2 tablespoons extra-virgin olive oil
1 large onion, diced
salt and ground black pepper to taste
1 ¼ pounds ground turkey
1 tablespoon chopped garlic
1 ½ teaspoons red pepper flakes
2 (28 ounce) cans crushed tomatoes
1 cup dry white wine
1 (6 ounce) can tomato paste
1 tablespoon dried oregano
1 tablespoon dried basil
2 tablespoons white sugar, or more to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and a pinch of salt; cook and stir until softened, about 5 minutes. Add turkey; cook and stir until browned, about 5 minutes. Stir in garlic; cook for 2 minutes. Add red pepper flakes.
  • Stir tomatoes, white wine, tomato paste, oregano, and basil into the pot. Simmer, stirring occasionally, until the raw wine flavor cooks off, about 1 hour. Stir in sugar to reduce acidity. Season with salt and pepper. Puree sauce with an immersion blender for a less chunky sauce.

1 1/4 lbs ground turkey
1 yellow onion, chopped
3 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 cup chicken broth
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1 tablespoon butter

Steps:

  • In a 4 1/2 quart pot/pan brown the ground turkey over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add tomato paste and crushed tomatoes, stirring until all is combined.
  • Add chicken broth to thin it down a little bit.
  • Add spices, butter, and salt and pepper and allow to simmer over low heat for about 15 minutes (just long enough to boil the water and cook the pasta!).
  • Taste and adjust seasonings to preference.

1 pound spaghetti
1 tablespoon olive oil
4 cloves garlic, minced
1/2 Spanish onion, chopped
10 ounces ground turkey
One 28-ounce can crushed tomatoes
Two 8-ounce cans tomato sauce
Two 6-ounce cans tomato paste
1/2 tablespoon sugar
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
1/4 teaspoon cinnamon
2 bay leaves
2 tablespoons grated Parmesan
1/2 bunch fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat a large pan over medium heat and add the olive oil, garlic and onion. Cook until translucent, about 2 minutes. Add the turkey and cook, breaking it up with a spoon, until cooked through, about 8 minutes.
  • Add the crushed tomatoes, tomato sauce and tomato paste, stirring to combine. Add the sugar, dried basil, oregano, parsley, cinnamon and 1/2 teaspoon each salt and pepper and stir to combine. Add the bay leaves and 1/2 cup water. Stir well and simmer to infuse the flavors, about 10 minutes.
  • Meanwhile cook the spaghetti in the boiling water according to the package instructions. Drain well.
  • Transfer the spaghetti to a platter and ladle the sauce on top. Top with the grated Parmesan and fresh basil leaves.

¼ cup olive oil
½ white onion, chopped
1 tomato, chopped
6 basil leaves, chopped
4 cloves garlic, minced
1 (20 ounce) package ground turkey
1 teaspoon Italian seasoning
¼ teaspoon oregano
2 (15 ounce) cans tomato sauce
½ (6 ounce) can tomato paste, or to taste
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Saute onion, tomato, basil, and garlic in hot oil until the onion begins to soften, about 5 minutes.
  • Break ground turkey into small pieces and add to pot; season with Italian seasoning and oregano. Cook and stir mixture until turkey is completely browned, 7 to 10 minutes.
  • Stir tomato sauce into the turkey mixture; bring to a boil, reduce heat to low, and simmer until the sauce has thickened slightly, 20 to 25 minutes.
  • Stir tomato paste into the turkey mixture until evenly colored; season with salt and pepper. Cook until the liquid is reheated, 1 to 2 minutes more.

I stole this recipe from my wife and now I'm sharing it with you! This is by no means a traditional pasta Bolognese, which usually contains beef, but even that is a secret to some members of my family. Now it can be your secret too!

2 tablespoons olive oil
2 tablespoons unsalted butter
1 large onion, finely chopped
3 carrots, finely chopped
3 stalks celery, finely chopped
4 cloves garlic, minced
1 teaspoon dried oregano
2 pounds ground turkey
1/2 cup tomato paste
1 cup dry white wine
2 cups chicken broth
Kosher salt and ground black pepper
1 cup whole milk (do not use skim milk)
1 pound pasta of choice
1/4 cup fresh basil leaves or parsley leaves, chopped
Grated Parmesan, for serving

Steps:

  • Heat the oil and butter in a large heavy-bottom saucepan over medium heat until the butter melts. Add the onions, carrots and celery. Cook, stirring occasionally, until the vegetables soften and the onion is translucent, 8 to 10 minutes. Add the garlic and oregano and cook, stirring frequently, for 1 minute.
  • Add the turkey and cook, breaking up clumps of the meat, until it is no longer pink, about 10 minutes. Add the tomato paste and cook 5 minutes longer, stirring frequently.
  • Pour in the wine and scrape the bottom of the pan to remove any browned bits. Simmer until the wine is reduced by half. Add the broth and salt and pepper to taste and cook, covered, for 1 hour over low heat. Add the milk and simmer for 20 minutes more, stirring occasionally to keep the sauce from burning. Season again with salt and pepper to taste.
  • Meanwhile, cook the pasta according to package directions or your favorite method. Drain the pasta and fold it into the sauce. Serve topped with basil and Parmesan.

  • Heat olive oil in heavy large Dutch oven over medium-high heat. Add chopped garlic and sauté until tender, about 3 minutes. Add ground turkey and sauté until beginning to brown, breaking up large chunks with spoon, about 8 minutes. Add crushed tomatoes with puree, white wine, parsley, basil and oregano. Reduce heat to medium-low and simmer mixture until thickened to sauce consistency, about 30 minutes. Season sauce to taste with salt and pepper. Add pasta to sauce and toss to combine.
