This recipe combines ground beef with cheese and mixed vegetables and covered with a crispy, buttermilk crust. It takes a while to prepare, but it's worth it.

2 pounds ground beef
1 onion, chopped
¾ tablespoon salt
¼ tablespoon ground black pepper
¼ tablespoon chili powder
1 (28 ounce) can whole peeled tomatoes
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can peas
1 (15 ounce) can green beans, drained
5 cups buttermilk baking mix
1 ⅓ cups milk
5 potatoes, cooked and mashed
8 ounces sliced process cheese food

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large saucepan over medium high heat, brown the ground beef for 5 to 10 minutes; drain excess fat. Add the onion, salt, ground black pepper, chili powder, tomatoes, corn, peas and green beans. Reduce heat to low and let simmer.
  • Meanwhile, in a large bowl, combine the buttermilk baking mix and the milk. Mix well to form a dough. Split in half and roll dough out to line the bottom of a 9x13 inch baking dish. Make sure dough covers the bottom and sides of the dish.
  • After the beef mixture has simmered for about 15 to 20 minutes, pour into the baking dish over the dough. Spoon the mashed potatoes over the beef mixture, spreading evenly. Layer the cheese over the potatoes. Roll out the other half of the dough to fit over the top. Trim the edges and seal .
  • Bake at 450 degrees F (230 degrees C) for 25 to 35 minutes, or until golden brown.

1/2 teaspoon salt

1 egg, beaten
1/4 cup milk
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce

Steps:

  • Cook ground beef, green pepper, and onion in a large skillet until meat is browned, stirring to crumble meat; drain.
  • Add 1/2 cup tomato sauce and next 5 ingredients, stirring well.
  • Spoon mixture into prepared crust.
  • Combine egg and next 4 ingredients, stirring well; spoon evenly over meat mixture.
  • Bake at 375 degrees for 30 minutes.
  • Combine remaining tomato sauce and chili sauce; serve with pie.

1 double crust pie crust
1/2 cup chopped onion
1 lb hamburger
1 (8 ounce) can tomato sauce
1 (4 ounce) can mushrooms (chopped slightly)
1 tablespoon dried parsley
1/4 teaspoon dry oregano
1/4 teaspoon salt
1/8 teaspoon pepper
3 eggs
6 slices mild cheddar cheese or 6 slices American cheese

Steps:

  • Make a two-crust pie and put in a pie plate.
  • In a skillet saute the onion and cook till partially tender.
  • Add the hamburg and cook till it is done; drain off fat.
  • Add the tomato sauce, parsley, oregano, mushrooms, salt, and pepper.
  • Separate one of the eggs and set the yolk aside; beat the remaining eggs and pour half of this over the bottom pie shell.
  • Spoon the meat mixture into the shell.
  • Arrange the cheese slices over this.
  • Spread with remaining egg mixture.
  • Put on the top crust and make slits.
  • Loosely cover the edges with strips of foil to prevent edges from getting too brown.
  • Bake 350 degree oven for 20 minutes.
  • Cover center of pie loosely with foil and bake 20 minutes longer.
  • Let stand for 10 minutes before serving.

I have been making this pie crust since the recipe came out in Bon Appetit in l99l. This recipe makes up enough for 2 crust pie and is definately very forgiving in the handling of it!!!

2 1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1/2 cup butter, diced (chilled and unsalted)
1/2 cup vegetable shortening, chilled
1/4 cup buttermilk, plus
2 tablespoons buttermilk

Steps:

  • Combine flour, sugar and salt in large bowl. Add butter and shortening. Cut in using hands or pastry blender until mixture resembles coarse meal.
  • Add buttermilk and stir with fork until moist clumps form. (Dough can also be prepared in processor. Using on/off turns, cut butter and shortening into dry ingredients until coarse meal forms. Add buttermilk and process just until moist clumps form.) Press together to form dough.
  • Divide dough in half. Gather dough into balls; flatten into disks. Wrap separately and chill 1 hour.
  • Note: Can be prepared ahead of time. Refrigerate 1 week or freeze 1 month. Let dough stand at room temperature to soften slightly before using.

1 pound ground beef
1 medium onion, finely chopped
1 garlic clove, minced
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups shredded process cheese (Velveeta)
1/2 cup chopped dill pickles
1/3 cup dill pickle juice
1/3 cup 2% milk
Optional: chopped avocado, tomato, lettuce, and bacon

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. 1/4 cup finely chopped onions or 1 teaspoon onion powder
1/3 cup chopped dill pickle slices
2 tablespoons ketchup
1 teaspoon prepared mustard
2 tablespoons flour
2 tablespoons pickle juice
2 tablespoons milk
2 cups shredded American cheese, divided

Steps:

  • Preheat oven to 375°.
  • Unroll crescent rolls and press into the bottom and up the sides of an 8 inch pie pan.
  • Cook ground beef in a skillet until browned. Drain well.
  • Stir in onion, chopped pickle, ketchup and mustard.
