We always have plenty of pork sausage around, so when I need a quick supper, I use this handy recipe. The colorful vegetables give the hash a bold look to match its flavor. -Virginia Krites, Cridersville, Ohio

Number Of Ingredients 7

1 pound bulk pork sausage
1 medium onion, chopped
2 medium carrots, grated
1 medium green pepper, chopped
3 cups diced cooked potatoes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large cast-iron or other heavy skillet, cook the sausage over medium heat until no longer pink; drain. Add the onion, carrots and green pepper; cook until tender. Stir in the potatoes, salt and pepper. Reduce heat; cook and stir until lightly browned and heated through, about 20 minutes.

1 Lb Country Style Ground Pork Sausage
4 Large Yukon Gold Potatoes - cut to cubes equal in size
2-3 Tablespoons Oil
Salt/Pepper - to taste
Favorite Seasoning Blend - to taste

Steps:

  • Brown and crumble sausage in large bottom pot or pan. I use a potato masher to achieve small crumbles. Cook to desired crispness. Remove sausage and set aside. Leave oil in pan.
  • Add potatoes to pan and fry over medium/high heat. Add additional oil as needed. Toss and fry until potatoes are browned and tender.
  • Add sausage back to pan. Season with salt, pepper and seasoning blend. Toss and serve.

This Sausage Potato Hash recipe is perfect for breakfast or brunch! Served with fried eggs, it's a hearty, comforting, delicious meal and super simple to make.

2 tablespoon olive oil
3 large potatoes (peeled and cubed)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1 small onion (chopped)
3/4 pound Italian sausage (mild, casings removed (3 links))
1/2 red bell pepper (chopped)
1/2 green bell pepper (chopped)
3 cloves garlic (minced)
1/4 teaspoon red pepper flakes

Steps:

  • Add the olive oil to a large skillet and heat over medium heat. Add the cubed potatoes, season with salt and pepper and cook for 7 to 10 minutes, until they're about half way cooked through, stirring occasionally.
  • Add the onion and cook for another 3 minutes, stirring occasionally.
  • Add the sausage, bell peppers, garlic and red pepper flakes to the skillet and stir. Reduce the heat, and continue cooking until potatoes are cooked through, another 10 minutes. You can also cover the skillet, this will cook the potatoes a bit faster.
  • Taste for seasoning and adjust with salt and pepper if needed. Serve with fried eggs.

6 potatoes, boiled
100 g bacon
1 small onion, chopped
200 g sausage (your favourite kind)
3 eggs
white pepper

Steps:

  • Peel the potatoes (if necessary) and chop into cubes. Chop the bacon and sausage.
  • Fry bacon and then onions in the bacon fat.
  • Add chopped sausage and fry until it's browned slightly, move to the side of the pan.
  • Fry the potatoes in the middle of the pan until brown, add white pepper. Mix everything.
  • Add in eggs, fry without stirring until the whites have solidified.
  • Serve with pickles.

This is an easy midweek supper dish that can be made from start to finish in only 30 minutes. Bacon is quick to cook and packed with flavour. It is easier to cut up bacon using scissors instead of a knife.

3 tablespoons olive oil
1 lb potato, peeled and diced
1 garlic clove, crushed
8 slices bacon, roughly chopped
6 scallions, sliced
1 tablespoon coarse grain mustard
salt & freshly ground black pepper
4 eggs

Steps:

  • Heat the oil in a large frying pan and cook the potatoes over a low heat for 10-15 minutes, turning occasionally.
  • Add the garlic and bacon and increase the heat. Fry for 5-6 minutes, tossing occasionally, until the potatoes and bacon are golden.
  • Add the onions and cook for 1 minute.
  • Stir in the mustard and plenty of salt and pepper. Divide between four plates and keep warm.
  • Half fill a small frying pan with water and bring to a simmer. Carefully break in the eggs and allow the water to come back to the boil. Simmer for 1 minute, then remove each egg using a slotted spoon.
  • Top each plate of hash with a poached egg, sprinkle with black pepper and serve immediately.

  • Boil the potatoes for 5 mins, drain them.
  • Heat the oil in a large frying pan and fry the onions till soft.
  • Add the potatoes and continue cooking till the potatoes are brown.
  • Add the sausage and mustard cook for 5 minutes.
  • Make 4 wells in the mixture and crack an egg into each one, cover the pan with a lid and cook till the eggs are set.
  • Serve with crusty bread.
