These fun cookies are chock-full of chewy gumdrops. I use red and green ones at Christmas, black and orange for Halloween and pastel shades for Easter. 3/4 cup shortening
1 cup sugar, divided
1/2 teaspoon almond extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped fruit-flavored or spiced gumdrops
2 large egg whites

Steps:

  • Preheat oven to 350°. Cream shortening and 3/4 cup sugar until light and fluffy. Beat in almond extract. In another bowl, whisk flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in gumdrops. , In a separate bowl, beat egg whites until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Fold into dough., Drop by level tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 12-15 minutes. Cool 1 minute before removing from pans to wire racks to cool completely.

Two 1/4-ounce envelopes unflavored gelatin
3/4 cup granulated sugar, plus more for coating
One 3-ounce package cherry-flavored gelatin
Granulated red sugar, for coating
Coarse white sugar, for coating

Steps:

  • Sprinkle the unflavored gelatin over 1/2 cup water to soften; set aside.
  • Put the granulated sugar and 1/2 cup water in a saucepan and bring to a boil, stirring to dissolve the sugar. Simmer for 5 minutes. Add the cherry-flavored gelatin to the pan, followed by the softened unflavored gelatin. Stir and remove from the heat. Continue stirring until the gelatins are dissolved, 1 to 2 minutes. Strain into a measuring cup and let cool for 5 minutes; it will be warm but not yet set. Pour the liquid into the molds. Refrigerate for at least 4 hours or overnight.
  • Remove the gumdrops from the molds and place onto wax paper. Coat some in granulated red sugar, some in granulated white sugar and some in coarse white sugar; return to the wax paper. Store in a cool dry place until ready to eat.

Steps:

  • Heat oven to 375°F. In large bowl, mix cookie mix, flour, softened butter and egg with spoon until soft dough forms. Stir in 1/2 cup of the quartered gumdrops.
  • Shape dough into 40 (1 1/4-inch) balls. Place 2 inches apart on ungreased large cookie sheets; flatten each ball to 1 1/2-inch circle. On each dough round, sprinkle sugar and place 3 quartered gumdrops.
  • Bake 7 to 9 minutes or until edges are set and light brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.

1 teaspoon baking powder

1 cup packed brown sugar
½ cup shortening
1 egg
1 ¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¼ cup buttermilk
1 ½ cups spiced gumdrops, chopped
¾ cup chopped walnuts
½ cup golden raisins

Steps:

  • In a medium bowl, cream together the brown sugar and shortening. Stir in the egg and buttermilk. Stir together the flour, baking soda and salt, add to the creamed mixture, mix until well blended. Stir in the chopped gumdrops, walnuts and raisins. Cover bowl, and chill for at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Drop cookies by rounded teaspoonfuls 2 inches apart onto an unprepared cookie sheet.

My mom made these cookies quite often, and I always enjoyed eating these. She used the spiced gumdrops when making these cookies for Christmas (for that traditional seasonal peppermint taste), then she used regular gumdrops the rest of the year. Omit the black gumdrops though...they can give the the dough an unappetizing dark green tint. There are several variations of this cookie already posted on RecipeZaar, but this is the exact quantities and ingredients of my mom's recipe for this particular cookie. My mom used to make a batch of these cookies for our birthday parties, and then wrapped a stack of 3 cookies in cellophane, then tied it with pretty curling ribbon which she put in treat bags that our friends took home with them at the end of the party. Whatever was left over went into our school lunch bags for an extra special treat.

1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
2 cups sifted flour
1 teaspoon baking powder

1 cup flaked coconut
1 cup gumdrop, cut in half

Steps:

  • Thoroughly cream together the butter, brown sugar, and granulated sugar.
  • Add the eggs and vanilla, and beat well.
  • Add the sifted flour, baking powder, baking soda, salt, and oatmeal; mix well.
  • Add the coconut and gumdrop halves; mix until well blended.
  • Pinch off pieces of dough, and roll the dough into small balls. Place rolled dough balls on a lightly greased or buttered baking sheet, about 2 inches apart. Press each cookie flat with a spatula.
  • Bake in a 375° oven for 10 minutes. Let cookies cool for 1 minute on the baking sheet, then transfer cookies to cooling rack to cool completely.

1/2 cup unsalted butter
1/2 cup margarine
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups quick-cooking oatmeal
1 cup packaged sweetened coconut
1 cup pecans, chopped coarsely
1 cup gumdrop, cut into pieces

Steps:

  • Cream the butter, margarine and sugar together in a mixer.
  • Add vanilla, and the eggs one at a time until well blended.
  • Sift the flour, baking powder, baking soda and salt.
  • Add the sifted flour to the butter and egg mixture and mix well.
  • By hand, stir in the coconut flakes, chopped pecans, oatmeal and sliced gumdrops until just mixed.
  • Refrigerate the dough until it is well-chilled (at least 3 hours).
  • Note: This will help the cookies keep their shape.
  • Once the dough is chilled, pre-heat the oven to 350°.
  • Take about 1 heaping tablespoon of dough and roll into a ball.
  • Place on a greased or parchment lined cookie sheet about 6 inches apart.
  • Bake for about 10 minutes or until light brown.
