1 pound ground beef
1 envelope reduced-sodium taco seasoning
3/4 cup water
1 medium head iceberg lettuce, torn (about 8 cups)
2 cups shredded cheddar cheese
2 cups broken nacho-flavored tortilla chips
1/4 cup Catalina salad dressing

Steps:

  • In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, 4-6 minutes or until thickened, stirring occasionally. Cool slightly., In a large bowl, toss lettuce with cheese. Top with beef mixture and chips; drizzle with dressing and toss to combine. Serve immediately.

1 pound lean ground beef
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can chili beans
1 (16 ounce) bottle French dressing
1 head iceberg lettuce
1 (14.5 ounce) package tortilla chips
2 cups shredded Cheddar cheese
1 cup chopped tomatoes
4 tablespoons sour cream
½ cup prepared salsa

Steps:

  • In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, chili beans and French-style dressing. Fill the dressing bottle 2/3 full of water and add to the skillet. Bring to a boil, reduce heat and simmer for 15 minutes.
  • Crush the bag of chips, open the bag, and toss the broken chips into a large bowl with the lettuce, cheese and tomatoes. When the meat mixture is done, combine it with the lettuce, tomatoes, chips and mix well. Then, add salsa and sour cream.

This easy taco salad takes all of the best parts of a crunchy, ground beef taco, and turns them into a quick, healthy, weeknight dinner.

1 tbsp. vegetable oil
1 lb. ground sirloin beef
1 1 oz. package taco seasoning
1 15 oz. can black beans, drained and rinsed
1 head romaine lettuce, chopped
1 c. grated cheddar cheese
1 c. halved cherry tomatoes
1 avocado, diced
1/2 c. sliced red onion
1/4 c. chopped cilantro leaves
3 limes, halved
For serving: tortilla chips and sour cream
Optional: thinly sliced jalapeño or hot sauce

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the meat and cook for 6-7 minutes, breaking it up into small pieces with a wooden spoon. Add 2/3 cup of water and the taco seasoning mix. Stir well to combine. Add the black beans and stir gently to combine. Cook until the beans are warmed through, about 3 minutes.
  • Divide the lettuce among serving bowls. Top with grated cheese, the meat mixture, tomatoes, avocado, red onion, and cilantro. Squeeze a lime half all over each salad, then dollop with sour cream. Add some fresh jalapeño slices or a dash of hot sauce if you like. Serve with tortilla chips.

Grilled beef steak and fajita ingredients are served on a bed of salad greens with a sassy salsa dressing.

1 container (14 ounces) refrigerated salsa (1 1/2 cups)
1/4 cup olive or vegetable oil
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic salt
1-pound beef sirloin steak, about 1 inch thick
2 medium red or green bell peppers, sliced
1 medium onion, sliced
9 cups bite-size pieces romaine lettuce
Guacamole, if desired
Sour cream, if desired

Steps:

  • Heat coals or gas grill for direct heat. Mix all Salsa Dressing ingredients; set aside.
  • Mix chili powder, cumin and garlic salt. Sprinkle mixture over both sides of beef.
  • Place bell peppers and onion in grill basket. Cover and grill beef and vegetables 3 to 4 inches from medium heat about 5 minutes for medium-rare or about 7 minutes for medium; turn. Grill 5 to 7 minutes longer or until desired beef doneness.
  • In large bowl, toss lettuce, grilled peppers and onion with half of the dressing. Cut beef diagonally into 1/2-inch slices; place on salad. Serve with remaining dressing, guacamole and sour cream.

3 tablespoons mayonnaise
1 ½ tablespoons full-fat sour cream
1 ½ tablespoons whole milk
⅜ teaspoon lemon juice, (more to taste)
1 small garlic clove, (peeled and minced or pressed through a garlic press)
½ teaspoon chili powder seasoning*
¾ teaspoon dried oregano
1 ½ teaspoons mild olive oil
salt, (to taste)
8 ounces sirloin steak**, (cut into ¾-inch pieces)
1 tablespoon mild olive oil
½ small red bell pepper, (sliced into thin strips)
1 large or 2 small jalapeno peppers, (ribs and seeds removed and sliced into thin strips)
¼ red onion, (peeled and sliced into thin wedges)
4 cups shredded romaine lettuce
1 ounce grated cheese, (such as monterey jack or cheddar)
10 Doritos, (crumbled)

Steps:

  • Whisk all ingredients together until smooth. Season to taste with salt and more lemon juice (if desired). Refrigerate until ready to serve.
  • Season the steak chunks with salt and black pepper. Set aside.
  • Heat olive oil in large cast iron pan until very hot. (The beef should sizzle immediately when it hits the pan.)
  • Fry the beef until the edges are starting to brown (3-5 minutes). Turn the beef chunks over halfway through.***
  • Using a slotted spoon, transfer the beef to a bowl, then add peppers and onion to the pan. Cook until just starting to soften (1-2 minutes).
  • Add lettuce to plates, top with beef, peppers and onion, drizzle with dressing, then sprinkle with cheese and Dorito chips. Serve immediately.
