1 (1 pound) pork tenderloin, trimmed
2 tablespoons olive oil
¼ teaspoon kosher salt
¼ teaspoon black pepper
3 tablespoons reduced-sodium soy sauce
2 tablespoons honey
1 tablespoon lime juice
1 tablespoon grated fresh ginger
4 cloves garlic, minced
1 teaspoon paprika
¼ teaspoon ground cumin
¼ teaspoon ground coriander
2 cups 1-inch chunks peeled fresh pineapple
1 cup red sweet pepper strips
6 tablespoons 2-inch pieces green onions
1 8.8-ounce pouch cooked whole-grain brown rice
¼ cup snipped fresh cilantro

Steps:

  • Preheat oven to 425 degrees F. Coat a 15x10-inch baking pan with cooking spray. Place meat in the prepared baking pan. Drizzle with 1 tablespoon of the oil and sprinkle with salt and pepper. Roast 10 minutes.
  • Meanwhile, in a small bowl combine the soy sauce, honey, lime juice, ginger, garlic, paprika, cumin and coriander. In a medium bowl combine the remaining 1 tablespoon oil, pineapple, sweet pepper, and green onions.
  • Arrange pineapple mixture around meat in pan; drizzle meat and pineapple mixture with soy mixture. Roast 15 minutes more or until meat registers 145 degrees F. Remove from oven. Let meat stand 3 minutes then slice.
  • Microwave rice according to package directions. Serve rice with meat and pineapple mixture. Top with cilantro.

1 boneless pork shoulder butt roast (3 to 4 pounds)
4 teaspoons liquid smoke
4 teaspoons soy sauce
2 unpeeled ripe bananas
1/2 cup water

Steps:

  • Place the roast on a 22x18-in. piece of heavy-duty foil; sprinkle with liquid smoke and soy sauce. Wash bananas and place at the base of each side of roast. Pull sides of foil up round meat; add water. Seal foil tightly; wrap again with another large piece of foil. Place in a shallow baking pan; refrigerate overnight, turning several times. , Preheat oven to 400°. Place foil-wrapped meat in a roasting pan; bake for 1 hour. Reduce heat to 325°; continue baking for 3-1/2 hours. Drain; discard bananas and liquid. Shred meat with a fork. Freeze option: Freeze cooled meat with some of the juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

8-10 cloves garlic, sliced in half lengthwise
2 tablespoons olive oil
1 large banana leaf, thawed if frozen & cut into 3 smaller pieces (see Recipe Notes)
2 tablespoons Hawaiian sea salt (see Recipe Notes)
1 1/2 tablespoons liquid smoke, divided
2 cups water or chicken stock

  • to 325 degrees F, ensuring a rack is positioned in the center of the oven.
  • Place the seared pork in the center of one of the pieces of banana leaf. Season with the Hawaiian sea salt & 1 tablespoon of the liquid smoke, using your hands to rub the salt & liquid smoke all over the surface of the pork. Arranged the seasoned pork in a small pile at the center of the banana leaf, folding the corners & edges of the banana leaf into the center to encase the pork. Carefully flip & set the wrapped pork seam side down on the second section of banana leaf. Repeat folding with the remaining pieces of banana leaf. Note: The banana leaf may split a little bit as you work, which is okay. Just work quickly & do your best to completely encase the pork in the banana leaf.

2 cups pineapple juice
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/2 cup packed brown sugar
1/2 cup sliced celery
1/2 cup cider vinegar
1/2 cup reduced-sodium soy sauce
1 boneless pork loin roast (3 to 4 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons canola oil
1/4 cup cornstarch
1/3 cup cold water

Steps:

  • Mix first six ingredients. Cut roast in half; sprinkle with salt and pepper. In a large skillet, heat oil over medium heat; brown roast on all sides., Transfer to a 5-qt. slow cooker. Pour pineapple mixture over top. Cook, covered, until a thermometer inserted in roast reads at least 145°, 3-4 hours., Remove roast from slow cooker; keep warm. Transfer cooking juices to a saucepan; bring to a boil. Mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir until thickened, 1-2 minutes. Serve with roast.

1 packet teriyaki marinade (recommended: McCormick Grill Mates)
1 tablespoon paprika
1 teaspoon fresh ground pepper
3 1/2 pounds pork shoulder
1/2 cup chicken broth
1/2 cup brown sugar
1/4 cup soy sauce
1 cup chili sauce
One 6-ounce can pineapple juice
1 medium onion, chopped
2 carrots, chopped
8 hamburger rolls
2 tablespoon canola oil
1 tablespoon ginger, chopped
2 teaspoons garlic, chopped

Steps:

  • In small bowl, combine teriyaki mix, paprika and pepper.
  • Coat the pork the with rub mixture, patting until all rub is used. Set aside.
  • In a bowl whisk together the chicken broth, brown sugar, soy sauce, chili sauce and pineapple juice. Set aside.
  • Put the chopped onions and carrots in a 5-quart slow cooker. Place the pork on top of the carrots and onions and pour half of the pineapple juice mixture over pork. Reserve remainder for Hawaiian sauce. Cover and cook on low for 7 to 8 hours. The meat should fall apart easily. Remove the roast from the slow cooker to a cutting board. Using 2 forks carefully pull the meat into shreds.
  • Hawaiian Sauce:
  • In a medium pot heat the oil over medium heat. Add garlic and ginger and saute until soft, about 2 minutes. Add the remaining pineapple juice mixture, bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and set aside.
  • Serve the pork on rolls drizzled with the Hawaiian sauce or on the side for dipping.

