ITALIAN FLATBREAD (PIADINA) WITH FONTINA AND PROSCIUTTO

Giada says, "Piadini is a lot like a pizza, except that the crust doesn't rise and it's typically cooked on a grill to give it a nice, smoky flavor and crunchy crust. You can top a piadina with anything you like. This sauceless combination is very typical of northern Italy, where piadini are especially popular."

3 1/2 cups all-purpose flour, plus extra for dusting
1/2 teaspoon baking soda
1 teaspoon fine sea salt, plus extra for seasoning
1 stick butter, cut into 1/2-inch pieces, at room temperature
2 tablespoons extra-virgin olive oil
1 pound whole milk ricotta cheese
2 teaspoons lemon zest (from about 2 small lemons)
Freshly ground black pepper
6 ounces fontina cheese, shredded (about 2 cups)
4 ounces prosciutto, thinly sliced-
1 cup chopped fresh basil

Steps:

  • Combine the flour, baking soda, and 1 teaspoon of salt in the bowl of an upright mixer fitted with a dough hook attachment. Add the butter and mix on low speed until incorporated, about 2 minutes. With the machine running, slowly add 10 to 12 tablespoons water until the mixture forms a dough around the hook. Transfer the dough to a lightly floured work surface and knead for 5 minutes until smooth. Cut the dough into 4 equal pieces. Form into disk shapes and wrap in plastic wrap. Refrigerate for 30 minutes.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. On a lightly floured work surface, roll out each piece of dough into an 8 to 10-inch circle, about 1/8-inch thick. Brush each circle with the extra-virgin olive oil and grill for 4 minutes each side. Remove the piadina from the grill to cool slightly. Combine the ricotta cheese and lemon zest in a small bowl. Season with salt and pepper. Spread each piadina with 1/2 cup of the ricotta mixture. Sprinkle the fontina cheese evenly over the ricotta cheese. Arrange 2 prosciutto slices on top of the cheeses. Cut each piadina into 8 wedges and transfer to a serving platter. Garnish with the chopped basil.

Ziti con Broccoli di Rape e Salsicce (Ziti with Broccoli di Rabe and Sausage) image

1/2 pound sweet Italian sausage
2 pounds broccoli di rape
3 tablespoons coarse salt
1 pound ziti
1/4 cup olive oil
3 large cloves garlic, crushed
1/4 teaspoon salt
1/4 teaspoon hot pepper flakes
2 teaspoons unsalted butter
1 cup chicken stock
1/2 cup grated Parmigiano cheese

Steps:

  • Grill or broil the sausage in advance. When cooled, slice it thin and set aside. Wash and drain the broccoli di rape and set it aside. In a large pot, put 10 quarts water on to boil, with 3 tablespoons coarse salt added, and immediately start preparing the sauce. Add the ziti to the pot when the water boils and cook until al dente. In a large, deep, heavy skillet with a fitted lid, heat the olive oil, add the garlic, and saute, uncovered, until golden, about 2 minutes. Add the broccoli di rape, 1/4 teaspoon salt, and pepper flakes, cover, and stream 5 minutes, stirring occasionally. Stir in the sausage. Add the butter and chicken stock, and cook over high heat, uncovered, about 3 minutes, until the liquids are slightly reduced. Add the drained pasta to the sauce and toss gently. Sprinkle on 1/2 of the cheese, toss again, serve immediately, and distribute the remaining cheese over the pasta.

1 3/4 cups 00 flour, plus more for dusting
1/4 teaspoon baking soda
1 teaspoon kosher salt
1/2 cup whole milk, at room temperature
1/4 cup plus 1 tablespoon olive oil
1/4 cup olive oil
1 pound hot Italian sausage, casings removed
1 yellow onion, thinly sliced into half-moons
Kosher salt and freshly ground black pepper
1 clove garlic, roughly chopped
1 bunch broccoli rabe, chopped into 2-inch pieces
1/2 teaspoon crushed red pepper flakes
1 lemon, juiced
1 pound provolone cheese, grated or 12 thin slices

Steps:

  • For the dough: Combine the 1 3/4 cups flour with the baking soda and salt in a large bowl. Whisk to eliminate any lumps. Pour in the milk and 1/4 cup of the olive oil and mix until a dough forms. Grease another large bowl with the remaining 1 tablespoon oil. Add the dough, cover with a kitchen towel or plastic wrap, and set aside for 10 minutes.
  • Meanwhile, make the filling: Heat a large skillet over medium-high heat. Add 2 tablespoons of the oil. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 5 minutes. Move the sausage to one side of the skillet, add the onions and season them with salt and pepper. Cook, stirring occasionally, until softened, about 3 minutes. Remove from the heat and set aside.
  • In another large skillet, heat the remaining 2 tablespoons olive oil over high heat. Add the garlic, broccoli rabe and red pepper flakes. Season with salt and pepper. Cook, stirring occasionally, until the rabe turns bright green, 3 to 4 minutes. Remove from the heat and sprinkle with the lemon juice. Set aside.
  • Heat a griddle over medium-high heat. Portion the dough into 6 balls. On a lightly floured surface, roll the balls until about 1/4 inch thick. Place 2 rounds onto the hot griddle. Cook until browned on one side and bubbles begin to form, about 1 minute. Flip and cook the other side for 30 seconds. Transfer the flatbread to a baking sheet. Keep the griddle over the heat.
  • Place some of the sausage filling and broccoli rabe on one half of each flatbread. Top each with the grated cheese (or 2 slices of cheese) and fold into a half moon. Place the sandwiches back on the griddle and weigh them down with a foil-covered brick or small cast-iron skillet. Cook until the cheese melts, about 1 minute. Repeat with the remaining dough and sandwiches. Remove from the heat, slice in half and serve.

