CLASSIC LASAGNA

Classic but elevated, this is the lasagna you'll want to make for big family dinners and special occasions.

1 medium yellow onion, roughly chopped
5 garlic cloves, roughly chopped
2 medium carrots, roughly chopped
1 stalk celery, roughly chopped
3 tablespoons olive oil, divided
1½ pounds Italian sausage (bulk or removed from casing)
¾ cup dry red wine
1 (28 oz.) can crushed tomatoes
½ cup heavy cream
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
2 teaspoons sugar
1½ teaspoons dried thyme
2 bay leaves
1 (15 oz.) container whole milk ricotta (about 1¾ cups)
3 oz. cream cheese
1 large egg
1 garlic clove, roughly chopped
¾ cup grated Parmigiano-Reggiano
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
½ cup roughly chopped fresh basil
12 oven ready (no boil) lasagna noodles (such as Barilla)
16 ounces shredded whole milk mozzarella cheese
¼ cup grated Parmigiano-Reggiano

Steps:

  • Place the onions, garlic, carrot and celery in the bowl of a food processor fitted with the metal blade; pulse until finely minced but not puréed.
  • Heat 2 tablespoons of the olive oil in a large pot over medium-high heat. Add the sausage into the pan and cook, stirring occasionally and breaking the sausage into small pieces, until slightly browned but not cooked all the way through, about 5 minutes. Using a slotted spoon, transfer the partially cooked sausage to a plate. Set aside.
  • Add the remaining tablespoon olive oil to the pan, reduce the heat to medium, and add the minced vegetables. Cook, stirring frequently, until the vegetables are very soft, 6 to 8 minutes. Do not brown; reduce the heat if necessary.
  • Add the wine; continue cooking, stirring to scrape any brown bits from the bottom of the pan, until the wine is mostly absorbed by the vegetables, a few minutes.
  • Add the tomatoes, cream, salt, pepper, sugar, thyme and bay leaves and bring to a boil. Reduce the heat and simmer, covered, until the sauce is thickened, about 20 minutes.
  • Meanwhile, transfer the sausage to a cutting board and chop into smaller pieces (big chunks don't work well in lasagna).
  • Add the sausage back to the pan and continue simmering, covered, until the sausage is fully cooked and the flavors meld together, about 10 minutes. Taste and adjust seasoning if necessary. Fish out the bay leaves and discard.
  • Combine the ricotta, cream cheese, egg, garlic, Parmigiano-Reggiano, salt and pepper in the bowl of a food processor fitted with a metal blade. Process until evenly combined. Add the basil and pulse until finely chopped.
  • Preheat the oven to 375°F.
  • Spread about 1½ cups of sauce in the bottom of a 13x9x2-inch baking dish. Arrange 3 noodles over the sauce. Dollop a third of the ricotta filling over the noodles, then spread evenly to cover. Sprinkle with ¾ cup of the mozzarella cheese. Repeat the layering of sauce, noodles, ricotta filling and mozzarella 2 more times. Top with the remaining 3 noodles. Spoon the remaining sauce over the noodles, then sprinkle with the remaining mozzarella and ¼ cup Parmigiano-Reggiano.
  • Spray a large piece of foil with nonstick cooking spray. Cover the lasagna tightly with the foil, sprayed side down. Bake for 40 minutes. Carefully uncover and increase the oven temperature to 400°F. Bake, uncovered, until the noodles are tender, the sauce is bubbling, and the edges are golden and puffed, about 20 minutes. Remove from the oven and let stand for about 15 minutes before serving.
  • Make-Ahead Instructions: The lasagna can be assembled and refrigerated up to 1 day ahead of time.
  • Freezer-Friendly Instructions: The lasagna can be frozen for up to 3 months. If freezing it prior to baking, when you're ready to cook it, defrost in the refrigerator for 24 hours, then proceed with the baking instructions in the recipe. If the lasagna is already cooked, you can either put it in a freezer-safe container that just fits the leftover piece, or you can cut into individual pieces and wrap each one tightly in plastic wrap and then foil. Reheat it, covered with foil, in a 325°F oven until hot.

