1/2 cup unsalted butter, room temperature
1 1/4 cups sugar
8 ounces cream cheese, room temperature
2 eggs, room temperature
1 teaspoon vanilla
1 teaspoon almond extract
1 1/3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup milk, room temperature
3/4 cup dried cherries (or other dried fruit)
1/2 teaspoon cinnamon
2 tablespoons unsalted butter
1/3 cup flour
1/3 cup brown sugar
3/8 cup sliced almonds

Steps:

  • Preheat oven to 350.
  • Spray a 9 x 13 cake pan.
  • Cream butter, sugar and cream cheese very well until smooth.
  • Add eggs, one at a time, scraping down as needed add vanilla and mix inches.
  • Sift together dry ingredients and add alternately with milk.
  • Stir in cherries.
  • Spread into cake pan, smooth top Mix topping ingredients (excluding almonds) together.
  • Sprinkle almonds then topping over batter.
  • Press lightly.
  • Bake until tests done.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3/4 cup powdered sugar, divided
3/4 tsp. almond extract, divided
1 egg, separated
1 can (8 oz.) refrigerated crescent dinner rolls
2 tsp. milk
2 Tbsp. sliced almonds, toasted

Steps:

  • Heat oven to 375ºF.
  • Mix cream cheese, 1/4 cup sugar, 1/2 tsp. extract and egg yolk until blended.
  • Unroll crescent dough onto center of baking sheet; press seams and perforations together to seal. Spread cream cheese mixture into 3-inch-wide lengthwise strip down center of dough to within 1/4 inch of short ends.
  • Make cuts, 1-1/2 inches apart, down both long sides of dough to within 1/2 inch of cream cheese mixture. Starting at one short end, bring opposite strips of dough together over filling, then twist gently in center to secure. Whisk egg white until foamy; brush onto dough.
  • Bake 18 to 22 min. or until lightly browned. Cool 15 min.
  • Mix remaining sugar, extract and milk until blended; drizzle over coffee cake. Sprinkle with nuts.

1 ½ crispy apples - peeled, sliced into thin wedges, and halved, divided
6 tablespoons sliced almonds
3 ½ tablespoons unsalted butter
¼ cup white sugar
¼ cup light brown sugar
1 egg
2 tablespoons applesauce
1 tablespoon honey
1 cup buttermilk
¾ teaspoon almond extract
¼ teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup rolled oats
3 tablespoons butter, melted
⅓ cup light brown sugar
2 tablespoons milk
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees F (375 degrees C). Lightly butter an 8-inch baking pan.
  • Arrange enough apple wedges to form a single layer over the bottom and sides of the prepared pan.
  • Heat a saucepan over medium heat. Add almonds; cook and stir until toasted, 4 to 5 minutes. Remove from heat.
  • Beat 3 1/2 tablespoons butter, white sugar, and 1/4 cup brown sugar together in a bowl using an electric mixer until smooth. Add egg, applesauce, and honey; beat until smooth. Stir buttermilk, almond extract, and vanilla extract into the batter.
  • Combine flour, baking soda, and 1/2 teaspoon salt in a bowl; stir mixture into the batter. Mix until well combined. Fold in 3/4 of the remaining apple wedges. Pour batter into the prepared pan. Top with 2 tablespoons toasted almonds.
  • Bake the preheated oven for 35 minutes.
  • Heat oats in a saucepan over medium heat; cook and stir until slightly toasted, about 5 minutes.
  • Stir 3 tablespoons butter and 1/3 cup brown sugar together in a bowl until combined. Add remaining almond slices, oats, milk, and 1 pinch salt.

Steps:

  • Heat oven to 350°F. Line 8-inch square pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
  • In large bowl, beat butter, granulated sugar and almond paste with electric mixer on medium speed until light and fluffy. Beat in almond extract and eggs until well blended. On low speed, beat in flour, baking powder and salt just until blended. Spread batter in pan; sprinkle with almonds.

