for 20 mins or until the pastry is hard. Line the pastry case with baking parchment, fill with baking beans and bake for 20 mins. Remove the baking beans and return to the oven for 5-10 mins until the base is golden and the sides are set.
  • Meanwhile, make the filling. Whisk the milk and sugar together in a stand mixer (or use an electric hand whisk) until light and fluffy, about 20 mins. Pour into the pre-baked pastry case and cook for 15 mins until risen and the surface is tacky. Remove from the oven and leave to cool and set before serving.
  • Pour the cream into a large bowl, add the lemon zest and lightly whip. Serve alongside the tart once cool.

1 (12 ounce) can evaporated milk
1 ½ cups dark muscovado sugar
1 (10 inch) prepared shortbread pie crust

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, beat the evaporated milk and sugar with a whisk or electric mixer for 10 to 15 minutes, or until fluffy and mocha colored. Pour into the shortbread crust.
  • Bake for 10 minutes in the preheated oven. The Gypsy Tart will have a sticky surface, and will not set completely until left to cool. Serve chilled.

500g pack sweet shortcrust pastry, or make your own (see 'goes well with' for recipe)
flour, for dusting
100g butter, softened
100g caster sugar
1 lemon, zested and juiced
2 large eggs
½ tsp almond extract
50g fresh white breadcrumbs
100g ground almonds
140g raspberry jam
250g icing sugar
350g raspberry
1 tbsp toasted flaked almonds

Steps:

  • Roll out the pastry on a lightly floured work surface. Use the pastry to line a 23cm loose-bottomed tart tin (see step-by-step). Cover with cling film and leave in the fridge to rest for 1 hr.
  • Heat the oven to 190C/170C fan/gas 5. To make the filling, put the butter, sugar and lemon juice in a food processor, then blend until light and fluffy. With the machine running at full speed, add the eggs and almond extract, and whizz until combined to a smooth paste. Fold in the breadcrumbs and ground almonds by hand.
  • Take the tart case from the fridge, line with baking parchment and baking beans and place on a baking tray. Bake for 20 mins until the sides are set and the pastry is sandy. Carefully remove the beans and the parchment and place tart case back in the oven for 10 mins until the base is biscuity.
  • Remove from the oven and spread the jam over the base, then top with the almond filling. Return the tart to the oven for a further 25 mins until the almond layer is cooked. Leave to cool in the tin.
  • Remove the tart from the tin and place on a serving plate. Mix the icing sugar with 4-5 tbsp water to make a thick icing. Flood the top of the tart with the icing, keeping 1 tbsp aside, then arrange the raspberries on top, all pointing upwards. Drizzle with the remaining icing and scatter with flaked almonds. Leave for 10 mins so the icing can set a little, before serving.

  • Lightly beat egg yolk with the lemon juice and, using a knife, stir into the flour until it starts to clump together but isn't too sticky or dry. Bring together with your hands.
  • Roll out pastry on a lightly floured surface to line a 23cm (9in) diameter x 4cm (1½in) deep flan tin. Leave the pastry to overhang the sides slightly.
  • Line tin with baking parchment. Fill with baking beans and bake for 15-20min. Carefully remove beans and paper and continue baking for 5-10min until cooked through.
  • To make the filling, in a medium bowl whisk together the milk and sugar using an electric hand whisk for 15-20min until it resembles lightly whipped double cream (if you’re using a table top mixer this will take about 10-15min).
