HAWAIIAN PASSION FRUIT CHIFFON PIE (LILIKOI CHIFFON PIE)

- Make your pie crust if using the recipe I linked from Serious Eats or your own, or use a store bought crust. You can make the pie crust a day ahead of time and freeze it. For the pie filling: Set a pan of water over medium high heat and bring to a steady simmer. Make sure the water level is low enough that a bowl set on top wont touch it. Lower the heat slightly and keep simmering. In a small bowl add the 4 tablespoons of cold water and sprinkle the gelatin over to soften. In a bowl that will fit over the pan of simmering water, whisk the egg yolks until thickened and lighter in color, add in passion fruit pulp and juice ( or puree), zest, 1/2 cup of sugar and salt. Set over the pan of simmering water and whisk until thickened. About 8-10 minutes. Make sure to stir constantly so the egg doesn't scramble. Add in the softened gelatin and stir until melted. Remove from heat and cool until thickened and slightly congealed on top. Whip the egg whites until foamy, slowly add in the remaining sugar and then whip until stiff peaks are formed and the meringue is glossy. Fold into the passion fruit mixture and stir until fully combined. Fill the pie crust with the mixture and chill at least 4 hours up to overnight. To make the frosting: Using the same double boiler method as the pie filling, set a pan of simmering water over the stove. In a bowl that fits the pan but won't be touching the water, whisk the frosting ingredients except for the vanilla for one minute using a hand mixer. Set the bowl over the simmering water and continue to mix on high for 7 minutes. Remove from heat and mix in the vanilla extract. Let cool slightly then spread on the top of the chilled pie. Garnish with passion fruit pulp over the top and serve.
SWEET LILIKO'I (PASSION FRUIT) BARS
Lilikoi (passion fruit) bars are a very simple and easy dessert to make! The lilikoi's sweet and tangy taste really brings out it's flavors in this lovely treat.

- Extract the juice from lilikoi by cutting it in half then scoop out the contents into a blender.
- Turn on the blender at low speed for a few minutes to separate the seeds from the pulp and juice. Strain it through a mesh. Measure out 1 cup of the juice and set aside.
- For the shortbread crust, sift 2 1/2 cups of flour into a large bowl. Also sift in the powdered sugar and salt. Whisk together. Melt the butter and combine it in the bowl until it looks crumbly.
- Line a 9x13 inch baking pan with parchment paper. Pour in the crumble mixture. Pat down the mixture with your hands or anything with a flat surface. Bake it at 350 degrees Fahrenheit for 20 minutes or until it is a light golden brown. Set aside to cool.
- To make the lilikoi filling, combine the sugar and flour in a large bowl. Whisk it together. Add in the lilikoi juice and eggs. Mix until it is combined well. Pour the mixture onto the finished shortbread crust.
- Bake it in the oven for another 25 minute. It will look a little wobbly in the middles, but if the sides are firm, it is ready to take out from the oven. Let it cool for an hour, then chill in the fridge for two hours or more.
- Cut the lilikoi bars into squares. For clean cuts, wipe your blade in between cuts. Sprinkle or dust on more powdered sugar. Serve and enjoy these onolicious lilikoi bars!
GUAVA CHIFFON PIE
When I was a kid my mom used to make this pie and I justed love it so much that every year when it was my birthday I would ask for this pie instead of cake.

Steps:
- 1. Sprinkle gelatin over water; let stand 5min. Combine 1/2c sugar,egg yolks,and guava juice in a pot cook on med. heat until thickened. Add gelatin and stir to combine add lemon juice and food coloring and cool completely.
- 2. Beat egg whites with salt until foamy; add 1/4c sugar gradually, beating until stiff and holding peaks. Fold the cooled guava mixture into the meringue. Chill at least 4 hours top with sweetened whipped cream.
GUAVA BARS
I made these in response to a request from a Colombian coworker for "something guava". Guava paste can usually be found in the international aisle of well-stocked grocery stores. You may find it in a wrapped bar as opposed to a large flat tin; I find that the canned product is better-tasting and more attractively colored than the stuff in the bar, but use what you can find.

- Preheat oven to 350 degrees F.
- Grease a 13x9-inch pan, and line with foil or parchment paper.
- Lightly grease paper/foil (I use cooking spray) Combine brown sugar, flour, baking soda, salt, and rolled oats.
- Cut in butter with a pastry blender or two knives until mixture is crumbly.
- Press half of the crust mixture into the prepared pan.
- Slice the guava paste into enough pieces to cover the crust within 1/4 inch of the edge, and place in pan.
- Sprinkle remaining crust mixture over guava paste layer, and lightly press down with the back of a fork or spatula.
- Bake for 35-40 minutes in preheated oven, or until crust is lightly browned.
- Allow to cool in pan on wire rack before cutting into 16-24 bars (depending on the size bars you cut).
