I really love cheesecake. But I can't stand the calories in most of them, so here's a lighter version. It's very easy to make, no-bake and the best part.. It's diet proof. I hope you like it, please tell me what you think! NOTES: - You can make it on a pre-baked crust. - It's nice to serve it with some berries or berry jam, that's up to you. - You can use whole products and/or sugar if you really don't mind, but the idea was to make it lighter and healthier :) Enjoy!

200 g fat-free ricotta cheese
5 tablespoons fat free cream
1 tablespoon white cheese (or fat-free cream cheese)
1 tablespoon honey (you can skip it to save calories, but it does make a difference)
1 tablespoon liquid low-calorie sweetener (or to taste)
100 ml water
1 (7 g) package unflavored gelatin
1 teaspoon vanilla essence

Steps:

  • Dissolve gelatin in water and heat until it's completely dissolved.
  • In a bowl, combine all the other ingredients: ricotta, cream, white cheese, honey, artificial sweetener.
  • Mix them: if you do like the texture of ricotta, just mix it well with a spoon or spatula. If you don't, use an electric mixer to soften the ricotta and remove all possible lumps.
  • Add the dissolved jello to the mixture and stir well.
  • Pour mixture in a glass container and refrigerate until set. (it takes around 3 hours, counted as cooking time).

1 1/2 cups sugar-free chocolate cream-filled cookies (about 18 cookies)
2 tablespoons butter, melted
3 (8 ounce) packages cream cheese
1/2 cup butter
1 teaspoon vanilla
1 1/2 cups Splenda sugar substitute (or equivalent sweetener)
1 1/2 cups unsweetened baking cocoa
3 eggs
whipped cream
fresh fruit

Steps:

  • Pre-heat your oven to 325oF if using a silver 9 inch spring form pan; 300oF if using a dark non-stick 9 inch spring form pan. Mix crushed cookies and butter; press firmly onto bottom of pan. Bake 10 minutes.
  • Sift together splenda and unsweetened cocoa. Set aside. Beat cream cheese, vanilla and butter with electric mixer on medium speed until well blended. Add dry ingredients and beat to completely incorporate. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust.
  • Bake 45 - 55 minutes or until center is almost set. Run Knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Top with whipped topping and fruit.
  • Helpful hints:.
  • *Cream cheese can be softened by microwaving on high for 30 - 45 seconds.
  • *For ease of serving; lightly butter ring of spring form pan and line the bottom with a circle of wax or parchment paper as well as lining the sides with strips of wax or parchment. Lightly buttering the sides and bottom help the paper to stick and when it's ready to serve when you take the ring off you just have to carefully peal the parchment/wax paper off. The sides of the cake don't get mangled this way.

1/3 cup sour cream
1 teaspoon vanilla extract
1/8 teaspoon lemon zest

Steps:

  • Pre-heat oven 350 F.
  • Use hand mixer.
  • Large mixing bowl beat cream cheese until fluffy.
  • add artificial sweetener, sour cream, vanilla and lemon zest mix for 3 mins.
  • Add eggs and mix for 1 minute.
  • Pour filling in a lightly greased pie pan or 9 springform pan.
  • Bake for 50-55 minutes or until lightly brown.
  • Cool for an 1 to 2 hours and chill for 4 hours.

This is a low calorie dessert recipe that I LOVE and had while at Duke Diet Fitness Center. Don't let the fact that it's made with soft tofu fool you! It is incredibly chocolately, creamy and DELISH! You would never know it's cutting the calories in this one. Try it, you won't be sorry you did!!!

1 (6 ounce) package chocolate chips
12 ounces soft tofu or 12 ounces silken tofu
1 tablespoon honey
3/4 teaspoon vanilla
1/2 teaspoon Splenda sugar substitute
8 ounces fat free cream cheese or 8 ounces reduced-fat neufchatel cheese
1 (9 inch) graham cracker pie crust

Steps:

  • In a double boiler or in the microwave melt the chocolate chips.
  • In a food processor place the melted chocolate, 8 oz. of tofu, and 1/2 T. of honey. Blend well, then place the mixture in the bottom of the pie shell.
  • In a separate food processor mix the cream cheese, remaining 4 oz. of tofu, the other 1/2 T. of honey, and the Splenda and vanilla. Mix well. Spread this mixture over the chocolate layer.
  • Serve with sauce of choice, or fresh fruit topping.
  • Alternate method:.
  • Try putting half of the chocolate mixture on the bottom, with the cheese mixture in the middle, and the other half of the chocolate mixture on the top.

1/2 cup crushed graham crackers
2 tablespoons butter, melted
1 envelope unflavored gelatin
3/4 cup fat-free milk
2 8-ounce packages reduced-fat cream cheese, softened
1 8-ounce package fat-free cream cheese, softened
8 ounces fat-free sour cream
1/3 cup sugar
2 teaspoons vanilla
4 ounces bittersweet chocolate, melted and cooled

Steps:

  • 1.In a bowl, stir together the graham crackers and butter. Press the mixture into the bottom of an 8-inch springform pan. Chill while preparing the filling. 2.In a saucepan, sprinkle the gelatin over the milk; let stand for 5 minutes. Stir over low heat until the gelatin is dissolved. Remove from heat; cool for 15 minutes. 3.In a large bowl, beat the cream cheeses with a mixer until smooth. Beat in the sour cream, sugar, and vanilla; gradually beat in the gelatin mixture. Divide the cream cheese mixture in half; gradually stir the melted chocolate into one half. 4.Spread half of the chocolate mixture onto the crust. Spoon half of the remaining cream cheese mixture onto the chocolate mixture in small mounds; swirl them together with a butter knife. 5.Spread the remaining chocolate mixture on top. Spoon on the remaining cream cheese mixture, and swirl again. Cover; chill for 6 hours or until set. 6.Loosen the cake from the pan with a knife before removing the side of the pan. 2 (16 ounce) containers French vanilla yogurt
5 eggs
1 cup white sugar
1 teaspoon vanilla extract
1 ½ cups graham cracker crumbs
1 teaspoon white sugar
2 tablespoons butter, melted

Steps:

  • Place a paper towel in a colander, and place the colander over a bowl to collect any draining liquid. Pour yogurt on top of the paper towel. Set in refrigerator for 12 to 24 hours. Use this yogurt curd like cream cheese.
  • Mix graham cracker crumbs with 1 teaspoon sugar and butter or margarine. Spread mixture in the bottom of a 9 inch springform pan.
  • Mix yogurt curd with 1 cup sugar, eggs, and vanilla. Pour over crust.
  • Bake at 325 degrees F (165 degrees C) for 70 minutes, or until done when checked with cake tester. Let sit 24 hours before serving.
