A fast and easy grilled shrimp appetizer that mixes savory seafood seasoning with tart and tangy key lime dipping sauce. It's sure to be a BBQ favorite!

1 Lbs. Raw, Clean, Deveined Shrimp, (if using frozen, thaw and pat dry)
2 Tsp. Seafood Seasoning, (we used Old Bay)
1 Tblsp. Olive Oil
4-5 Damp Bamboo Skewers
1 1/2 Cups Mayonaise, (we used Duke's Mayo)
1/8 Cup Key Lime Juice, (preferably fresh)
1/2 Tsp. Chili Powder
1/2 Tsp. Dill
1/4 Tsp. Dried Oregano
1/4 Tsp. Cumin
1/4 Tsp. Paprika, (we used Hungarian smoked paprika)
1/8 Tsp. Ground Black Pepper

Steps:

  • First, if using frozen shrimp, thaw them out and pat them dry with paper towels.
  • Next, in a medium mixing bowl, toss the shrimp with the olive oil and seafood seasoning.
  • Then, thread 4-5 shrimp on each bamboo skewer and place them on a preheated grill for 2-4 minutes in each side.
  • Last, remove them from the grilled and set them on a plate to rest while you make the aioli.
  • First, in a medium mixing bowl, combine all the key lime aoili ingredients.
  • Next, use a whisk or fork to mix everything together.
  • Last, serve the aoili with your grilled shrimp.

1/2 teaspoon fresh lime zest
1/4-1/2 teaspoon cumin
1/2 teaspoon dried oregano
1/2-1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
2 -3 tablespoons fresh squeezed lime juice
3 cloves garlic, minced
1 lb shelled deveined uncooked shrimp

Steps:

  • Mix together the first 8 ingredients in a bowl.
  • Add shrimp; toss to coat.
  • Let stand at room temperature for 10 minutes to marinate.
  • Thread shrimp on metal skewers; reserve marinade.
  • Place skewered shrimp on grill over medium heat.
  • Cook 3-7 minutes or until shrimp turn pink, turning once and brushing with marinade occasionally.

16 bamboo skewers, 12 inch
1 cup olive oil
1 teaspoon chopped fresh basil
1 cup mayonnaise
1 teaspoon chopped fresh cilantro
16 medium shrimp (size 21/25)
3 teaspoons chopped fresh garlic
4 romaine lettuce leaves
2 ounces fresh lemon juice
1/2 ounce honey

Steps:

  • Peel and devein the shrimp, leaving only the tail attached.
  • Take 4 shrimp for each bamboo skewer and skewer through the the center of the tail and set aside.
  • In a 12" flat pan mix the olive oil, basil and 2 teaspoon of chopped garlic.
  • Add the shrimp to the olive oil, marinate, cover and place in cooler for at least one hour.
  • For Aioli: Mix the mayonnaise, lemon juice, cilantro and honey in a small mixing bowl and keep cool until ready to serve.
  • Light coals on grill until ready to cook.
  • Take shrimp skewers out of marinade, lightly dry on paper towel and place on grill.
  • Cook on each side 3-4 minutes or until pink.
  • For each serving, place one lettuce leaf on a plate and put one grilled shrimp skewer on top of lettuce.
  • Put 3 oz of cilantro aioli in a small ramekin and place next to the gripped shrimp for dipping and serve.

2 tablespoons lime juice
2 tablespoons extra virgin olive oil
2 small jalapenos, seeded and minced
1/4 teaspoon ground black pepper
1/8 teaspoon salt
4 cups mixed greens
1 medium avocado, thinly sliced
1 medium red bell pepper, diced
4 (12 inch) skewers

Steps:

  • For shrimp: In a medium bowl, whisk together oil, garlic, and red-pepper flakes. Add shrimp and scallions and toss to coat; refrigerate for 30 minutes.
  • For the salad: In a small bowl, whisk together lime juice, oil, jalapenos, black pepper, and 1/8 teaspoon salt; let stand at room temperature while shrimp is marinating. In a large bowl, combine greens, avocado, and bell pepper.
  • Generously coat a grill or grill pan with cooking spray and heat to medium-high. Alternately thread shrimp and scallions into 8 skewers. 2 lbs shrimp, washed, peeled, deveined (extra large or jumbo)
2 tablespoons olive oil
1 tablespoon cajun seasoning
1 lime, halved
1 tablespoon unsalted butter
2 tablespoons green onions, sliced thin
1 garlic clove, minced
1/4 teaspoon cayenne pepper
1/3 cup hot sauce (Louisiana or Frank's not Tabasco Brand)
2 cups heavy whipping cream
salt
thin sliced green onion (to garnish)
lime (to garnish)

Steps:

  • In a bowl mix the Cajun seasoning, the juice of 1/2 of the lime and olive oil. Toss in the shrimp and coat evenly. Set aside.
  • In a medium saucepan over medium heat, melt the butter. Add the green onions, garlic and cayenne; cook until tender, about 2 minutes. Add the hot sauce and continue to cook on medium high heat until reduced by 1/2. Add the heavy cream and the juice of the remaining lime half and bring to a boil. Quickly reduce heat to medium low and allow to simmer until reduced by 1/3. Be careful not to allow the cream mixture to boil over. Salt to taste.
  • Heat grill to medium high heat. Grill shrimp on prepared skewers or on grill sheet just until opaque, turning only once. About 2 - 4 minutes per side depending on the size of the shrimp and your grill. Shrimp cook very quickly, so be careful and better to pull them off sooner than later.
  • Assemble shrimp onto individual serving plates, drizzle with the cayenne lime cream and garnish with additional lime wedges, chopped green onions and an additional dash of Cajun seasoning, if desired. .

1/4 cup key lime juice or 3 fresh limes, squeezed
4 garlic cloves
1 ounce rum, any kind you have on hand is fine
salt and pepper
1 fresh lime, quartered

Steps:

  • In a ziplock bag place peeled and deveined shrimp and all other ingredients except the last lime. Zip it up and mix around, let sit for about 20 minutes.
  • Thread onto skewers.
  • Cook over low heat turning once after a few minutes until shrimp are done. They will cook fairly fast.
  • Remove from grill and serve immediately with a quarter of the fresh lime to squeeze over them.
