Spanish Style Pork Chops with Chorizo and Roasted Red Pepper Sauce and Green Beans image

2 tablespoons extra-virgin olive oil, 2 turns of the pan, plus some for drizzling
4 large, boneless center-cut pork chops, 1 1/2-inches thick
1/2 tablespoon paprika or smoked sweet paprika, half a palm full
Salt and pepper
1/4 pound chorizo, casing removed, finely chopped
2 cloves garlic, chopped
1 small yellow onion, chopped
1 tablespoon chopped thyme leaves, 4 sprigs
1 (16-ounce) jar pequillo peppers or roasted red peppers, drained
1/2 cup flat-leaf parsley, a couple of generous handfuls
1/4 cup dry sherry or dry white wine, eyeball it
1 pound fresh green beans, trimmed, available ready-prepped in sacks at many markets
1 lemon
Marcona almonds or sliced almonds toasted in butter, your choice
Cheesy Rice, recipe follows, optional
Crusty bread, to pass at table
2 tablespoons butter
1 1/2 cups white rice
3 cups chicken stock
Handful flat-leaf parsley, finely chopped
1 cup grated Manchego cheese
Salt and pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Heat a large skillet over medium-high to high heat. Add extra-virgin olive oil, 2 turns of the pan. Season the chops with paprika, salt, and pepper. Place chops in skillet and sear meat to caramelize, about 2 minutes each side. Transfer the chops to a cookie sheet and place in the oven to finish off, 8 to 10 minutes, or until meat is firm to touch, but not tough. Remove from the oven and let the chops rest covered with a piece of aluminum foil for a few minutes.
  • While the chops are in the oven, return the skillet to the cook top over medium heat. Add the diced chorizo and cook stirring frequently for 2 minutes. Add the garlic, onion, thyme, salt, and pepper. Cook meat and onions for about 3 minutes.
  • Bring 1 to 2 inches of water to a boil in another skillet with a lid.
  • Grind the peppers and parsley in a food processor until smooth. Add the sherry or wine to the sausage and onions and stir, then stir in the ground peppers. Cook another minute or 2 or until the peppers are heated through.
  • Place green beans in boiling water. Salt it and cook 2 to 3 minutes. Drain and dress with a squeeze of lemon, a drizzle of extra-virgin olive oil and salt and pepper.
  • Place a chop on each dinner plate and top with the chorizo-roasted pepper sauce. Serve with green beans, garnished with Marcona or toasted almonds, Cheesy Rice and/or crusty bread, for plate-mopping.
  • Melt butter over medium heat in a medium sauce pot. Add rice and toast in butter 2 minutes. Add stock and bring rice up to a boil. Cook rice 17 to 18 minutes until tender and liquids are absorbed. Remove from heat, fluff rice with fork, then stir in the parsley and cheese. Season the rice with salt and pepper, to taste.

2 medium heads garlic
1/4 cup plus 1 tablespoon extra-virgin olive oil
3 Turkish or 1 1/2 California bay leaves
1 medium onion, finely chopped (1 cup)
1 medium carrot, finely chopped (1/2 cup)
1 celery rib, finely chopped (1/2 cup)
2 oz Spanish chorizo (cured spiced pork sausage), casing removed and sausage finely chopped (1/3 cup)
1/2 cup drained canned diced tomatoes (from a 14 1/2-oz can)
2 tablespoons tomato paste
3 whole cloves
3/4 teaspoon dried hot red-pepper flakes
1/4 teaspoon black pepper
2/3 cup dry white wine
1 cup reduced-sodium chicken broth (8 fl oz)
24 small hard-shelled clams such as littlenecks (less than 2 inches in diameter), shucked, reserving 2/3 cup juices
Vegetable oil for oiling grill
4 (1-inch-thick) bone-in rib pork chops
2 teaspoons kosher salt
1/3 cup finely chopped fresh flat-leaf parsley

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Cut 1/4 inch off tops of garlic heads and put heads, cut sides up, on a sheet of foil. Drizzle with 1 tablespoon olive oil and wrap tightly in foil, then roast in oven until garlic is soft when pierced with tip of a knife, about 45 minutes.
  • While garlic roasts, heat remaining 1/4 cup olive oil in a 3- to 4-quart heavy pot over moderately high heat until hot but not smoking. Add bay leaves and cook, stirring, until leaves begin to brown, about 10 seconds. Reduce heat to moderate, then add onion, carrot, celery, and chorizo and cook, stirring occasionally, 2 minutes. Add tomatoes, tomato paste, cloves, red-pepper flakes, and black pepper and cook, stirring occasionally, until vegetables are softened, 6 to 8 minutes. Add wine and bring to a boil, then add broth and reserved clam juice. Simmer, uncovered, until reduced to about 2 cups, about 15 minutes.
  • While tomato sauce simmers, squeeze pulp from garlic cloves and force through a medium-mesh sieve into a bowl using a rubber spatula, discarding solids. Whisk purée into tomato sauce. Discard bay leaves and cloves, then keep sauce warm while grilling chops.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above grill rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderate.
  • Pat pork chops dry and sprinkle on both sides with salt. Grill pork chops on lightly oiled grill rack, covered only if using a gas grill, turning over once, until thermometer inserted 2 inches into center of a chop (do not touch bone) registers 145°F, 12 to 14 minutes total. Transfer chops to a plate and keep warm, loosely covered with foil.
  • Add clams to sauce and cook just until clams plump and edges begin to curl, 30 to 45 seconds. Stir parsley into sauce along with any meat juices accumulated on plate.
  • Serve chops topped with clams and sauce.

