Turkey Breast is perfect for the barbecue with a cranberry glaze.

5 pound turkey breast
olive oil
salt
pepper
2 cups or 1 14 oz can whole berry cranberry sauce
1/4 cup orange brandy (liqueur or orange juice)

Steps:

  • Heat your barbecue on high with all burners going and lid down. (Should get to 450-500 degrees)
  • Mist or rub olive oil all over the turkey breast, and season all over with salt and pepper
  • Once grill is hot enough, put oiled & seasoned turkey breast on the middle or, if you have a two burner grill, on one side.
  • Let turkey sear and turn, searing the other side so it's nice and brown all over.
  • Now turn the heat right under your turkey breast off, and put the lid down. If you have more than two burners, your turkey breast will be right in the middle with no heat under, but heat coming from both sides.
  • If you have two burners, you will need to rotate the turkey breast every 15 minutes or so to ensure even cooking. Do this quickly to keep the heat from escaping. Let the turkey breast roast on the BBQ for about 30 minutes and turn.
  • Meanwhile put the cranberry sauce and orange brandy or juice in a bowl and with a stick blender or electric mixer, puree until you have a nice thick glaze.
  • Brush turkey every 15 minutes or so with glaze, turning and brushing the other side. Turkey is finished roasting when an internal thermometer reads 170 degrees.
  • Brush with more glaze and let rest for 5 minutes before slicing.

Great grilled turkey! My grill is an old one that has a hinged top. I open all of the vents and prop the lid open about 2 to 3 inches with a stick...man does it get hot! Do not spill the juices and wine on the coals, as they are extremely flammable.

1 large onion, diced
1 (750 milliliter) bottle red wine
salt and pepper to taste
12 pounds whole turkey

Steps:

  • In a pot style grill, fill the bottom with a 5 pound bag of charcoals. Light the charcoal, and when ready, spread to cover the bottom of grill.
  • Wash the turkey down and stuff with onion. Rub the exterior down with salt and pepper.
  • Place the turkey in a deep aluminum roasting pan. Place the pan on the grill's grate. Pour wine over the turkey. Cover the top of the turkey with foil.
  • Cover the grill with the lid and open the vents. Grill the turkey for 60 to 90 minutes, or until meat is to your liking. Baste frequently. You might need to add water to the pan if the wine evaporates.

2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 celery ribs, thinly sliced
1 granny smith apple, cored but not peeled, cut into 2-inch matchsticks
1 tablespoon extra virgin olive oil
1 large shallot, diced
1 clove garlic, minced
1/2 cup Cranberry Sauce, recipe follows
1/4 cup ketchup
2 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 cups shredded turkey
12 sweet dinner rolls
One 1-pound bag fresh or frozen cranberries
1/2 cup maple syrup
1 cinnamon stick
1 orange, zested and juiced

Steps:

  • For the sauce: Whisk together the vinegar, mustard, oil, celery, apples, salt and pepper in a large bowl. Set aside while you make the sliders.
  • For the sliders: Heat the oil in a medium saucepan over medium-high heat. Add the shallots and cook until softened, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Stir in the cranberry sauce, ketchup, vinegar, Dijon, Worcestershire, salt and pepper. Bring to a boil, then reduce the heat to low and simmer until the sauce has thickened, about 5 minutes. Turn off the heat and carefully pour the sauce into a food processor or blender and process until smooth.
  • Place the turkey into a large bowl and pour the sauce over the turkey, stirring to coat evenly with the sauce. To serve, spoon a 1/4 cup of the turkey onto the bottom half of the rolls, garnish with 2 tablespoons of the slaw and top with the top half of the roll.
  • Combine the cranberries, maple syrup cinnamon, orange zest and orange juice in a medium saucepan. Bring the mixture to a boil. Lower the heat and simmer for 10 minutes, stirring occasionally with a wooden spoon. Turn the burner off. Using the back of your spoon, lightly mash the cranberries to desired consistency. Chill until ready to serve.

1 pound sliced leftover turkey meat
1 cup Cranberry BBQ Sauce, recipe follows
4 hoagie rolls, buttered
4 thick slices fontina
Fried Shallots, recipe follows
Two 14-ounce cans cranberry sauce
1 cup orange juice
1/2 teaspoon ground ginger
Pinch ground cinnamon
Pinch kosher salt
1 cup tomato puree
3 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon fresh ground black pepper
1/4 teaspoon hot sauce, such as Tabasco
4 cups canola oil
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper

4 shallots, peeled and thinly sliced

Steps:

  • Preheat the broiler.
  • Add the turkey and Cranberry BBQ Sauce to a large bowl and toss to coat. Pile the turkey on the rolls and top with the cheese. Place the sandwiches on a baking sheet and place under the broiler until the cheese melts and is bubbly. Top the sandwiches with the Fried Shallots and serve.
  • Add the cranberry sauce, juice, ground ginger, cinnamon and a pinch of salt to a small saucepan. Bring to a boil and reduce to a simmer. Cook uncovered, stirring often to incorporate flavors, about 15 minutes. Remove the saucepan from the heat and cool. Reserve 1 cup and store the rest for future use.
  • Combine the tomato puree, 1 cup of the cranberry sauce, vinegar, Worcestershire, mustard, 1/2 teaspoon salt, pepper and hot sauce in a medium saucepan. Bring to a boil, reduce the heat and simmer uncovered, stirring frequently until all ingredients are well incorporated, 8 to 10 minutes.
  • Heat the oil to 375 degrees F in a high-sided skillet or pan. Put the flour in a small bowl and sprinkle with salt and pepper. Add the shallots to the bowl and toss to coat, shaking off any excess flour. Fry the shallots in batches until golden brown, 2 to 3 minutes. Transfer the shallots to a paper-towel-lined-plate and sprinkle with salt.

Although not very traditional, grilling turkey is the best way of cooking it -- it comes out tender and juicy every time! The turkey drippings may be used to prepare a gravy by placing a metal pan under the turkey inside the roasting pan, and mixing in about 1/2 cup water, adding more water as necessary to prevent the drippings from scorching. Remove the pan about 30 minutes before the turkey is done cooking.

  • Prepare an outdoor grill for indirect medium-high heat.
