These melt-in-your-mouth cookies are one of my mom's specialties. Made with cream cheese and butter, they're very rich...and the pecans add wonderful flavor. They're great with hot cup of coffee or a tall glass of milk. -Jeanne Voss Anaheim Hills, California

Number Of Ingredients 8

1/2 cup butter, softened
4 ounces cream cheese, softened
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1 tablespoon sugar
Dash salt
1 cup finely chopped pecans
Confectioners' sugar

Steps:

  • Preheat oven to 375°. In a small bowl, cream butter and cream cheese until light and fluffy, 3-4 minutes. Beat in vanilla. Combine flour, sugar and salt; gradually beat into creamed mixture. Stir in pecans (dough will be crumbly)., Shape tablespoonfuls into 2-in. logs. Place 2 in. apart on ungreased baking sheets. Bake until lightly browned, 12-14 minutes. Carefully roll warm cookies in confectioners' sugar. Cool on wire racks.

1 package (8 ounces) cream cheese (softened)
3/4 cup butter (softened)
1 cup granulated sugar
1 1/2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
3/4 cup chopped pecans
1 cup raspberry (or strawberry) preserves

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Line baking sheet(s) with parchment paper or a silicone baking mat.
  • Beat the butter and cream cheese in a mixing bowl until light. Add the sugar and beat at medium speed until well blended. Beat in the vanilla.
  • Add flour and baking soda; mix well.
  • Fold in the chopped pecans; mix well; chill dough for 30 minutes.
  • Shape the chilled dough into 1-inch balls and place on the prepared baking sheets.
  • Make an indentation in the center of each ball with a thumb or finger. Fill each indentation with about 1 teaspoon of the preserves.
  • Bake for 8 to 12 minutes, or until lightly browned. Remove to cooling racks to cool completely. Makes about 4 to 5 dozen. Tips and Variations

1 cup butter, softened
1 (3 ounce) package cream cheese, softened
1 cup white sugar
1 egg yolk
½ teaspoon vanilla extract
2 ½ cups all-purpose flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheets.
  • In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy. Beat in egg yolk and vanilla. Stir in flour until well blended. Drop dough by spoonfuls or use a cookie press to place onto prepared cookie sheets. If using floral cookie press design, make an indentation in the center with a thimble, fill with preserves, or press candy into center.
  • Bake for 15 minutes in preheated oven. Cookies should be pale.

1 (18.25 ounce) package yellow cake mix
½ cup butter, melted
1 egg, beaten
1 (8 ounce) package cream cheese, softened
2 eggs, beaten
3 ½ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 15 x 10 inch sheet pan.
  • Mix together cake mix, butter or margarine, and 1 egg. Press mixture into pan.
  • In a small bowl, mix together cream cheese, 2 eggs, and confectioners' sugar. Pour mixture on top of cake mixture.
  • Bake for 15 minutes. Reduce temperature to 300 degrees F (150 degrees C), and bake for 30 to 35 minutes. Cool, and cut into squares.

4 ounces cream cheese, softened
1 teaspoon vanilla
1 3/4 cups flour
1/4 cup sugar (or more or less depending on how sweet you preper your cookies)
1 dash salt
1 cup finely chopped pecans
icing sugar, for rolling

Steps:

  • Set oven to 375 degrees.
  • In a mixing bowl, cream butter and cream cheese.
  • Beat in vanilla.
  • Combine the flour, sugar and salt; gradually add to creamed mixture.
  • Stir in pecans (dough will be crumbly).
  • Shape by tablespoonfuls into 2-inch logs.
  • Place 2-inches apart on an ungreased cookie sheet.
  • Bake for 12-14 minutes, or until just lightly browned.
  • Remove the warm cookies from baking sheet; roll in icing sugar to coat.
  • Cool on wire racks.
