Steps:
- 1. Brown ground beef & onion, drain fat. Season with salt and pepper to taste.
- 2. Slice potatoes very thin (I use a mandolin). Mix soup, sour cream and milk.
- 3. In a 13x9 casserole, place a layer of potato. Top with a layer of ground beef and onion. Add 1/2 cup veggie, if desired.
- 4. Pour on half the sauce and top with 1 cup of the cheddar cheese. Repeat with another layer.
- 5. Cover with foil and bake at 350 for 1 hour. Remove foil and bake another 10 minutes, or until cheese is golden brown.
SOUTHWESTERN-STYLE BEEF AND POTATO CASSEROLE
Steps:
- Gather the ingredients. Heat the oven to 350 F.
- Grease a 9 x 13 x 2-inch baking pan (2 1/2- to 3-quart size).
- Heat the olive oil in a large skillet over medium heat.
- When the oil is hot and shimmering, add the ground beef, onion, and celery.
- Cook until the beef is browned and vegetables are tender, stirring frequently.
- Add the garlic and jalapeño peppers; cook about 1 minute longer, stirring frequently.
- Stir in the tomatoes, chili powder, salt, pepper, and cumin. Bring to a simmer.
- In the prepared baking dish, arrange half of the sliced potatoes, then top with half of the corn, half of the ground beef mixture, and half of the cheese.
- Repeat the layers, ending with the remaining cheese.
- Cover the baking dish tightly with foil and bake for about 1 hour and 15 minutes, or until potatoes are tender.
- Serve hot and enjoy.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over high heat, melt the shortening and quickly brown the ground beef with the onion. Stir in water and bring to a boil. Cover, reduce heat to low and simmer for 30 minutes.
- In a medium bowl, thoroughly mix the condensed cream of mushroom soup, sour cream, milk, salt and pepper. Set aside.
- Pour meat mixture into a 9x13 inch baking dish. Arrange potatoes over the meat. Pour soup mixture over the potatoes. Sprinkle with Cheddar cheese. Top with whole wheat flake cereal.

- Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 10-inch skillet, cook beef, salt and pepper over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain.
- Meanwhile, in 3-quart saucepan, melt butter over medium-low heat. Add onion; cook about 2 minutes, stirring occasionally, until tender. Stir in flour. Cook 1 to 2 minutes, stirring constantly, until bubbly; remove from heat. Stir in thyme.
- Stir milk into onion mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 2 cups of the cheese until melted.

- Preheat the oven to 350°F. Spray a 9x13 inch pan with cooking spray. Set aside.
- In a medium skillet, brown the ground beef and the onion. Drain and set aside.
- Meanwhile, in a medium saucepan, melt the butter over medium low heat. Stir in the flour. Slowly add in the beef broth and milk, mixing until smooth. Bring to a gentle boil, cooking until thickened.
- Remove from heat and add in the cream of mushroom soup and water.

- Preheat oven to 375˚F. Coat a 9-by-13-inch baking dish with canola oil.
- Heat 1 tablespoon oil in a large skillet over medium heat.
- Add onion and cook, stirring occasionally for 4-5 minutes, or until slightly translucent and soft. Add garlic and cook for 30 seconds, stirring occasionally until fragrant.
- Add ground beef and paprika to taste. Continue cooking until beef is no longer pink, breaking up large pieces with a wooden spoon. Drain away excess fat. Set aside.
- In a small saucepan over medium heat, warm the milk for the sauce until it is just bubbling on the edges, about 3-4 minutes. Keep warm over low heat.
- Heat butter for the sauce in a medium saucepan over medium heat until melted and foaming. Add flour and whisk constantly for about 1 minute, until the roux is golden brown in color.
- Gradually whisk in the warm milk. Bring to a boil, whisking until smooth and there are no more lumps, and then reduce to a simmer.
- Continue to cook for about 5 minutes, whisking frequently, until mixture thickens and attains a pudding-like consistency. Stir in salt and remove from heat.
- Whisk in farmer's cheese and half of the Parmesan cheese.
- Set aside for 10 minutes to let the cheese melt. Vigorously whisk in egg yolks until combined and mixture takes on a golden yellow color. Set aside.
- Cover the bottom of the prepared dish with a single layer of potatoes so they are overlapping slightly. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Spoon beef mixture evenly over the potatoes.
- Cover with the rest of the potatoes and sprinkle with the remaining salt and pepper.

- Cook ground beef in skillet with diced onion until browned and cooked through. Drain and set aside.
- Slice potatoes into 1/4 inch thick rounds.
- Place sliced potatoes on a plate and cover with saran wrap. Alternatively, you can simply cover it with a microwave safe cover if you don't want to use saran wrap.
- Cook in the microwave for 8 minutes or until fork through easily. *I do this in 2 batches**BE CAREFUL when you take the saran wrap off ( if you use it) as lots of steam is released and it's HOT!
- Melt butter in separate bowl in microwave safe bowl.
- Arrange half of the potatoes in bottom of dish and drizzle with butter.
- In a separate medium mixing bowl, mix 1/2 cup grated Swiss cheese, spinach, cottage cheese, garlic and egg. Then add ground beef. Mix well.
- Spread the spinach and ground beef mixture over the first layer of potatoes and butter.
- Cover with remaining potatoes, drizzle with remaining 2 1/2 tbsp butter.