BRAISED HAWAIIAN PORK SHOULDER

1 tablespoon brown sugar
2 teaspoons red Hawaiian sea salt or kosher salt
2 teaspoons paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon freshly cracked black pepper
1 1/2 pounds pork shoulder or Boston pork butt
1/4 cup canola oil, divided
1 onion, chopped
1 (3-inch) piece ginger, sliced
4 cloves garlic, smashed
1 cup pineapple juice
2 cups chicken stock or broth

Steps:

  • Special Equipment: Butcher's twine
  • In a small bowl, combine the brown sugar, Hawaiian salt, paprika, cumin, coriander and black pepper.
  • Cut the pork into 4 equal portions, then tie each cut with some butcher's twine. Lightly sprinkle each piece with 1 1/2 teaspoons of the spice mixture.
  • Preheat the oven to 300 degrees F.
  • Heat 3 tablespoons canola oil in a large Dutch oven over medium heat. Sear each cut of pork on all sides, then transfer them to a plate. Add the remaining 1 tablespoon canola oil to the same pot along with the onions, ginger, and garlic. Saute for 2 minutes. Pour in the pineapple juice and chicken stock and return the pork to the pot. Cover put the pot into the oven to braise until the pork is fork tender, about for 2 1/2 hours.
  • Remove the pork from the Dutch oven and arrange the pieces on a baking sheet. Sprinkle each piece with the remaining 1/2 teaspoon of the spice mixture and put them under a low broiler until their tops are brown and crisp but not burned, about 2 minutes. Transfer the pork to a serving platter and serve with a drizzle of braising liquid.
  • Serve the pork with the Mashed Parsnips and Celery Root, if desired.

HAWAIIAN ROASTED PORK

2 boneless pork rump roasts, about 3 pounds each
3 tablespoons Hawaiian or coarse salt
2 tablespoons ground black pepper
1/2 cup guava jam, prepared
2 tablespoons Macadamia nut oil
1 teaspoon of water, plus 1/2 cup
10 banana leaves, wet
1 stalk sugar cane, split in half lengthwise
1 tablespoon all-natural liquid smoke flavoring

Steps:

  • Season the pork roasts all over with salt and pepper. Prepare an outdoor barbecue by soaking mesquite wood chips in water and adding to the coals for added flavor. Sear the pork on the hot grill to lock in the natural juices. Whisk together guava jam, oil, and 1 teaspoon of water. Season with fresh cracked pepper. Rub the pork with guava paste. Set 2 wide pieces of heavy-duty aluminum foil on a flat surface. Lay 5 banana leaves on each piece of foil in a crisscross pattern, then place the pork roasts on top. Fold the banana leaves up around the roasts to make a bundle. Insert a sugar cane spear through the banana leaves and into the pork to secure. Tent the foil over the roasts and seal 3 of the sides to form a pouch. Mix liquid smoke and remaining water together in a small bowl, pour it into the pouch. Close up the remaining edge of foil to lock in the moisture and flavor. Transfer back to the hot grill. Roast for 2 1/2 to 3 hours with the grill cover down. When the pork is cool enough to handle, shred using 2 forks.

1/2 cup sliced celery
1/2 cup cider vinegar

Steps:

  • Cut pork roast in half. Sprinkle with salt and pepper. In large skillet, brown roast in oil on all sides; drain. Place in 5 quart slow cooker.
  • In large bowl, combine pineapple juice, pineapple, brown sugar, celery, vinegar, and soy sauce. Pour over the roast.
  • Cover and cook on low for 3 to 3 1/2 hours or until meat thermometer reads 160.
  • Remove roast and keep warm. Let stand for 10 minutes before slicing. Meanwhile, strain cooking juices; transfer to large saucepan. Combine cornstarch and water until smooth; stir into cooking juices. Bring to a boil, cook and stir for 2 minutes or until thickened. Serve over pork.
  • NOTE: I like to use 2 forks and shred the pork roast instead of slicing it and return it to the cooking juices. I then serve it over rice. I also usually add the cornstarch & water mixture to the cooking juices in the crockpot instead of using a separate pan. I also sometimes add some extra pineapple chunks towards the end because my family really loves pineapple.

1/2 cup cider vinegar
1/2 cup firmly packed brown sugar
1/2 cup catsup
1/4 cup cornstarch
1/4 cup unsweetened pineapple juice
2 tablespoons soy sauce
2 lbs lean boneless pork, trimmed of excess fat and cut into 3/4 inch cubes (such as shoulder, butt or tenderloin)
1 egg, beaten
1/2 cup cornstarch
6 tablespoons salad oil
1 small green bell pepper, seeded and cut into 1-inch squares
1 small red bell pepper, seeded and cut into 1-inch squares
1 small onion, cut into wedges, layers separated
1/4 lb snow peas or 1/4 lb sugar snap pea, ends and strings removed

Steps:

  • Sweet-Sour Sauce: Stir together cider vinegar brown sugar, catsup; 1/4 cup cornstarch, unsweetened pineapple juice; and soy sauce. Set aside.
  • Dip pork cubes in beaten egg, drain briefly, and roll in cornstarch to coat lightly; shake off excess.
  • Place a wok or frying pan over high heat; when wok is hot,add 2 tablespoons of the oil. When oil is hot, add half the pork; stir-fry until evenly browned (5 to 7 minutes). Lift pork from wok and set aside. Repeat to brown remaining meat, adding more oil as needed.
  • Add remaining oil (about 2 tablespoons) to wok. Add bell peppers and onion; stir-fry until vegetables are tender crisp to bite (about 2 minutes). Add pea pods; then stir sauce and add. Stir until sauce boils and thickens; return pork to wok and stir until heated through.

  • Bake in the preheated oven until tenderloin is no longer pink in the center, 45 to 60 minutes. Spoon mandarin oranges and pineapple over tenderloin in the last 20 minutes of cooking. An instant-read thermometer inserted into the thickest part of pork should read at least 145 degrees F (63 degrees C).