1/4 cup warm water (110° to 115°)
2-1/2 cups all-purpose flour
2 tablespoons sugar

1/2 cup warm 2% milk (110° to 115°)
2 large egg yolks, beaten, room temperature
FILLING:
1 carton (8 ounces) Mascarpone cheese
1/4 cup sugar
3 tablespoons all-purpose flour
1 egg yolk
1 teaspoon grated lemon zest
1 teaspoon almond extract
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon 2% milk
1/2 teaspoon vanilla extract
1/2 cup sliced almonds, toasted

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine 2 cups flour, sugar and salt. Cut in butter until crumbly. Stir in the yeast mixture, milk and egg yolks. Add enough remaining flour until mixture forms a soft dough. Cover and refrigerate overnight., In a small bowl, combine the filling ingredients; set aside. Punch dough down. On a floured surface, roll into a 13x10-in. rectangle. Transfer to an ungreased baking sheet. Spread filling over dough to within 1 in. of edges., Starting with a long side, roll just to the center of the rectangle; repeat with remaining side, meeting in the middle., With scissors, cut from outside edges to two-thirds of the way toward center at 1-1/2 in. intervals. Steps:

  • Preheat oven to 350 degrees. Make the topping: Whisk flour, brown sugar, cinnamon, salt, and almonds in a medium bowl. Using your fingers, work in butter until mixture forms coarse crumbs ranging in size from small peas to marbles. Sprinkle with almond extract; toss to combine.
  • Make the cake: Use cooking spray to coat a 10-inch tube pan with a removable bottom. Place pan on a baking sheet. Sift together flour, baking powder, baking soda, and salt into a medium bowl. Fold raspberries into jam in a small bowl.

Pull up on tube to lift cake from pan. Let cool on rack 15 minutes. Invert cake onto a baking sheet, removing tube portion, then reinvert onto rack to cool completely.

1/2 cup almonds, with skin,chopped coarsely
3 tablespoons packed brown sugar
2 tablespoons all-purpose flour
1 teaspoon cardamom
3 tablespoons unsalted butter, melted
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 1/4 teaspoons baking soda
1 cup unsalted butter, at room temperature
1 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla
1 cup sour cream

Steps:

  • FILLING: In a medium bowl, mix together almonds, sugar, flour and cardamom and melted butter with a fork or your fingertips.
  • CAKE: Preheat oven to 350 degrees F.
  • Sift together flour, baking powder, salt, cinnamon and baking soda and set aside.
  • Cream together butter and sugar until light and fluffy.
  • Add the eggs, one at a time and beating well between additions.
  • Beat in vanilla.
  • Add the dry ingredients in thirds to the creamed butter mixture, alternating with the sour cream, beating in between additions and ending with dry ingredients.
  • Scrape down the sides and beat for 1 minute to develop structure of cake.
  • Line an 8-inch springform pan with parchment paper and grease sides.
  • Pour half of the batter into the pan and sprinkle half of the almond mixture over the cake.
  • Pour the remaining batter into the pan, spreading it out if necessary.
  • Top with the remaining almond mixture.
  • Bake on the middle rack of oven for 50 to 60 minutes.
  • Cake is done when a knife inserted in the center comes out clean.
  • Leave cake in pan and cool on a wire rack for 20 minutes.
  • Remove from pan and cool completely.

ALMOND COFFEE CAKE W/ AMARETTO GLAZE

This is nice almond-spiked coffee cake that gets better the longer it sits. Make at least one day before serving.

4 ounces almond paste (I use marzipan)
1 cup sugar
1/2 cup unsalted butter
1 teaspoon vanilla extract
3 eggs
3/4 cup low-fat milk
3 cups flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1 tablespoon cornstarch
1/4 cup sliced toasted almond
confectioners' sugar (optional)
1/4 cup water
1/4 cup granulated sugar
1/4 cup Amaretto (see note)

Steps:

  • Preheat oven to 350-degrees.
  • Generously grease and flour a tube pan.
  • You can also use a 9X5-inch loaf pan, a 9-inch springform pan, bundt or kugelhupf cake mold.
  • Cake: In a bowl, cream the almond paste with sugar and butter.
  • As the almond paste breaks up, add the vanilla, eggs and milk.
  • Blend well and fold in the flour, salt, baking powder and cornstarch to make a thick but fluffy batter.
  • If serving cake bottom side up, sprinkle the almonds into the bottom of the pan here.
  • Spoon the batter into the prepared pan.
  • Sprinkle the almonds on top, otherwise.
  • Bake 50-55 minutes.
  • The cake should be evenly golden brown and slightly cracked.
  • When completely cool, dust with the confectioners' sugar, if using.
  • Or, alternatively, poke holes into the top of the cake and drizzle on the Amaretto glaze.
  • (I used the glaze, and then dusted confectioners' sugar on top.).
  • Glaze: Stir together the water and sugar in a small saucepan.
  • Set on low heat to dissolve the sugar.
  • Stir in the liqueur, heat for 2-3 minutes more.
  • Cool slightly.
  • NOTE: You can replace the liqueur with an additional 1/4 cup water combined with 1/2 teaspoon almond extract.

