1 cup loosely packed fresh cilantro
1 small onion, cut into quarters
2 cloves garlic, cut in half
1 jalapeño chile, cut in half, seeded
2 teaspoons lime juice
2 teaspoons oil
1 1/4 teaspoons salt
2 teaspoons ground cumin
1/2 teaspoon pepper
4 beef sirloin steaks, 1 inch thick (about 1 1/2 lb)

Steps:

  • Heat gas or charcoal grill. In food processor, place cilantro, onion, garlic, chile, lime juice, oil and 1/4 teaspoon of the salt. Cover; process until finely chopped. Blend in 2 to 3 teaspoons water to make sauce thinner, if desired. Transfer to small bowl; set aside until serving time.
  • In small bowl, combine cumin, pepper and remaining 1 teaspoon salt; rub evenly over steaks. Place steaks on grill over medium heat. Cover grill; cook 7 to 10 minutes for medium-rare (145°F), turning once halfway through cooking.
  • Serve 2 tablespoons chimichurri over each steak.

Steps:

  • GRILL DIRECTIONS: Heat grill. In food processor bowl with metal blade or blender container, combine oil and vinegar. Add all remaining chimichurri sauce ingredients; process with on/off pulses until pureed. Spoon into small serving bowl.
  • When ready to grill, place steaks on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 18 to 22 minutes or until of desired doneness, turning once.
  • Meanwhile, place bell peppers skin side down on grill; cook 7 to 10 minutes or until tender, turning occasionally. Cut steaks into 8 pieces. Drizzle sauce over steaks. Serve bell peppers with steaks.

½ tsp oregano , fresh or dried
2 garlic cloves
1 shallot , chopped
½ tsp chilli flakes
2 ½ tbsp olive oil
juice ½ lemon
2 tsp red wine vinegar
2 x 125g rib-eye or sirloin steaks
fries and salad , to serve

Steps:

  • To make the chimichurri, blitz the parsley, oregano, garlic, shallot and chilli flakes in a food processor or chop very finely by hand. Add 2 tbsp of the olive oil, the lemon juice, vinegar and some seasoning, and pulse to combine everything to a saucy consistency.
  • Rub the remaining oil and a little seasoning into the steaks. Heat a griddle or frying pan and cook the steaks for 2-3 mins on each side or until done to your liking. Rest for a few mins, then spoon over the sauce and serve with fries and salad.

1/2 cup olive oil
2 Tablespoons golden balsamic vinegar
1 cup fresh mint leaves
1 cup fresh basil leaves
2 cloves garlic, minced
Pinch or two of salt
Pinch of red pepper flakes
1 1/2 lbs. beef sirloin, cut into 1 inch cubes
1/4 cup olive oil
1 Tablespoon dried oregano
2 Tablespoons fresh lemon juice
3 cloves garlic, minced

Steps:

  • Preheat the grill to medium high heat (about 400 degrees).
  • In a bowl, combine the olive oil, oregano, lemon juice, and garlic. Season the beef generously with salt and pepper then add it to the olive oil mixture, making sure it is well coated. Cover and refrigerate for at least 30 minutes or up to 3 hours.
  • Thread the beef onto skewers (this should make 4-6 skewers depending on the size).
  • Place the skewers on the grill, cover, and cook until the meat is seared on each side, about 2 minutes a side.
  • Combine the olive oil, vinegar, mint, basil, and garlic in a food processor and pulse until the herbs are in small pieces. Season with salt and red pepper flakes, to taste. Chimichurri can be made in advance and refrigerated until ready to use.

Steps:

  • Prepare the chimichurri. Combine the parsley and garlic in a food processor and process until finely chopped. Correct the seasoning, adding salt, pepper, or vinegar as necessary; the mixture should be highly seasoned. Place half the chimichurri in a bowl or crock for serving; pour the remainder over the meat. Cover and let marinate in the refrigerator, 30 minutes, turning several times.
  • Preheat the grill to high (or broiler).
  • When ready to cook, oil the grill grate. Drain the beef and place it on the hot grate. Grill, turning with tongs, until cooked to taste, about 10 minutes per side for medium-rare. Serve with the remaining chimichurri sauce.

It's easy to prepare, and any leftover sauce is excellent on chicken or a burger." Note- the sauce may be made up to one week ahead of time and kept in the refrigerator in a sealed container. Just bring to room temperature before serving. I have this copied here for safe keeping but haven't tried it yet.

