Shrimp and pineapple make a great combination on these Grilled Teriyaki Shrimp Kebobs. Such an easy recipe and great for summer grilling!

- Prepare grill.
- To prepare the kebabs, thread about 6 pieces of shrimp, 4 chunks of pineapple, and 1 wedge of red onion, alternating onto 8 skewers.
- Mix together teriyaki sauce and sesame seeds. Generously brush over shrimp kebabs. Grill for 6-8 minutes, flipping half way, or until the shrimp is completely cooked.

GRILLED TERIYAKI SHRIMP AND PINEAPPLE SKEWERS
These savory-sweet shrimp skewers are easy to make and cook in just a few minutes. They are perfect for summer weeknights or weekend dinner parties. Prep the sauce ahead of time for an even faster dinner. I prefer to use jumbo shrimp (21-25 per pound), however use what you have on hand.

Steps:
- Combine water, soy sauce, brown sugar, honey, garlic, and ginger in a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until sauce has reduced and thickened slightly, 8 to 10 minutes.
- Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread shrimp and pineapple alternately onto skewers and place on a platter.
- Arrange skewers on the hot grate. Grill 2 to 3 minutes per side, or until shrimp is opaque and cooked through. Turn grill to low heat and brush sauce on both sides of skewers. Transfer to a serving platter and sprinkle with cilantro and sesame seeds.

SHRIMP TERIYAKI KABOBS
You can add bell pepper or onion to these kabobs. I served them at a party so I used the 21-25 count shrimp and they were devoured. Can be an appetizer or a main dish, depending on your presentation.

Steps:
- In a large zip-lock bag combine teriyaki sauce, onion, garlic, sugar, zest and a splash of pineapple juice from the chunks.
- Add shrimp and toss to coat.
- I let them set in the fridge all day till I was ready to skewer them to grill.
- Be sure and soak your skewers if you are using wood!
- Place a pineapple chuck in the curve of each shrimp and place on a skewer, going through the "head" of the shrimp, the pineapple and then the "tail".
- I was able to get about 4 on each skewer.
- Grill about 2-3 minutes on each side or until shrimp is pink.
- You can baste with the marinade if you want but I did not.
- You can also broil this if you don't have a grill.
- I removed from the skewers for my guests but would probably serve on skewers if I had fancy ones.
GRILLED SHRIMP SKEWERS
Steps:
- Put the olive oil, garlic and chile flakes in a small skillet. Turn the heat to low and let the mixture heat for about 10 minutes; the oil should just barely simmer around the garlic in the last few minutes. Remove from the heat and cool slightly. Transfer to a blender, add the 1 tablespoon oregano and some salt and pepper, and blend until the garlic and oregano are finely chopped. Set aside half of the chile-garlic oil for serving.
- Heat the grill to high. Thread the shrimp onto skewers, about 4 or 5 shrimp per skewer, threading so that the skewers goes through the tail and thick end of each shrimp. Brush the shrimp with some of the chile-garlic oil and season with salt and pepper. Grill until lightly golden brown on both sides and opaque, 1 to 1 1/2 minutes per side. Transfer the skewers to a platter and immediately drizzle with some of the reserved chile-garlic oil (not the oil you used for brushing the raw shrimp). Garnish with oregano, and serve with more of the reserved oil.

- GLAZE:.
- Combine first 6 ingredients in a small saucepan over medium-high heat.
- Bring to a boil, and cook for 2 minutes.
- CORNSTARCH MIXTURE:.
- Combine cornstarch and water.
- Stir cornstarch mixture into soy sauce mixture.
- Bring to a boil; cook 1 minute.
- KEBABS:.
- Thread 2 shrimp, 2 scallops, 4 mushroom halves, and 3 green onion pieces alternately onto each of 8 (12-inch) skewers.
- Brush kebabs with oil, and place on a grill rack coated with cooking spray; cook for 3 minutes.
- Turn kebabs, and brush with half of soy sauce glaze; cook for 1 minute.
- Turn kebabs.
- Brush with remaining glaze; cook 1 minute or until seafood is done.
