SWEET ONION VINAIGRETTE
When grilling up all those lovely summer veggies why not try adding a sweet onion vinaigrette for a nice change.

Steps:
- In food processor puree everything but the onion. Pour into a bowl and let stand at room temperature for 1 hour so that flavors blend.
- In mean time grill onion slices.
- Add onion slices to vinaigrette and serve at room temperature over grilled veggies.
HONEY VINAIGRETTE
Nice smooth honey vinaigrette with a balance of sweet. Very good my new favorite dressing. Best part is that all the ingredients are things you would normally have in your pantry. You can sub red wine vinegar for the apple cider Also I sub a dash of adobe sauce (that canned chipotles come in) for the ground chipotle powder.

Steps:
- Combine all ingredients, except oil in a blender (or with whisk by hand). Blend 10-20 seconds on low speed.
- Slowly drizzle olive oil into blender on low speed.
- Chill for at least an hour.

HONEY ONION VINAIGRETTE

Steps:
- 1. Place one Tablespoon of oil in saucepan and heat over medium heat. Add the chopped onions and cook stirring frequently until browned and caramelized, about 5 minutes.
- 2. Pour in cider vinegar and stir well to loosen bits on bottom of pan.
- 3. Pour entire contents into blender. Add remaining oil. Blend on high for two minutes until well blended. Refrigerate several hours before serving.
HONEY MUSTARD VINAIGRETTE
Steps:
- Rub the sides of a bowl with garlic, then discard. In bowl whisk together mustard, honey and vinegar. While whisking, slowly add olive oil. Season with salt and pepper.
HONEY DIJON VINAIGRETTE

- Whisk the vinegar, mustard and shallot together in a medium bowl. Gradually whisk in the honey, then the oil, until the dressing is emulsified. Season to taste with salt and pepper.

- Sauté onion in 1 tablespoon hot oil in a medium skillet over medium heat, stirring often, 8 minutes or until caramel colored. Add 2 tablespoons vinegar, stirring to loosen particles from bottom of skillet. Remove from heat; cool 5 minutes.
- Process onion mixture, honey, next 3 ingredients, and remaining oil and vinegar in a blender 30 seconds or until blended. Cover and chill 3 to 24 hours.
- Makes 1 1/3 cups.
- NOTE: Cook time equals chill time!
