2 oranges - cut into quarters
100 g white sugar
4 allspice berries
2 half a cinnamon stick
½ star anise pod
250 ml brandy
Orange and apple slices, cinammon sticks

Steps:

  • Gather all the ingredients and put them in the pan.
  • Cover with a lid and heat gently, bringing the cider to a simmer.
  • Cook for half an hour.
  • Serve in heat-proof glasses with slices of orange & apple and a piece of cinnamon stick.

1 1/2 cups Applejack (optional)

Steps:

  • Mix first 10 ingredients in large saucepan. Bring to boil. Reduce heat to medium-low and simmer mixture 30 minutes to blend flavors. Strain mulled cider into mugs. Serve cider, passing applejack brandy separately, if desired.

1 tbsp cardamom pods, crushed open

1 large orange, zest pared into strips
1 apple, sliced, to serve (optional)

Steps:

  • Pour the cider and apple juice into a large saucepan. Add the remaining ingredients, bring to a very low simmer and cook gently for 30 mins. Turn off the heat and leave to infuse for 3 hrs. 1 to 1-1/2 cups brandy, optional

Steps:

  • Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag.