1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter or 3/4 cup margarine, softened
3/4 cup packed brown sugar
1/4 cup honey
1 teaspoon almond extract
3 large eggs
1/2 cup milk
1 (12 ounce) package nestle toll house semi-sweet chocolate bits, divided
1/2 cup packed brown sugar
1/2 cup all-purpose flour
1/4 cup butter or 1/4 cup margarine
3/4 cup sliced almonds
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon milk

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour two 9-inch round cake pans.
  • Combine flour, baking powder, baking soda and salt in small bowl.
  • Set aside.
  • Beat butter, sugar, honey and almond extract in large mixer bowl until creamy.
  • Add eggs one at a time, beating well after each addition.
  • Gradually beat in flour mixture alternately with milk.
  • Stir in 1 cup morsels.
  • Divide batter into prepared cake pans.
  • In medium bowl add brown sugar and cut in butter or margarine with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Stir in sliced almonds and 1/2 cup morsels.
  • sprinkle over batter.
  • Bake for 20 to 30 minutes or until wooden pick inserted in center comes out clean.
  • Cool in pans for 15 minutes.
  • Melt remaining 1/2 cup morsels, butter or margarine and milk in small saucepan over low heat, stirring until smooth.
  • Drizzle over coffeecake.
  • Yummy!

I don't remember where I found this recipe - but I jotted it down because the ingredients were a bit different. This is not an overly sweet cake, has only a little chocolate, and I love the flavor the yogurt brings.

1/2 cup coarsely chopped almonds, toasted
1/3 cup brown sugar, packed
1/4 cup semi-sweet chocolate chips
1 tablespoon cocoa powder
1 tablespoon instant coffee powder
1 tablespoon chopped dried apricot
3/4 teaspoon cinnamon
2 3/4 cups flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup butter, softened
1 1/2 cups sugar
1 teaspoon vanilla
3 eggs
2 cups plain yogurt

Steps:

  • Preheat oven to 350. Generously butter 10-inch Bundt pan or 13 x 9-inch baking pan.
  • Combine nuts, brown sugar, morsels, cocoa, coffee granules, apricots and cinnamon in medium bowl; set aside.
  • Combine flour, baking powder, baking soda and salt in medium bowl; set aside.
  • Beat butter in large bowl with an electric mixer until light and fluffy. Add granulated sugar and vanilla extract; beat for 2 minutes. Add eggs one at a time, beating well after each addition, until mixture is completely smooth. Alternately add flour mixture and yogurt; beginning and ending with flour mixture. Mix until smooth. Pour half the batter into prepared pan. Spread half the nut mixture on top; repeat layers.
  • Bake for 1 hour or until wooden pick inserted near center comes out almost clean. Cool in pan on wire rack for 10 minutes before carefully turning cake out onto rack. Serve warm with powdered sugar sifted lightly over the top, if desired.

This is my favorite family recipe. The almonds and apricots make it a colorful coffee cake and an outstanding dessert.

1 cup butter, softened
1-1/2 cups sugar
3 large eggs
1 cup sour cream
3/4 to 1 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sliced almonds, divided
1 jar (12 ounces) apricot preserves, divided

Steps:

  • In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition until smooth and fluffy. On low speed of mixer, blend in sour cream and extract. Combine flour, baking powder and salt; add to creamed mixture and mix just until combined. Sprinkle half of almonds in a greased and floured 10-in. tube pan. Spread half of batter over nuts. Carefully spoon half of preserves over batter, keeping preserves away from edges of pan. Sprinkle with remaining almonds. Spoon on remaining batter; add remaining preserves to center of batter. Bake at 350° for 50-60 minutes. Cool in pan on rack for 20 minutes. Remove from pan; cool completely.