GWEN'S OLD-FASHIONED POTATO-BEEF CASSEROLE

- Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish.
- In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat.
- Preheat the oven to 350 degrees F.
- Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions.

KITTENCAL'S SCALLOPED POTATO AND GROUND BEEF CASSEROLE

- In a skillet cook the ground beef with onion, bell pepper and chili flakes (if using) until no longer pink; drain fat over a colander.
- Return to pan and add in garlic, season salt and black pepper; cook stirring with a wooden spoon until the meat is lightly browned (I usually add in about 1-2 tablespoons bacon fat that I keep frozen in my freezer to the meat while browning for added flavor and it also helps to brown the meat) set aside.
- For the sauce; in a medium bowl mix together the undiluted soup with onion, milk, sour cream, Parmesan cheese, garlic powder, seasoned salt and black pepper to taste; mix well to combine.
- In a greased 13 x 9-inch baking dish or a large oval casserole dish, alternately layer the sliced potatoes on bottom of the baking dish, then soup mixture (I like to sprinkle grated cheddar cheese on top of the soup mixture) then the ground beef mixture on top.
- Since this is a large casserole I strongly suggest to place the baking dish on a jelly-roll sheet in case of any spills.
- Bake covered with foil for about 1 hour at 350 degrees F.

HAMBURGER POTATO CASSEROLE
With layers of tender potatoes and creamy ground beef, this Hamburger Potato Casserole is a hearty dinner the whole family will love. It's also make ahead friendly and great for bringing to new parents or grieving families.

- Preheat the oven to 350 degrees F. Spray the inside of a 9x13 baking dish with cooking spray and set aside.
- In a large skillet set over medium heat, add beef and onion and cook until no longer pink, 5-6 minutes. Remove from heat, drain off any excess grease, and stir in garlic, Worcestershire sauce, 1 teaspoon kosher salt, and ½ teaspoon pepper and cook for another 2 minutes.
- In a large mixing bowl, combine condensed soups, milk, sour cream, Italian seasoning, and ½ cup cheddar cheese.
- Spread ½ cup of the soup mixture in the bottom of the prepared baking dish.
- Arrange ⅓ of the sliced potatoes in a shingled layer in the baking dish. Top with half of the meat, then pour on half of the sauce, spreading it evenly. Repeat with remaining ingredients to create a second layer. Layer on the remaining potatoes, then sprinkle on the rest of the cheese.
- Cover the dish with aluminum foil, place on a rimmed baking sheet, and bake for 80 minutes. Remove the foil and bake for another 20 minutes, or until the potatoes are fork tender and cheese is melted.
- Allow to sit for 10 minutes, then garnish with parsley and serve.

- Spray a 13x9 baking dish with cooking spray and preheat oven to 350 degrees.
- Add ground beef and onion to a large skillet, season with salt and pepper then cook until ground beef is cooked though and crumbled. Drain fat then set aside.
- Cut potatoes into thin slices (less than 1/4 inch). Add one layer of potato slices to the bottom of the baking dish. Sprinkle potatoes with salt and pepper.
- Top potatoes with 1/4 of beef mixture. Top beef with 1/4 of shredded cheese. Repeat this process three more times.
- Combine condensed cheddar soup, evaporated milk, milk, salt and pepper then whisk until smooth. Pour mixture over potato/beef/cheese layers.
- Cover dish tightly with aluminum foil then bake at 350 degrees for one hour. Remove foil then continue baking for an additional 15-20 minutes or until potatoes are tender and dish is light golden brown and bubbly.
GROUND BEEF AND MASHED POTATO CASSEROLE

- Preheat the oven to 350 degrees F (175 degrees C). Spray the bottom and sides of a 9x13-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add yellow onion, bell peppers, celery, and 1/2 of the green onion; saute until vegetables are soft, about 5 minutes. Add garlic, tomato sauce, 1/2 of the parsley, paprika, garlic powder, onion powder, red pepper flakes, meat tenderizer, salt, and pepper; cook until fragrant, about 1 minute. Stir in Worcestershire sauce and browning sauce. Drain oil and remove from the heat.
- Line the prepared baking dish with refrigerated biscuits; divide them evenly and spread out to cover the pan, overlapping if necessary. Spread drained ground beef mixture evenly on top of the biscuits. Spread diced tomatoes over the beef, then evenly scatter frozen vegetables. Spread mashed potatoes over the top, and sprinkle with remaining green onions, Cheddar cheese, and remaining parsley. Cover with foil.
- Bake in the preheated oven for 25 to 30 minutes. Remove foil and bake until cheese is golden and melted, another 5 minutes. Serve immediately.
