- Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. Cook mostaccioli as directed on package. Drain.
- Meanwhile, in 12-inch nonstick skillet, brown ground beef over medium-high heat until thoroughly cooked, stirring frequently. Drain. Stir in tomato sauce, tomatoes and mushrooms. Bring to a boil. Remove from heat; pour into sprayed baking dish.
- Add cooked mostaccioli; stir gently to mix. Spray sheet of foil with cooking spray; place sprayed side down on baking dish and seal tightly.
- Bake at 350°F. for 15 minutes. Uncover; sprinkle with cheese. Bake uncovered an additional 5 to 10 minutes or until casserole is bubbly and cheese is melted.

This is a great casserole, it tastes similar to lasagna. You can also top with grated cheese the last 15 minutes of baking if desired, I also like to add in some green bell pepper and dried chili flakes for heat but that is optional.

- Set oven to 350 degrees.
- Grease a large lasagna dish.
- Cook the pasta until only firm-tender; drain (it does not have to measure exactly 4 cups cooked, careful not to overcook the pasta as it will cook more in the oven) drain and transfer to a bowl, toss with a couple tablespoons oil to prevent sticking; set aside.
- In a skillet, cook ground beef, onion, jalapenos (if using) mushrooms and minced garlic until meat is brown and cooked stir in 1/2 cup Parmesan cheese, tomato sauce salt and pepper, stir until heated through (you can the sauce for up to 45 minutes on low heat).
- Spread 1/2 meat sauce on bottom of pan.
- Spread 1/2 noodles on top of sauce.
- Top noodles with 1 cup mozza cheese.
- Mix 1 cup cottage cheese with 1/2 cup sour cream and 1/2 cup Parmesan cheese.
- Spread over mozzeralla cheese.
- Top with remaining tomato sauce, noodles,and remaining mozza cheese.
- Sprinkle with remaining 1/2 cup Parmesan cheese.
- Bake, covered for 20 mins, uncover casserole (at this point you can sprinkle with grated mozzeralla or cheddar cheese if desired).
- Return to oven to bake for another 10-15 mins, or until bubbly.

- 1. Cook macaroni according to package directions; drain.
- 2. Place butter in a large skillet. Add onion and celery and cook slightly (5 minutes--do not brown) over medium-low heat. Add ground beef and fry until browned. Season with salt and pepper to taste. Stir in tomato sauce and simmer, covered, until heated through.

- Note: A deep, a 12 to 14-inch pot is the perfect size for this recipe, preferably oven-safe.
- Pre-work: Preheat oven to 400 degrees. Shred the cheese and set it aside along with the sour cream. We don't want those to be cold when we add them to the sauce.
- Cook and crumble the ground beef over medium heat. Add the onions halfway through and cook until softened.
- Drain grease. Add the garlic and cook for 1 minute.
- Add salt, Italian seasoning, Worcestershire sauce, and flour. Stir to combine and cook for 2-3 minutes to remove raw flour taste.
- Add the chicken broth and use a silicone spatula to "clean" the bottom of the pot.
- Add the tomato sauce and undrained diced tomatoes.
- Bring to a boil, then reduce to a simmer. Let it bubble gently to thicken and reduce while you start to boil the water for the pasta.
- Cook the pasta until al dente (refer to package instructions), and drain. Don't overcook.
- Remove the sauce from the heat and let the base cool down a bit. Swirl in the sour cream and 1 cup (not all) of the shredded cheese, stir to combine. Stir in the pasta.
- If your dish is not oven-safe, transfer to a lightly greased 9 x 13 inch casserole dish and top with remaining 1 ½ cups of cheese.

- Cook pasta according to package directions and drain.

- Boil water and cook the penne pasta not more than 10 minutes. Make sure not to fully cook the pasta. Leave a little bit of crunch to it so it won't get overcook when you bake it later.

- In a saute pan, over medium heat, add the oil and saute onions until translucent. Pro tip - For making this casserole, use a large skillet that will accommodate the finished dish with a fitted lid.
- Then, add the ground beef and saute until the meat is no longer pink making sure to break the meat into smaller pieces. Next, add the garlic, followed by the canned crushed tomatoes and tomato paste. Combine well. Pro tip - Browning adds a nice caramelization and flavor but do not overcook as it will dry the meat making it chewy.
- Next, add the mustard, ketchup, dried oregano, salt, and pepper. Followed by the chicken broth and water. Bring to a boil. Pro tip - This may look like a lot of liquid but it will be absorbed by the dry uncooked pasta.

- Preheat your oven to 400F and move the rack to the middle position. Grease a 9x13 baking dish (I use Pam spray).
- Boil a large, salted pot of water for the penne. Cook it for 10 minutes (it should be slightly underdone so it doesn't get mushy).
- Add the oil, beef, and onion to a skillet. Sauté over medium-high heat, breaking the meat up as you go along, for 10 minutes. Once it gets going, stir in the garlic. Spoon out excess fat if needed.
- Stir in the marinara sauce and warm through. Give it a taste and season with salt & pepper as needed.
- Drain the pasta and pour it into the baking dish. Pour the beef mixture over top and then toss until it's combined with the pasta. Top with an even layer of the cheese. If you want it extra cheesy, you can stir in an additional half cup of cheese prior to topping it with the rest of the cheese.

- Heat a large skillet over medium-high heat. Cook and stir beef, salt, and black pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. - In a large skillet, cook ground beef over medium heat. Break the meat up in to crumbles and cook until browned.
- Stir in petite diced tomatoes, tomatoes with green chilies, tomato paste, salt, pepper and Italian seasoning.

- Take off heat.
- Cook egg noodles according to package, drain.

- Preheat broiler. Stir tomatoes, salt, oregano and pepper into beef and cook for 3 minutes. Add reserved pasta and mix. Cook for 2 to 3 minutes to heat pasta. Remove from heat and stir in Cheddar.
- Top pasta with reserved bread-crumb mixture and cook under broiler until golden brown, 2 to 3 minutes. Serve immediately.
