PROSCIUTTO WRAPPED FIGS AND BLUE CHEESE

Steps:
- Preheat grill. You will need medium to high heat for grilling. The key is to crisp the prosciutto quickly and leave the blue cheese just melted with the inner part of the fig cool in temperature.
- Cut the figs in half and place a piece of blue cheese on each fig half. Wrap the prosciutto around each fig half, covering the cheese. The ends of the prosciutto should overlap.
- Grill each piece until the prosciutto begins to color and crisp, about 2 minutes on each side. Remove from grill, lightly drizzle with extra virgin olive oil and season with sea salt and pepper. Serve warm.
GRILLED PROSCIUTTO-WRAPPED FIGS WITH BLUE CHEESE AND PECANS
These delicious grilled proscuitto-wrapped figs with blue cheese and pecans are an ideal accompaniment to many kinds of wine.

Steps:
- Place 12 skewers (4 inches each) in water to soak for at least 10 minutes. Heat a grill pan over medium-high heat.
- Slice the figs through the center vertically without cutting all the way through. Carefully open each fig, and place a slice of cheese and a pecan piece inside each. Gently squeeze figs to enclose the cheese. Wrap figs horizontally with a strip of proscuitto and skewer to secure. Brush the figs with oil and place on the grill. Cook, just until grill marks begin to appear, about 1 1/2 minutes. Turn and repeat with opposite side.
- Transfer to a serving platter, and lightly drizzle with honey. Serve warm or at room temperature.
GRILLED PROSCIUTTO WRAPPED FIGS STUFFED WITH GOAT CHEESE
Steps:
- Preheat the grill and brush with a grill brush to remove any excess crud and fat. After brushing, run an oiled towel over the grates to pick up any loosened crud or soot.
- Drizzle each fig half with vinegar and fill each fig center with goat cheese. Sprinkle a couple flakes of crushed red pepper, if using, on top of the goat cheese and wrap each fig with a slice of prosciutto. Paint the outside of each fig very lightly with olive oil.
- Put the figs on a cooler spot of the preheated grill. The idea here is that we want to grill the figs gently to cook the fig all the way through but to still get the char on the outside. Grill the figs on all sides so the prosciutto is starting to become crispy and the fig feels soft when squeezed, about 5 to 6 minutes.
- While the figs are grilling, in a large bowl, toss the arugula with a little extra-virgin olive oil, some balsamic vinegar and the Parmigiano-Reggiano. Taste, and add salt, if needed. Arrange on individual serving plates or a serving platter and top with the figs. Drizzle a couple of drops of balsamic on each fig and serve.

- Preheat the grill to high or the oven to 450˚.
- Rinse the figs and pat dry. With a paring knife cut a small slit in the bottom of each fig. Insert a cube of cheese and with your fingers gently squeeze the opening closed. Wrap one slice of prosciutto around each fig, rolling the fig to blanket it completely. Repeat with the remaining figs and place on the grill. With the lid close, grill until the figs are browned on one side, about 4 minutes. Flip the figs and repeat.
- Alternatively, preheat the broiler to high and place the figs in a roasting pan. Broil until browned, about 2 minutes. Flip the figs and broil another 2 minutes or until golden brown and soft.
- Place the warm figs on a serving platter and drizzle with the oil and vinegar. Sprinkle with the salt to taste. Serve immediately.

- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper; set aside.
- Cut a small hole in the center of the flesh of each fig. Fill each hole with 1/4 teaspoon of goat cheese.
- Take a prosciutto slice and tear in half. Use 1 half to diagonally wrap around the fig, starting from the top. Tuck underneath at the ends. Repeat until all figs are wrapped. (Secure with toothpicks if necessary.) Place wrapped figs on prepared baking sheet, evenly spaced.
- In a small bowl, combine honey and pumpkin pie spice. Drizzle honey evenly over each fig.
- Place in the oven on the top rack and roast for 8 to 10 minutes. Remove and serve immediately.

- Cut the fig in half and lay a small square of brie on top. Wrap a small slice of prosciutto around the fig and cheese to attach it. Put about 3 or 4 wrapped figs on each skewer. NOTE: If using wooden skewers, soak them in water for at least an hour before using them. If using an outdoor grill, a grate with small holes is recommended. Grill for 1 to 2 minutes, until cheese is melted.
