GRILLED ZUCCHINI BREAD WITH MASCARPONE AND BERRIES
Grill your zucchini bread for a summer dessert, topped with fresh berries.

Steps:
- Light a grill or preheat a grill pan and oil the grates. Lightly brush both sides of the zucchini bread slices with oil, sprinkle with sugar, and grill over moderately high heat, turning once, until dark brown grill marks form on both sides, about 2 minutes per side.
- Transfer the zucchini bread to plates and top with a dollop or two of mascarpone. Spoon the berries on top and serve.

Steps:
- Preheat grill for medium heat and lightly oil the grate.
- Whisk olive oil, sea salt, garlic, rosemary, and black pepper together in a bowl; brush evenly onto zucchini strips.
- Cook on preheated grill until brown, 5 to 7 minutes per side; transfer to a serving platter. Drizzle balsamic vinegar over zucchini to serve.

BLACKBERRY ZUCCHINI BREAD
Someone on the boards needed blackberry recipes and this is one that I plan to try this summer with my fresh blackberries.

Steps:
- Preheat oven to 350 degrees F.
- Combine all of the ingredients except the berries and zucchini.
- Fold in the drained berries and zucchini just until blended.
- Turn into a greased loaf pan and bake for 1 1/2 hours.
- Check after the first 45 minutes.
- If necessary, cover with aluminum foil to prevent browning too quickly.
ZUCCHINI BREAD WITH BLUEBERRIES
Made this up when I had a glut of both ingredients one summer. It's very moist and is best, I think, when served cold from the refrigerator. Makes 2 loaves so you can share with a friend. This is actually easier to mix by hand than with an electric mixer.

Steps:
- Add oil, sugar, zucchini, vanilla and almond extract to beaten eggs.
- Sift dry ingredients together and add to batter.
- Gently fold in blueberries.
- Pour into 2 greased and floured 8x4x2" loaf pans.
- Bake at 350° for 1 1/4 hours until inserted toothpick comes out cleanly.
- Cool on rack and store in plastic wrap in refrigerator.