3 lbs steak, London broil and rib eye work well
1/2 cup red wine vinegar, plus
3 tablespoons red wine vinegar
1/2 cup extra virgin olive oil, plus

4 cups flat-leaf Italian parsley, stems removed, 1 bunch
4 garlic cloves, peeled
1 shallot, peeled and chopped
1 tablespoon lemon juice
1 teaspoon paprika, preferably smoked

fresh ground black pepper, 5 grindings from a mill

Steps:

  • With a sharp knife, score the meat in a crisscross pattern, 6-8 times per side.
  • The cuts should be shallow, no more than 1/4 inch deep.
  • Place meat in a 9x13-inch baking dish and drizzle 3 tablespoons of red wine vinegar and 3 tablespoons of extra-virgin olive oil over the meat and let this marinate while you prepare the sauce.
  • To prepare the sauce, combine remaining vinegar and oil, parsley, garlic, shallot, lemon juice, paprika, salt, and the pepper in a blender or food processor and puree until smooth.
  • Heat grill or grill pan over medium-high heat until hot.
  • Pat steaks dry with paper towels and then sprinkle with salt and pepper to taste and cook 4-5 minutes per side for medium-rare.
  • Let steaks rest for 5 minutes, then cut them into thin slices on an angle, across the grain.
  • Drizzle with the chimichurri sauce on top and serve.

5 minced garlic cloves
1 bunch flat leaf parsley, finely chopped
2 Tablespoons fresh thyme, finely chopped
2 lemons, juiced
3/4 cup olive oil
1/2 cup Balsamic vinegar

1 teaspoon black pepper
3 Tablespoons onion, finely chopped
1/4 teaspoon red chile flake, optional

Steps:

  • Combine all the ingredients for the Chimichurri sauce in bowl. (See note in the article under Easy Steak Marinade about using a food processor to save time)
  • Place steaks in a shallow dish and pour 1-2 cups of Chimichurri over steaks.
  • Allow steaks to marinate a minimum of 2 hours through overnight.
  • Heat a charcoal grill and adjust racks to 4 inches above the coals. Grill 10 minutes on one side and 5 minutes on the other for medium rare.
  • Baste with Chimmichurri several times during grilling for a great flavor.
  • Remove from grill and allow to rest for a few minutes before slicing.

1/4 teaspoon smoked hot paprika
2 cups lightly packed parsley leaves

1 clove garlic

1 teaspoon coarse salt
2 teaspoons olive oil
1 1/2 pounds sirloin steak, 1 1/4 inches thick

Steps:

  • For Sauce: In a small skillet set over medium-high heat, heat oil and paprika until oil shimmers and paprika is fragrant, about 2 to 3 minutes. Remove skillet from heat and let cool.
  • In the bowl of a food processor, combine parsley, oregano, red onion, garlic, and chili pepper flakes. Pulse to chop. Add vinegar and salt; pulse, and slowly drizzle in cooled oil with machine running. Chop until sauce is emulsified and chunky.
  • For Steak: Heat the olive oil in a well-seasoned cast iron skillet over medium-high heat. Season steak season well with salt and pepper. Place steak in skillet on the fatty edge and cook until the fat has rendered into the pan and the edge is brown, about 3 minutes. Turn and cook the other edge for 2 minutes. Now cook the wide sides of the steak until nicely browned, about 6 minutes per side for medium-rare. Remove from skillet and let rest 10 minutes.
  • Slice steak thinly, and serve with Chimichurri sauce.

2 10-to-12-ounce sirloin steaks
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
For the sauce:
1/2 cup fresh cilantro leaves, roughly chopped
1/2 cup fresh parsley leaves, roughly chopped
1 tablespoon finely chopped onion
Juice of 1/2 lemon
2 teaspoons white wine vinegar
1 clove garlic, minced or pressed through a garlic press
Pinch of red pepper flakes

Steps:

  • Prepare the steak: Set the steaks on a cutting board and slice them in half crosswise. Using your knife, round out the clean-cut edges so the sides look softer. Use paper towels to pat the steaks dry, then season all over with 1 teaspoon salt and 1/2 teaspoon pepper. Set aside 15 to 30 minutes to bring to room temperature.
  • Meanwhile, make the chimichurri sauce: Place the cilantro, parsley, onion, lemon juice, vinegar, garlic, red pepper flakes, 1 teaspoon salt and 1/4 teaspoon pepper in the bowl of a food processor and pulse until roughly chopped. Slowly pour in the olive oil and process until the chimichurri is semi-smooth, about 4 seconds. Transfer to a small bowl and set aside.
  • Heat a grill or grill pan over medium-high heat. Brush both sides of each steak with the vegetable oil, then cook, undisturbed, until marked, 3 to 5 minutes. Flip and cook until a thermometer registers 125 degrees F for medium rare, 3 to 5 more minutes. Transfer to plates and let rest 5 minutes. Serve with the chimichurri sauce.

Slowly add olive oil while pulsing. Stop and scrape down the sides once more. Stop pulsing when herbs are finely chopped. Stir in salt, pepper, and red pepper flakes.
  • Prep the veggies: Cut off ends of onion and cut into quarters, place into large bowl. Remove core and seeds from bell peppers, cut each bell pepper into 8 pieces, transfer to bowl. Slice summer squash into 1/2 inch rounds, transfer to bowl. Add grape tomatoes and HALF of the chimichurri sauce to the bowl, toss to combine.
  • Assemble skewers: Thread steak (accordion-style) and veggies onto 10-inch skewers in desired order. 2 steak pieces per skewer is recommended.