A long-simmered beef ragu lets the brightness of the tomatoes shine through while developing a meaty richness. Our ricotta is mixed with nutty Parmesan that tempers the sharp garlic and adds flavor. We worked hard to get the right balance of the ricotta and tomato sauce in the layers since each element has their own voice. Our lasagna also uses less mozzarella than many other recipes - we prefer the creaminess of ricotta over the stringiness of melted mozzarella. Look for the shorter noodles - you won't need to cut them when assembling the lasagna.

1 pound ground beef
2 tablespoons olive oil, plus more for greasing
3 ounces pancetta, cut into 1/8-inch pieces
1 large carrot, cut into 1/8-inch pieces
1 large celery stalk, cut into 1/8-inch pieces
1 medium yellow onion, cut into 1/8-inch pieces
6 cloves garlic, finely grated
1 bay leaf
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon freshly ground nutmeg
Kosher salt and freshly ground black pepper
1/4 cup tomato paste
1/2 cup dry white wine
Two 28-ounce cans whole peeled tomatoes
2 large sprigs basil
1 large piece of Parmesan rind
1 pound dried lasagna noodles (see Cook's Note)
2 cups whole milk ricotta
1 1/4 cup grated Parmesan
8 ounces whole milk mozzarella, grated on the large holes of a box grater (about 2 cups)

Steps:

  • Place the beef in a large bowl and "pull" it apart with two forks as if you were shredding pulled pork, breaking up the clumps and loosening the meat without compacting it.
  • Heat the oil in a Dutch oven or large heavy pot over medium-high heat. Add the pancetta and cook, stirring occasionally, until the fat has rendered and the meat is golden brown, 5 to 7 minutes. Transfer the pancetta to a large bowl with a slotted spoon, leaving the fat in the pot.
  • Spread the beef in an even layer in the same pot and cook undisturbed until lightly browned, about 3 minutes. Toss and continue to cook, breaking up any clumps and scraping up any browned bits from the pot, until the meat is browned and completely cooked, 5 to 6 minutes. Transfer the browned meat with a slotted spoon to the bowl with the pancetta, leaving the fat in the pot.
  • Reduce the heat to medium. Add the carrots, celery, onions, half the garlic, the bay leaf, oregano, red pepper flakes, nutmeg, 2 teaspoons salt and 1/4 teaspoon black pepper to the pot and cook, stirring occasionally, until the vegetables are tender but not browned, 6 to 8 minutes.
  • Add the tomato paste and cook, stirring constantly, until it's very fragrant and brick red colored, about 2 minutes. Stir in the wine, bring to a boil and reduce until the liquid is very thick and no smell of alcohol remains, 6 to 8 minutes. Add the tomatoes and the reserved pancetta and beef, bring to a boil and then reduce the heat to low. Add the basil and Parmesan rind and simmer, stirring occasionally, until most of the liquid has evaporated and the sauce resembles sloppy joes, 2 to 2 1/2 hours. There shouldn't be any rapid bubbles while cooking. Instead, the ragu should release occasional small bubbles. If the ragu reduces too quickly, add 1/2 cup of water and continue cooking. Repeat if necessary. The ragu needs the full 2 to 2 1/2 hour cook time to develop the flavors.
  • Discard the bay leaf, basil and Parmesan rind. Break up any remaining clumps of meat with the back of a spoon, making an even textured sauce. Season with salt and set aside until ready to assemble.
  • Arrange a rack in the center of the oven and preheat to 350 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Cook the noodles, stirring occasionally and separating them to prevent sticking, until softened and bendable but are still hard and chalky in the center, about 5 minutes. Transfer the noodles to a large bowl of cold water and set aside until ready to assemble.
  • Stir together the ricotta, 1 cup of the Parmesan, the remaining grated garlic and 2 teaspoons salt in a medium bowl until thoroughly combined. Set aside until ready to assemble.
  • Lightly oil a 13-by-9-inch glass or ceramic baking pan. Spread 1 cup of the ragu evenly in the bottom of the pan. Lay a single layer of noodles over the ragu (if you're using long noodles, you will need to cut some noodles to fill the gaps). Spread 1 1/2 cups of the ragu over the noodles. Dollop 3/4 cup of the ricotta mixture over the ragu and spread lightly with a small offset spatula. Sprinkle with 1/2 cup of the mozzarella, followed by another layer of noodles. Repeat with the remaining pasta, ragu, ricotta mixture and mozzarella, creating 4 layers of pasta and ending with the remaining 1/2 cup mozzarella. (The lasagna should come just above the top of the pan but it will sink down slightly as it cooks.) Top with the remaining 1/4 cup Parmesan.
  • Lightly oil a piece of foil and cover the pan. Put the pan on a rimmed baking sheet to catch any drips. Bake the lasagna until bubbling gently around the edges, about 1 hour.
  • Remove the lasagna from the oven and increase the oven temperature to 450 degrees F. Remove the foil and then continue to bake the lasagna until the top is browned and crisp around the edges, 15 to 20 minutes.
  • Let sit 10 minutes before serving.

