1 1/2 cups frozen organic blueberries
1/4 cup finely chopped onion
1 clove garlic, minced
1 teaspoon olive oil
2 tablespoons balsamic vinegar or cider vinegar
1 tablespoon packed brown sugar
1 teaspoon grated fresh ginger
1/2 teaspoon finely shredded lemon peel
Nonstick cooking spray
1/8 teaspoon salt
1/8 teaspoon ground black pepper
Snipped fresh chives (optional)

Steps:

  • Thaw fish, if frozen, and blueberries. For sauce: In a small saucepan, cook and stir onion and garlic in hot oil about 3 minutes or until softened. Add blueberries, vinegar, brown sugar, ginger, and lemon peel. Bring to boiling; reduce heat. Simmer, uncovered, about 15 minutes or until sauce has thickened and reduced to 1 cup.
  • Meanwhile, rinse salmon; pat dry with paper towels. Lightly coat salmon with nonstick cooking spray; sprinkle with salt and pepper. Measure thickness of salmon.
  • Place salmon on the rack of an uncovered grill directly over medium coals. Grill for 4 to 6 minutes per 1/2-inch thickness of fish or until fish flakes easily when tested with a fork, turning once halfway through grilling.
  • Serve blueberry sauce over salmon. If desired, sprinkle with chives.

3/4 cup sliced shallots
1 garlic clove, thinly sliced
1/4 teaspoon coarse kosher salt plus additional for seasoning

1/8 teaspoon ground allspice plus additional for seasoning
1 cup fresh blueberries
1/4 cup water
1 tablespoon balsamic vinegar
4 7-ounce salmon steaks or fillets with skin (each about 3/4 inch thick)
3 tablespoons thinly sliced fresh mint, divided

Steps:

  • Heat 1 tablespoon oil in large skillet over medium heat. Add shallots; sauté until softened, about 5 minutes. Add garlic, 1/4 teaspoon coarse salt, 1/4 teaspoon thyme, and 1/8 teaspoon allspice. Stir until fragrant, about 30 seconds. Add blueberries, 1/4 cup water, and vinegar. Stir to blend. Mash berries with potato masher or back of fork and cook until sauce thickens, stirring often, 3 to 4 minutes. Season with freshly ground black pepper. Remove from heat. DO AHEAD Can be made 2 hours ahead. Let stand at room temperature. Rewarm before using.
  • Brush grill rack with oil. Prepare barbecue (medium-high heat). Brush salmon on both sides with oil; sprinkle with coarse salt, thyme, allspice, and black pepper.
  • Grill salmon until just opaque in center, 4 to 5 minutes per side. Transfer to plates. Stir 2 tablespoons sliced mint into warm blueberry sauce. Spoon sauce over salmon and sprinkle with remaining 1 tablespoon mint. Serve immediately.

2 cups fresh blackberries
2 tablespoons white wine
1 tablespoon brown sugar
1-1/2 teaspoons honey
1-1/2 teaspoons chipotle hot pepper sauce
1/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
1/4 cup finely chopped shallots
1 garlic clove, minced
6 salmon fillets (5 ounces each)

Steps:

  • Soak grilling planks in water for at least 1 hour. , In a food processor, combine the blackberries, wine, brown sugar, honey, hot pepper sauce, 1/8 teaspoon salt and 1/8 teaspoon pepper; cover and process until blended. Strain and discard seeds. Stir shallots and garlic into the sauce; set aside., Place planks on grill over medium-high heat. I use a riesling wine for this but you can use any white wine.

6(8 oz.) salmon fillets (1/2 inch thick)
2 shallots, peeled & very thinly sliced
1 1/2 c white wine
1 Tbsp white wine vinegar
1/2 tsp thyme
1 1/3 c blueberries
4 Tbsp unsalted butter
2 Tbsp honey
salt & pepper to taste

Steps:

  • 1. In a medium saucepan over low heat, simmer together shallots, wine, vinegar and thyme for 15 to 20 minutes or until most of the liquid is gone.
  • 2. Add the blueberries, butter and honey. Cook until the berries soften about 2 to 4 minutes.
  • 3. Meanwhile, spray the salmon with cooking spray. Salt and pepper to taste.
  • 4. Place salmon on the rack of an uncovered grill directly over medium coals.
  • 5. Grill for 2 to 3 minutes minutes per side or until fish flakes easily when tested with a fork.
  • 6. Spoon the blueberry sauce over the salmon to serve
  • 7. NOTE: You will need to adjust the cooking times if your fillets are thinner or thicker than 1/2 inch.
