Slices of sweet potatoes grilled and slathered with a cilantro-lime dressing.

2 pounds sweet potatoes
3-4 tablespoons extra virgin olive oil
Kosher salt
Dressing
1/4 cup finely chopped fresh cilantro (including tender stems)
1 teaspoon of lime zest or lemon zest
2 tablespoons of fresh lime or lemon juice
1/4 cup extra virgin olive oil
Pinch of salt

Steps:

  • Prepare the grill, prep the sweet potatoes: Prepare your grill for hot, direct heat. While the grill is heating up, peel the sweet potatoes and slice lengthwise, or on a diagonal, into 1/4 inch-thick pieces. Coat the sweet potato slices with olive oil and lightly sprinkle with Kosher salt.
  • Make cilantro lime dressing: Combine all of the dressing ingredients into a small bowl.
  • Grill the sweet potatoes: Once the grill is hot, lay the sweet potato pieces down onto the grill grates. Cover the grill and cook until each side gets some grill marks, between 3-6 minutes for each side, depending on how hot your grill is.

One of our favorite things to make is Buddha bowls. Composed of four elements: a grain, vegetables, a protein, and a sauce; they're so simple, nutrient-dense, and very pretty to serve.

For the poblano tahini sauce:
1 1/2 cups roughly chopped poblano pepper
1 clove garlic, quartered
1/3 cup tahini (sesame paste)
3 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
Sea salt
Freshly ground black pepper
For the Buddha bowls:
1 cup quinoa, rice, or farro (or any grain of your choice)
2 large sweet potatoes (1 1/2 to 2 pounds), peeled and cut into 1-inch cubes
1 1/2 tablespoons coconut oil, melted
2 teaspoons pure maple syrup
1 teaspoon orange zest
Sea salt
1 (15-ounce) can chickpeas, drained, rinsed, and patted dry or 1 1/2 cups cooked chickpeas
1 tablespoon plus 2 teaspoons extra-virgin olive oil
1/2 teaspoon paprika
1/8 teaspoon ground cumin
1/8 teaspoon cayenne pepper
Freshly ground black pepper
4 cloves garlic, peeled
1/8 teaspoon crushed red pepper flakes
1 bunch Swiss chard, red, green, or rainbow, stemmed, leaves cut into 1-inch strips

Steps:

  • For the poblano tahini sauce:
  • In a blender or food processor, combine the poblano, garlic, tahini, lemon juice, olive oil, and 1/4 cup water and blend until smooth. (If the sauce is too thick, add water as needed to reach the desired consistency.) Season with 1/2 teaspoon salt and 1/8 teaspoon pepper. Set aside. (The dressing can be made ahead and stored in an airtight container in the refrigerator for up to 1 week.)
  • For the Buddha bowls:
  • Preheat the oven to 425°F.
  • In a medium saucepan, cook the quinoa, rice, or farro according to the directions on the package.
  • In a medium bowl, combine the sweet potatoes, melted coconut oil, maple syrup, orange zest, and 1/4 teaspoon salt. Mix well until the potatoes are evenly coated.
  • Spread the sweet potatoes on a rimmed baking sheet and roast for 20 minutes. Flip them with a spatula and roast until the potatoes are tender and beginning to brown, an additional 10 to 15 minutes.
  • Meanwhile, in a small bowl, combine the chickpeas, 2 teaspoons of the olive oil, the paprika, cumin, cayenne, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Mix well until the chickpeas are thoroughly coated.
  • Spread the chickpeas on a rimmed baking sheet and roast with the sweet potatoes until golden brown, 15 to 20 minutes, stirring them once halfway through.
  • In a large skillet over medium-high heat, heat the remaining 1 tablespoon of the olive oil until shimmering. Add the garlic and red pepper flakes. Cook until the garlic is fragrant, 3 to 4 minutes. Add the chard, cover, and cook, stirring occasionally, until the chard begins to wilt, 2 to 3 minutes. Uncover, add 1/4 teaspoon salt and 1/8 teaspoon pepper, and cook, stirring frequently, until the chard is completely wilted and cooked through, an additional 1 to 2 minutes. Discard the garlic cloves.
  • Put 1/2 cup of the cooked grain in the bottom of each of four serving bowls. Top each bowl with equal portions of the roasted sweet potatoes, roasted chickpeas, and sautéed chard. Drizzle with the poblano tahini sauce and serve with extra sauce passed separately.

I don't really like the traditional sweet potato casserole, but my son loves sweet potatoes, so I try to come up with different ways to cook them. This spring I tried grilling them. These are now a favorite of mine and my sons.

2 large sweet potatoes, cut into 1-inch cubes
2 tablespoons butter
2 tablespoons brown sugar
1 teaspoon ground cumin
¼ teaspoon cayenne pepper, or more to taste
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Divide the sweet potato cubes in half, and place each half in the center of a rectangle of aluminum foil. Top each portion with about half of the butter. Sprinkle about half of the brown sugar, cumin, and cayenne pepper over each portion. Season with salt and pepper. Fold the corners of the aluminum foil together and seal to form a pouch around each portion.
  • Cook on the preheated grill, turning pouches every 10 minutes, until the potatoes are tender and cooked through, 20 to 30 minutes.

Grilled Sweet Potatoes with Rice and Peas image

Fragrant with allspice, Scotch-bonnet peppers, and fresh ginger, these grilled sweet potatoes take their hot, smoky flavor cues from Jamaican jerk. But unlike chicken or pork, the spuds (sliced into half-inch planks) need just 10 minutes over heat to attain melt-in-your-mouth tenderness. Spoon on a bright mango salsa, and serve them with our take on Jamaican rice and peas, simmered in coconut milk and seasoned with the same fragrant spice blend as the potatoes. It's a meal full of good vibrations.

2 bunches scallions, coarsely chopped (about 2 cups)
2 small Scotch-bonnet or habanero chiles, stemmed and seeded
2 tablespoons soy sauce
2 tablespoons dark brown sugar
4 teaspoons ground allspice
1 (2-inch) piece fresh ginger, peeled and coarsely chopped (3 tablespoons)
2 teaspoons dried thyme
Kosher salt and freshly ground pepper
1/3 cup plus 2 tablespoons extra-virgin olive oil
1 1/2 cups long-grain white rice
1 can (15 ounces) dark kidney beans, rinsed and drained
1 can (14 ounces) unsweetened coconut milk
Vegetable oil, for grill
4 unpeeled medium sweet potatoes (about 2 1/2 pounds total), sliced lengthwise into 1/2-inch planks
Mango-Basil Salsa, for serving

Steps:

  • In a food processor, pulse scallions, chiles, allspice, ginger, thyme, soy sauce, brown sugar, 2 teaspoons salt, and 1/2 teaspoon pepper until finely chopped. With processor running, pour in 1/3 cup olive oil; blend until combined.
  • In a small saucepan, stir together rice, beans, coconut milk, 1 tablespoon scallion mixture, 1/2 cup water, and 1/2 teaspoon salt. Bring to a simmer over medium-high heat, then reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed, about 15 minutes.
  • Meanwhile, preheat grill to medium-high; scrub grates, then lightly brush with vegetable oil. Brush sweet potatoes with remaining 2 tablespoons olive oil and 2 tablespoons of jerk paste. Grill, covered, flipping and basting with about 2 tablespoons more jerk paste every 2 1/2 minutes, until tender and nicely charred, about 10 minutes. Serve sweet potatoes with rice and salsa.