1 medium onion, chopped
2 tablespoons olive oil
4 garlic cloves, minced
1 can (6 ounces) tomato paste
2 cans (28 ounces each ) crushed tomatoes in puree
6 cups water
1 cup chopped fresh basil
2-1/4 teaspoons sugar, divided
1 teaspoon salt
1 pound bulk Italian sausage
4 Italian sausage links
1 carton (16 ounces) whole milk ricotta cheese
8 cups shredded mozzarella cheese, divided
1 large egg, beaten
1/4 teaspoon dried basil
12 sheets no-cook lasagna noodles
21 slices provolone cheese
1/3 cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook onion in olive oil over medium heat until tender, 4-5 minutes. Add garlic; cook 1 minute. Stir in tomato paste and cook, stirring constantly, until fragrant, 3-4 minutes. Add crushed tomatoes, water, fresh basil, 2 teaspoons sugar and salt. Bring to a boil; reduce heat. Simmer 1 hour, stirring occasionally., Meanwhile, cook bulk sausage in a skillet over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Add to sauce; simmer until mixture is thickened, about 1 hour longer., While sauce simmers, preheat oven to 350°. Place sausage links on a rimmed baking sheet; roast until cooked through, 35-40 minutes. Remove and let cool slightly; slice into 1/4-in.-thick pieces., In a small bowl, mix ricotta cheese, 1 cup mozzarella cheese, egg, dried basil and remaining sugar., In a greased 13x9-in. baking dish, spread 2 cups sauce. Arrange 4 noodles over sauce; spread with a third of the ricotta mixture. Add 7 provolone slices, a third of the sliced sausage and 1-1/2 cups mozzarella cheese. Repeat layers 2 more times, using only 1 cup sauce per layer. Spread with 2 cups sauce (reserve remaining sauce for serving on the side), remaining 2-1/2 cups mozzarella cheese and the Parmesan cheese (dish will be full)., Place dish on a rimmed baking sheet and bake, uncovered, until bubbly and deep golden brown, 60-65 minutes. Let stand 15 minutes before serving. Serve with remaining meat sauce.

THE SAUCE
1 lb pork sausage (use italian if you prefer)
1 medium onion, diced
3-4 clove garlic micro-planed
2 tsp hot pepper flakes
28 oz can crushed tomatoes
15 oz can tomato sauce
2/3 c red wine
salt and pepper to taste
THE CHEESE FILLING
16 oz ricotta cheese
1 egg
2/3 c parmesan cheese, shredded
1/2 c fresh parsley, chopped
BALANCE OF INGREDIENTS
12 lasagna noodles, uncooked but softened in hot water
8-12 oz fresh mozzarella cheese, sliced into rounds
2 c mozzarella, shredded
1/3 c pamesan cheese, shredded

Steps:

