GUINNESS GINGERBREAD

- Preheat your oven to 325 degrees F. Line your cake pan with aluminium foil and grease it, or grease your foil tray.
- Put the butter, syrup, dark brown sugar, stout, ginger, cinnamon and ground cloves into a pan and melt gently over a low heat.
- Take off the heat and whisk in the flour and baking soda. You will need to be patient and whisk thoroughly to get rid of any lumps.
- Whisk the sour cream and eggs together in a measuring jug and then beat into the gingerbread mixture, whisking again to get a smooth batter.
- Pour this into your cake/foil pan, and bake for about 45 minutes; when it's ready it will be gleamingly risen at the centre, and coming away from the pan at the sides.
- Let the gingerbread cool before cutting into slices or squares.
GUINNESS BEER BREAD
Great-tasting variety on traditional beer bread, this one only lasts a couple of days around my house.

- Preheat oven to 375F degrees.
- Sift together flour, baking powder, salt and sugar.
- Add Guinness and eggs; stir just until blended.
- Pour into greased 9x5x3 loaf pan.
- Bake at 375F for approximately 70 minutes.
- Remove from pan and cool on wire rack.
GUINNESS BREAD

- Place all the dry ingredients into a large mixing bowl.
- Add the butter and rub into the dry ingredients until it resembles fine breadcrumbs - I recommend working quickly as the mixture can easily become greasy if over mixed, or mixed using too warm hands.
- Add the milk, black treacle molasses, and the Guinness.
- Mix to create a wet dough.
- Grease a standard loaf tin, add the wet dough and bake in the oven for 40 - 45 mins or until the bread is well risen and thoroughly cooked.
- Leave for 10 minutes in the tin, then turn out onto a wire rack to cool.
- Eat while slightly warm if you like, or allow to go completely cold. Delicious with salty butty and Irish smoked salmon, cold meats or cheeses. The recipe comes courtesy of the home of Guinness, the Guinness Storehouse in Dublin, Ireland. The storehouse was a fermentation plant for 84 years but is now a 7-story visitor center.

- Preheat oven to 425 degrees F (220 degrees C). Grease an 8x8 inch baking pan.
- Mix together the oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, stir together the butter, vanilla, buttermilk, and Guinness® beer. Pour the flour mixture into the beer mixture, and gently stir until well blended. Pour batter into the prepared baking pan, and sprinkle with additional oats if desired.
- Bake in preheated oven for 30 minutes, then turn the temperature down to 400 degrees F (200 degrees C), and bake for an additional 30 minutes. Turn the oven off, open the door, and allow to cool for 30 minutes in the oven before turning out onto a wire rack.

- In a large bowl, mix all the dry ingredients and the butter until the dough is the consistency of breadcrumbs.
- Add the milk, black treacle, and Guinness Draught, mixing until you get a wet dough.
- Place dough in a greased bread tin, and bake in a preheated (170C/338F) oven for 40-45 minutes.

With your fingers, stir the batter from the middle of the bowl to the outside, until it's well mixed. It will look more like cake batter than bread dough.
- Brush a 9 x 5 x 2 1/2-inch loaf pan with melted butter. Pour the batter into the pan and sprinkle the top with oats. Put the bread in the oven, immediately turn the temperature down to 400 degrees, and bake for 45 minutes, until a toothpick comes out clean. Turn the bread out onto a baking rack and allow to cool completely. Slice and serve with salted butter.