PIADINE ROMAGNOLE (ITALIAN FLATBREAD)



Piadine Romagnole (Italian Flatbread) image

This is a traditional recipe from my fathers family. There a many versions of them. For this reason I will give alternatives for the ingredients. Traditional it is eaten with Parma ham and rucola. You can fill it with cheese or whatever you like. These should be more cripy than mexican tortilla and should be eaten just after cooking. Don't store them tight, they would turn too soft. Fold the warm piadina and fill it with your favorite ingredients.

500 g flour (4 cups)
75 ml olive oil (1/3 cup, original recipe with rendered lard but I use olive oil only)
1 teaspoon baking soda
1/2 teaspoon salt
100 ml milk (1/2 cup and 1 tablespoon)
100 ml water (1/2 cup and 1 tablespoon)

Steps:

  • Work all together with food processor. Adjust humidity adding flour or water until dough is not sticky and can be rolled out easily.
  • Lest rest at least 60 minutes.
  • Cut into 8 slices and shape them into balls.
  • Roll out each ball until about 10 inches size. You will not need flour on the table.
  • Put the rolled out piadine on a tray using parchment foil to separate them .
  • Now heat up your skillet or an old non sticking fry pan to medium high.
  • Bake dry on the first side, check the underside, and when it looks done, flip it and bake the other side. The piadina should be pale, but with dark brown spots. Be careful not to burn it. During baking pinch them and roll them with the fork. In about 3-4 minutes they should be ready.
  • In the meanwhile roll out the second piadina.
  • Note: If you use milk it will be softer inside but you can replace it with water this depends on your choice.
  • Note: I work with to pans at the same time. When 4 pieces are ready we eat them. Then I prepare the next ones. I know, this is not chef friendly, but fresh done are much better.

(Emilia-Romagna Flatbread with Broccoli Rabe) A _piadina_ is baked on a griddle, folded in half, and filled. In Emilia-Romagna, the fillings might include sautéed greens; cold meats such as prosciutto or salami; and semisoft or soft cheeses such as Fontina Valle d'Aosta. Piadine are usually eaten like sandwiches but can be cut into small wedges to serve as a first course.

Yield Makes 8 piadine

Number Of Ingredients 10

3 1/2 cups unbleached all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
1 cup warm water
1/4 cup olive oil
2 pounds broccoli rabe
2 large garlic cloves
3 tablespoons olive oil
a pinch dried red pepper flakes
coarse salt to taste

Steps:

  • In a food processor pulse flour, salt, and baking powder until combined. Add water and oil and blend dough until smooth and elastic, about 1 minute. On a lightly floured surface knead dough 1 minute. Form dough into a ball and cover with an inverted bowl. Let dough stand at room temperature at least 20 minutes and up to 1 hour. Dough may be made 1 day ahead and chilled in a sealable plastic bag. Bring dough to room temperature before proceeding.
  • Discard hollow stems from broccoli rabe and cut into 2-inch pieces. In a large saucepan of boiling salted water cook broccoli rabe 5 minutes, or until almost tender. Drain broccoli rabe in a colander.
  • Thinly slice garlic. In dried pan heat oil over moderately low heat until hot but not smoking and cook garlic, stirring, until golden. Stir in broccoli rabe, red pepper flakes, and coarse salt. Cover pan and cook 5 minutes, or until broccoli rabe is tender. Filling may be used hot or at room temperature.
  • Divide dough into 8 pieces. Cover all but 1 piece with inverted bowl. Form remaining piece into a ball and on a lightly floured surface with a lightly floured rolling pin roll out dough into an 8-inch round. Transfer round to a wax paper-lined plate and cover with another sheet of waxed paper. Roll out remaining dough pieces in same manner, layering them between sheets of wax paper.
  • Heat a griddle or well-seasoned (not non-stick) skillet over moderately high heat until a drop of water scatters and then evaporates immediately. Cook 1 dough round until it begins to firm up and turns golden, about 30 seconds (if round browns too quickly, reduce heat slightly). Turn round over and cook other side until golden. Wrap round in foil. Cook remaining dough rounds in same manner, wrapping in foil with first round. Piadine may be kept warm, wrapped well in foil, in a 250°F. oven 30 minutes.
  • To serve, fold piadine in half and fill with broccoli rabe.