  • 1. Cook the sausage until done with a bit of oil, depending on the fat content. Set aside in a bowl.
  • 2. Saute onions until translucent, then add garlic, ande tomatoes, hot pepper flakes. Simmer on low until much of the liquid has been evaporated. Add the wine, and continue simmering until it reaches the "sauce" consistency. Add the sausage back in. Taste and add salt and pepper as need.
  • 3. Make the cheese filling but simply mixing in all the filling ingredients.
  • 4. Put your noodles in hot water to soften. They do NOT have to be no-cook. When they are ready, assemble the lasagna.
  • 5. Place enough sauce in the bottom of the pan to cover. Then place three noodles, side by side (my lasagna pan is perfect in size. I get 3 in each layer). Place 1/3 of the cheese filling slathered on the noodles. Then place rounds of fresh mozzarella. About 6 slices. Then more sauce, noodles, cheese filling, mozzarella, sauce, noodles, cheese, sauce. Cover with the two cups of shredded mozzarella and shake the 1/3 parmesan over all.
  • 6. Cover with foil. Place in a 375 oven for 45 minutes or until bubbly. Take out and rest for 15 minutes before serving.

1 lb ground beef
1/2 cup of chopped onion

2 tablespoons white sugar
1 teaspoon fennel seed
2 teaspoons fresh basil leaves, chopped

23 ounces ricotta cheese
1/2 teaspoon fresh grated nutmeg

Steps:

  • 1. Start with the following in a pot.
  • 1 pound of sweet Italian sausage.
  • 1 pound of ground beef.
  • 1/2 cup of chopped onions.
  • 2 cloves of garlic chopped.
  • Brown the ground beef, Italian sausage, onions and garlic in a pot until they start to look. It takes about 6 to 9 minutes to brown the meat. I like to use a Dutch oven to cook this portion of the recipe. I use a medium low temperature to brown the meat. It is optional to remove the grease from the meat once it is finished browning, your choice.
  • 2. Add the following:.
  • 1 (28 ounce) can of crushed tomatoes.
  • 2 (8 ounce) cans of tomato sauce.
  • 2 (6 ounce) cans of tomato paste.
  • 1/2 cup of water.
  • Gently stir this into the cooking meat.
  • 3. Add the following:.
  • 2 tablespoons white sugar.
  • 1 teaspoon fennel seed.
  • 2 teaspoons fresh Basil leaves chopped.
  • 2 tablespoons fresh Italian parsley chopped.
  • 1 teaspoon salt.
  • 1 teaspoon Italian Seasoning.
  • 1/2 teaspoon ground pepper.
  • Gently stir these seasoning into the sauce.
  • Cover the pot and let the meat sauce simmer. Simmer on low heat for 1 hour and 30 minutes
  • 4. Soak 12 lasagna noodles.
  • The lasagna noodles need to be soaked in hot tap water for 15 minutes.
  • 5. While the noodles are soaking you can make the cheese filling.
  • Put the following in a mixing bowl:.
  • 23 ounces of ricotta cheese.
  • 1/2 teaspoon fresh grated nutmeg
  • Grate fresh nutmeg over the Ricotta cheese.
  • 6. Add the following.
  • 1 egg.
  • 2 tablespoons fresh Italian parsley chopped.
  • Mix these ingredients together with a spoon.
  • 7. Now we start building the lasagna layers.
  • Use a 9×13 inch baking pan.
  • Spread 2 Cups of meat sauce on the bottom of the pan.
  • Remove your lasagna noodles out of the water bath. Shake water off wet noodles.
  • Lay 6 noodles across the layer of sauce.
  • Spread half of the ricotta cheese mixture over the layer of noodles.
  • Spread 1/2 of the mozzarella cheese over the ricotta layer.
  • Sprinkle half of the Parmesan cheese over the mozzarella layer.
  • Spread 2 cups of meat sauce over the cheese layer.
  • Lay down the next layer of noodles.
  • Spread the remaining ricotta mixture over noodles.
  • Spread the mozzarella and Parmesan cheeses saving some cheese for the top of the lasagna.
  • Put the last layer of meat sauce on the cheeses.
  • Sprinkle the remaining cheese on top.
  • 8. Cover with foil.
  • Bake in preheated oven at 350 for 25 minutes.
  • Remove foil and bake uncovered for another 25 minutes.
  • Remove from oven and allow to cool for approximately 15 minutes.

¾ pound lean ground beef
½ cup minced onion

2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
