LOW FAT PUMPKIN OATMEAL COOKIES

Slightly modified from Michelle Jones' recipe at "AllHomeadeCookies.com." They don't look like much, but are surprisingly tasty, not to mention low cal and full of "good for ya" ingredients!

Number Of Ingredients 11

1 cup pumpkin
2 egg whites
1 1/4 cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon clove
2 1/2 cups old fashioned oats
2 teaspoons canola oil
2 tablespoons stevia plus, powder
1/4 cup brown sugar substitute, twin sugar substitute

Steps:

  • Preheat oven to 350°F Line baking sheets with parchment, or spray with non-stick cooking spray.
  • In a large bowl, combine egg whites, oil, and pumpkin. In another bowl, mix flour, baking soda, spices, oats, sugar substitute, and stevia. Mix dry ingredients into the wet, until just moistened. (Batter will seem very dry.).
  • Drop cookies by tablespoonfuls onto prepared baking sheet. You can leave them in ball shapes, or flatten them a bit.
  • Bake at 350°F for 10-15 minutes.

1 cup all-purpose flour
1 cup quick-cooking oats
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 egg whites
1/3 cup corn syrup
1 teaspoon vanilla extract
1/3 cup raisins

Steps:

  • In a medium bowl, combine the first 10 ingredients; mix well. Stir in raisins (dough will be stiff). Drop by tablespoonfuls onto baking sheets that have been coated with cooking spray. Bake at 375° for 8-10 minutes or until lightly browned.

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Combine pumpkin, brown sugar, almond butter, egg and vanilla in a small bowl; set aside. Whisk oat flour, cinnamon, baking soda, baking powder, salt, nutmeg and ginger in a medium bowl. Stir the pumpkin mixture into the flour mixture. Fold in oats and raisins.
  • Drop 10 heaping tablespoonfuls of dough about 1 inch apart on the prepared baking sheet. Slightly flatten, if desired. Bake until lightly browned, about 10 minutes. Let cool on the pan for 3 minutes before transferring to a wire rack to cool completely, about 20 minutes. Repeat with the remaining dough.
