1 pound ground pork
¼ cup dry red wine
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon dried parsley
¾ teaspoon paprika
½ teaspoon dried rosemary
¼ teaspoon white pepper
¼ teaspoon black pepper

Steps:

  • Combine ground pork, red wine, garlic, salt, parsley, paprika, rosemary, white pepper, and black pepper in a bowl and mix until evenly combined; do not overmix. Let sit in the fridge at least 4 hours, preferably overnight, in order for flavors to meld.
  • Preheat an outdoor grill over medium-high heat.
  • Divide the meat into 4 equal portions and form into patties. Cook on the preheated grill about 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 165 degrees F (74 degrees C).

There is no more reliable guest at a cookout than sausage, roasted over the open fire. But before you grill the meat, get some peppers and onions soft and dark and fragrant in the heat, and use these as a bed on which to serve the links. Italian sausage works beautifully here, as do hot links and bratwurst. If cooking brats, think about simmering them first in beer and onions, then finishing them on the fire.

1 pound sweet peppers (green, red and yellow, if available) seeded and cut into eighths
2 large yellow onions, peeled and cut into large coins
3 to 4 tablespoons extra-virgin olive oil, more to taste
1/4 teaspoon salt, more to taste
2 pounds sweet or hot Italian sausages, or bratwurst or other fresh sausage

Steps:

  • Build a fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium (you can hold your hand 5 inches above the coals for 5 to 7 seconds), you are ready to cook. (For a gas grill, turn all burners to high, lower cover and heat for 15 minutes, then turn burners to medium.)
  • Meanwhile, toss peppers and onions with oil and sprinkle with salt. Lightly prick sausages all over so that they do not burst.
  • Put peppers and onions in a grill basket or directly on the grill, turning occasionally until they are softened and dark at the edges, 10 to 12 minutes. Move them to the side of the grill without coals.
  • Place the sausages on the hot side of the grill, cover and cook, turning occasionally until they are cooked through, 8 to 10 minutes.
  • Transfer the peppers and onions to a platter and top with the sausages. Drizzle with olive oil and serve.

1 tablespoon olive oil
1 onion, thinly sliced
1 red bell pepper, cored and thinly sliced
1 tablespoon tomato paste
12 ounces hot Italian sausage (if links, remove casings)
12 ounces sweet Italian sausage (if links, remove casings)
8 slices provolone
1/4 cup mayonnaise
3 tablespoons pesto
4 ciabatta rolls, buttered and lightly toasted
Pickled banana peppers, for topping

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions and peppers and saute until the onions are translucent and the peppers are tender, 6 to 8 minutes. Stir in the tomato paste and cook for 1 minute longer. Remove from the heat.
  • Preheat an outdoor grill to medium high.
  • Combine both sausages in a bowl. Form into 4 patties. Grill until cooked through, 4 to 5 minutes per side. Top each burger with some of the onions and peppers and 2 slices of cheese, cover the grill and cook until the cheese melts.
  • In a bowl, add the mayo and pesto and stir to combine. Spread the rolls with the pesto mayo, add the burgers and banana peppers and serve immediately.

This is an easy way to cook sausage, peppers and onions together. They cook to be really juicy and acquire the flavor of the vegetables while cooking. I serve the mixture on hoagie rolls. You could also add shredded Mozzarella atop sausages/vegies and put back in the oven, just until the cheese melts! These are great with oven french fries. This recipe could also be expanded and taken to potluck dinners and kept warm in a crock-pot and just have the hoagie rolls on the side for people to make their own sandwiches. 5 pounds Italian sausage (Sweet or Hot, or a combo)
2 large red bell peppers
2 large green bell peppers
2 large orange bell peppers
2 large yellow bell peppers
2 large Anaheim peppers
2 large sweet onions
2 tablespoons olive oil
2 teaspoons kosher salt
2 teaspoons black pepper

Steps:

  • Preheat the oven to 425 F.
  • Remove the stems and seeds from all the peppers. Cut in 2 inch chucks, Arrange on a lined baking sheet.
  • Peel and slice the onions. Arrange on a separate lined baking pan. Drizzle the peppers and onions with the olive oil. Toss to coat. Dust each baking sheet with salt and pepper. Place in hot oven and roast for 30 to 40 minutes or until the ends are charred and the vegetables are soft. The onions may take another 5 - 10 minutes to cook and slightly caramelize.
  • Remove from the oven. Transfer peppers and onions with all the juices to a covered foil pan. Keep warm until the sausage is ready.
  • Cook the Italian sausage coils (or links) on a hot grill over direct flames for about 15 - 20 minutes. Turn occasionally to get even cooking and allow for grill marks. The sausage should be cooked until the pink has just left the center of the sausage. Do not overcook.
  • Transfer the cooked sausage to a cutting board. Cut the sausage in 4 inch pieces on the diagonal.
  • Combine the sausage pieces with the roasted vegetables and toss to combine the juices. Drizzle with more olive oil if needed. Serve in a large serving platter with cut Turano sausage rolls on the side. It is extra special to lightly toast the inside of the buns on the grill!

8 hot Italian Sausages, (you can choose mild if you prefer)
2 large sweet onions
4 red bell peppers
1 teaspoon coarse salt, divided (or to taste)
1/2 teaspoon freshly ground black pepper, divided (or to taste)
2 tablespoon extra virgin olive oil
8 hoagie rolls (or bratwurst buns)
8 oz sliced provolone cheese (optional)

Steps:

  • To make the foil packs, tear two ~12" x 20" sections of foil. Fold each in half. For each piece, roll the sides adjacent to the fold tightly 3-4 times to make a pouch.
  • Mix the sliced onions and peppers. Divide approximately between the two foil pouches. Add 1/2 teaspoon of salt, 1/4 teaspoon of freshly ground black pepper, and 1 tablespoon of oil to each pouch. Fold the top of the pouch several times to seal. Refrigerate until use.
  • Prepare charcoal grill for indirect heat. When the coals are hot and completely ashed over (white), add the sausages directly over the coals. Place the pepper-onion packs on the indirect heat side of the grill.
  • Grill the sausages for 3-5 minutes each on 2 sides, or until browned (check to be sure they don't burn; see Recipe Note #1). Continue grilling, turning as necessary, until thoroughly cooked, an additional 8-9 minutes (total 15-18 minutes) to cook through. If you'd like to toast your rolls, move the sausages to indirect heat and toast the bread until lightly browned.
  • To assemble the sandwiches, lay 1-2 slices of provolone cheese (if using) on the bottom of the roll. Add one hot sausage and ~1/2 cup of the pepper-onion mixture (see Recipe Note #2).

2 lbs sweet Italian Sausage links
2 bell peppers, sliced
2 onions, sliced

15 oz can tomato sauce
14.5 oz can diced tomatoes with juice
1/2 tsp salt

1 tsp onion powder
1 Tbsp brown sugar
Hoagie buns
Provolone cheese slices

Steps:

  • Add oil to a large skillet over high heat.
  • Brown the sausages well on all sides, I like to get a good amount of color on them. Color=flavor!
  • Remove the sausages to a platter and set aside.
  • Add the bell peppers and onions to the same skillet and cook for about 5 minutes, getting them a little bit brown as well.
  • Reduce the heat to medium and add the garlic to the veggie mixture for the last minute.
  • Next add the sausages back to the pan and dump in the tomato sauce and diced tomatoes with juice, the salt, Italian seasoning, onion powder and brown sugar.
  • Bring to a boil then reduce to low and simmer covered for an hour or until sausages are cooked through.
  • When you are ready to serve, toast your hoagie buns on both sides, then add the cheese to the inside of the buns and place back in the oven to broil until the cheese is melted.
  • Add the Italian Sausage & peppers & onions to each hoagie and sprinkle with lots of Parmesan cheese. Serve with some of the tomato sauce on the side for dipping.
  • My kiddos like their sausages cut up in bite size pieces before I put it on their hoagies, but that is optional.
