HOT CHILE GRILLED PORK ROUNDS WITH AVOCADO-MANGO SALSA OVER COUSCOUS

- In a medium bowl, combine mango, avocado, onion, lime juice, cilantro, jalapeno, and cumin. Mix well. Season, to taste, with salt and black pepper.
- In a saucepan, bring chicken broth to a boil. Add couscous, stir and cover. Remove from heat. After 5 minutes remove cover, fluff with a fork.
- Meanwhile, set a stove-top grill pan over medium-high heat to preheat. Brush both sides of pork slices with hot chili oil and season with salt and black pepper. Add slices to hot pan and cook 1 to 2 minutes per side, until golden brown.
- Serve pork over couscous with salsa spooned on top.
QUICK GRILLED PORK WITH LEMON AVOCADO SALAD
This butterflied pork tenderloin is grilled to perfection and then topped with a quick and easy lemon avocado salsa. This dinner is ready in under 30 minutes and is full of flavor!

- Preheat grill. Slice tenderloin down the middle lengthwise, leaving one long side connected so you can open it up like a butterfly. (Don't stress if you accidentally cut it all the way through. Just grill the two pieces!)
- Spread a little vegetable oil over the hot grill using tongs with an oil-soaked paper towel. (Towel should not be dripping with oil or it can cause high flames.)
- Place prepared tenderloin on the hot grill and cook about 5-7 minutes on each side, until the center has reached at least 150 degrees F. Remove cooked meat to cutting board.
- Gently stir all salad ingredients together. Serve within an hour (before avocado starts to brown).
GRILLED AVOCADO WITH SALSA
Steps:
- Preheat a grill on medium heat to 425 degrees F.
- Brush the inside of the avocado halves with the olive oil. Place the avocado halves cut-side down on the grill for 1 minute and 30 seconds. Turn the avocado halves 90 degrees to get cross grill marks and cook for another 1 minute and 30 seconds.
- Remove from the grill and season with salt and pepper. Put about 1 heaping tablespoon of salsa into the center well of each avocado half. Garnish with hot sauce and serve.
GRILLED PORK TENDERLOIN AL PASTOR WITH AVOCADO CREMA

- Add the pineapple juice, achiote paste, chipotles, garlic and 1 1/2 teaspoons salt to a food processor and puree until uniform. Reserve about 1/2 cup of the marinade for glazing. Put the remaining marinade and the pork in a resealable plastic bag and marinate for 2 hours in the fridge, rotating if necessary halfway through.
- Heat a grill to high heat; clean and oil the grill grates.
- Thread the onion rounds on the skewers, drizzle with oil and season with salt and pepper. Grill the onions, developing a deep char on each side, about 10 minutes per side. Set aside to cool.
- Lightly season the tenderloins once more, then grill on all 4 sides, frequently basting with the reserved marinade, until golden brown and the internal temperature registers 145 degrees F, 8 to 10 minutes per side. Transfer to a plate, tent loosely with foil and rest for 5 minutes.
- Mince the cooled onions and season again. Slice the pork and serve with a dollop of Avocado Crema and garnished with chopped cilantro and charred onions.
- Put the cilantro, Mexican cream, avocado and lime zest and juice in a food processor and run until smooth. Season with salt and pepper. Cover with plastic wrap pressed on top until serving, to keep the avocado from browning.

- Cut the avocados in half; remove the pit and peel the skin from 3 of the halves. Slice the peeled halves into ½-inch slices. Place the avocado slices and the half still in the skin on a hot grill. Grill the onions, peppers, and avocado until nice grill marks appear.
- Place the peppers into a bowl and cover with damp towel, or into a plastic bag to sweat the skins. Scoop the half of the avocado out into a mixing bowl; add the jalapeno pepper, lime juice, cilantro, salt, and pepper. With a fork, mash all the ingredients into a guacamole. Once the pepper skins are loose, peel and discard skins.
- Cut the tomato, onion, and peppers into ½-inch dices; fold into the mashed mixture and carefully and gently.
- Salt and pepper to taste. Serve at room temperature.

- For the Tenderloin:.
- In a large ziplock bag combine chipotle chiles, lime juice, onion and garlic. Add pork, then seal and marinate in the refrigerator for two hours, turning bag occasionally.
- When ready to cook, preheat gas grill to high.
- Lightly coat the rack with cooking spray.
- Remove pork from bag and discard marinade. Sprinkle the pork evenly with salt.
- Place pork on on the rack and grill over indirect heat, turning occasionally for 20 minutes or until inside core temp of 150 degrees.
- Remove from heat and let stand for 10 minutes.
- Slice crosswise.
- For the Salsa:.
- In a medium bowl, combine the strawberries, avocado, scallions, cilantro, lime juice and salt.
- Toss gently.
- Serve immediately with the sliced pork.
CHIPOTLE PORK WITH STRAWBERRY-AVOCADO SALSA
This was printed in our local newspaper. Prep time includes marinating. I made it the other night and it was wonderful. I did need to grill the pork for longer, but the tenderloins I had were kind of thick. I also used a little more lime juice in the "marinade", which I found to be more like a wet-rub than a marinade.

- For pork, combine all but the salt in a large plastic zipper bag. Marinate in refrigerator, turning the bag occasionally, for 2 hours.
- Remove pork and discard marinade; sprinkle pork evenly with salt.
- Grill pork over indirect heat for about 20 minutes, or until internal temperature reaches 155°. Let stand 10 minutes. Slice crosswise.

- Cut pork pieces crosswise into thirds. Cut off any big chunks of fat from pork and reserve; leave small pieces of fat attached to pork. Combine pork, reserved fat, 2 cups water, and next 4 ingredients in deep 12-inch skillet. Bring to boil. Reduce heat, cover, and simmer until pork is tender, stirring occasionally, about 1 hour 45 minutes, adding more water by 1/4 cupfuls if necessary to keep pork partially submerged.
- Uncover; boil pork mixture until liquid is reduced by half, about 10 minutes. Stir in brandy; boil until liquid evaporates and meat browns and begins to get crisp, stirring often, about 15 minutes. Cool meat slightly. Discard any loose pieces of fat. Tear meat into strips; return to skillet. DO AHEAD:Can be made 1 day ahead. Cover and chill.
- Add 2 tablespoons water to skillet. Cover and rewarm pork over medium-low heat, stirring, about 5 minutes. Season with more salt, if desired. Transfer to bowl. Serve with warm tortillas, Avocado Salsa (click for recipe), and tomato salsa.
