GROUNDHOG CAKE

Steps:
- Pour boiling water into a large glass measuring cup. Stir in the oats. Place the chocolate morsels over the top of the oatmeal -- do not stir!, Let stand for 20 minutes until the oats are soft and the chocolate is melted.
- In a large bowl, cream the butter and gradually beat in the sugars. Beat in eggs one at a time. Add the oats and melted chocolate, mixing well. Add the flour, salt and baking soda. Mix thoroughly.
- Transfer the batter to a greased and floured baking pan (13 by 9 by 2-inches). Bake in a 350 degree oven for 40 minutes, or until the cake starts to leave the sides of the pan and springs back at the touch of a finger. Cool 10 minutes in pan, shake loose, and turn out on rack to cool completely. Frost and decorate if desired.
- In a custard cup, dissolve the instant coffee in the milk or cream. In a bowl, cream butter until light, add vanilla, salt and gradually blend in sifted confectioners' sugar with the coffee-milk mixture. Use enough sugar for a good spreading consistency.
- Yield: frosting for the top of a 13 by 9-inch cake
GROUNDHOG DAY DESSERT
Circle is celebrating Groundhog Day with these adorable pudding cups. This quick and easy dessert will get everyone in the family excited for spring, whether it comes six weeks early or not.

Steps:
- Pour shredded coconut into a bowl and add 4-5 drops of green food coloring. Mix well.
- Open one cookie and use the inside peanut butter as your "glue." Another option is to use peanut butter from a jar.
- Spread a bit of the peanut butter on the back of the eyes, nose (mini chocolate candies), and teeth (marshmallow bits). Press on cookie.
- Cut a few brown mini chocolate candies in half with a knife. These will become the ears. Spread some peanut butter on the bottom of the mini chocolate candies and place on top of the cookie.
- Open up pudding cups and place the groundhogs in the pudding, then sprinkle the green coconut around the front and back of the cookie.
- Serve and enjoy.
GROUNDHOG DAY DESSERT - GROUNDHOGS LIKE TO PARTY TOO!
Steps:
- POUR milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 min or until well blended. Let stand 5 min. Gently stir in whipped topping.
- SPOON pudding mixture into 11 x 13 casserole pan and top with crushed cookies crumbs. Insert Teddy Grahams so that only their little faces show -- some get confused and show their feet!
- REFRIGERATE at least 1 hour. Top with fruit snacks just before serving. Store leftovers in refrigerator.