This Spanish treatment calls for a unique and flavorful stuffing of spicy chorizo, sweet dates, and Manchego cheese, a sharp cheese from the La Mancha region of Spain. Alternatively use local, affordable cheddar if Manchego is unavailable. 6 double-thick bone-in pork chops, about 12 ounces each
2 cups apple cider vinegar
1 cup light brown sugar, packed
1/2 cup sea salt
1 tablespoon dry mustard
1 tablespoon black peppercorns
1/2 gallon ice water
2 tablespoons unsalted butter
1 lb smoked spanish chorizo, diced
2 medium celery, finely chopped
1/3 cup dates, pitted and finely chopped
2 tablespoons shallots, finely chopped
1 tablespoon fresh parsley, minced
2 teaspoons fresh sage, minced
1/2 teaspoon smoked paprika
1 cup manchego cheese or 1 cup sharp cheddar cheese, shredded
to taste sea salt & fresh ground pepper

Steps:

  • Marinating Time: 3 hours.
  • To brine pork chops: Bring vinegar, brown sugar, salt, mustard, and peppercorns to a simmer over medium heat, stirring to dissolve salt. Do not inhale fumes. Transfer to large, deep food-safe container. Let cool until tepid. Stir in iced water. Submerge chops in brine. Refrigerate for 3 hours, no longer.
  • To make stuffing: Melt butter in a large skillet over medium heat. Add chorizo and cook, stirring occasionally, until lightly browned, about 5 minutes. Add celery, dates, and shallot, and cook, stirring often, until celery is tender, about 5 minutes. Stir in parsley, sage, and paprika. Transfer to a bowl and let cool completely. Stir in cheese and season with salt and pepper.
  • Remove chops from brine, rinse under cold water, and blot dry with paper towels. Cut a horizontal pocket in each chop to the bone using a sharp knife. Spoon equal amounts of stuffing into each chop, and close each opening shut with wooden toothpicks. Do not overstuff the chops; you may not use all of the filling.
  • Prepare a medium fire in an outdoor grill. (For a gas grill, preheat to about 400ºF. For a charcoal grill, let the coals burn until covered with white ash and you can hold your hand about an inch above the cooking grate for 3 seconds.) Brush cooking grates clean. Grill pork, with the lid closed as much as possible, turning occasionally, until an instant-read thermometer inserted horizontally into the center of a chop reads 145ºF, about 15 minutes. Remove from the grill and let stand for 3 to 5 minutes.
  • Remove toothpicks and serve.

I found this little recipe in the back of a Portuguese magazine. It is so good that I just couldn't keep it all to myself, so thought I would share it with all of you. Try and use fresh clams if at all possible,if not you will have to make do with the frozen ones. Truly hope you enjoy it!

1/2 kg clam
4 pork chops (good size ones)
2 tablespoons olive oil (to fry chop)
1 onion, sliced into thin circles
3 garlic cloves, finely chopped
1/2 kg tomatoes, with skin removed and sliced into circles
1/4 cup white wine
1 bay leaf
1 tablespoon tomato paste
2 tablespoons of chopped parsley (I prefer fresh cilantro)
1 teaspoon salt (or to own taste)
1 teaspoon red pepper flakes (or to your own taste)

Steps:

  • Place the clams into a large bowl with water and salt for a couple of hours, so all the sand can be removed.
  • Season your chops with salt and pepper to your own taste, and fry them in a pan, making sure oil is nice and hot.( when ready set aside in a casserole).
  • Meanwhile peel onion, garlic and tomatoes. Slice the onion and tomatoes, and chop the garlic very finely.
  • In a large skillet pour in the olive oil and add in garlic, once oil is heated add in the onion and stir till it starts turning a golden colour, at this stage add in the wine, tomato paste,tomatoes, bay leaf, and chopped parsley or cilantra ( what ever you like the best). Keep stirring everything, season with salt to your own taste and add in pepper flakes.
  • Meanwhile drain will your clams pass them through running water to make
  • sure all sand has been removed.
  • Place clams into tomatoes mixture, and when they are all open, pour over
  • the chops that are already in a casserole dish.
  • Sprinkle a little more parsley or cilantro over top for garnish, serve with what ever meet your fancy.

1 tablespoon olive oil
8 ounces fresh chorizo sausage, casings removed
1/2 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped celery
2 teaspoons minced garlic
2 corn muffins, crumbled
4 bone in pork rib chops, pocket cut in side (1 1/4 inch thick)
3 slices bacon, cut into 1/4 inch strips
1 large onion, sliced
2 tablespoons water
3 teaspoons minced garlic
2 tablespoons all-purpose flour
1 (14 ounce) can low sodium chicken broth
2 teaspoons cajun seasoning
2 tablespoons minced flat leaf parsley

Steps:

  • Preheat oven to 400°F
  • In large skillet, heat oil over medium heat. Cook chorizo 3 - 4 minutes. Add onion, bell pepper, and celery, saute 5 minutes. Season with salt and pepper. Stir in garlic and crumbled corn muffins. Cook 1 to 2 minutes; set aside.
  • When cool stuff 1/2 cup stuffing into pockets of pork chops. Close with toothpick. Set aside.
  • In large skillet fry bacon until browned, transfer to paper towels. Add pork chops to skillet; cook over medium-high heat 3 minutes. Turn and cook additional 3 minutes. Transfer to baking sheet. Roast chops 6 - 8 minutes.
  • Meanwhile discard all but 2 tablespoons dripping in skillet. Add onions, water and garlic to skillet; saute 2 - 3 minutes. Stir flour into skillet; cook 3 - 4 minutes. Pour chicken broth and Cajun seasoning into skillet and cook, stirring until thickened.
  • To serve: spoon half onion mixture onto serving platter. Place pork chops on onions; spoon remaining onions over chops. Sprinkle reserved bacon and parsley over. Serve immediately.
