Grilled Pork Tenderloin with Spicy Cucumber, Apple and Mango Salad image

This recipe actually started off very different for me because I initially wanted to make my version of a Thai green papaya salad. I had the hardest time finding green papaya while I was visiting my in-laws, so I used what I found in the store: crunchy green apples, sweet tangy mango and cooling cucumber. Luckily, this quickly turned into one of my new favorite salads. It goes great with grilled pork, chicken, shrimp and fish.

One 1 1/2-pound pork tenderloin
Grapeseed oil, for greasing
Kosher salt and freshly ground black pepper
1 English cucumber, cut into 3-inch-long matchsticks
1 green apple, cored and cut into 1/4-inch-thick half-moons
1 mango, pitted and cut into 1/4-inch-thick half-moons
1/2 cup loosely packed mint leaves, torn, plus whole leaves for garnish
1 small lime, zested and juiced
1 medium jalapeno, finely minced
1 clove garlic, minced or grated
1 tablespoon light brown sugar
1 tablespoon fish sauce
1 tablespoon tamari
2 teaspoons rice wine vinegar
1 teaspoon kosher salt
1/4 cup lightly salted, dry roasted peanuts, roughly chopped

Steps:

  • For the pork: Preheat the grill to medium-high, about 375 degrees F, or preheat a large grill pan over medium-high heat. Clean and oil the grill grates or grill pan.
  • Lightly oil the tenderloin and sprinkle with salt and pepper. Grill, covered, until you get nice grill marks and a thermometer inserted into the thickest part registers 145 degrees F, flipping once, 14 to 16 minutes. Remove to a cutting board and let rest for 5 minutes. Slice into 1/2-inch thick pieces and transfer to a large plate or platter.
  • While the pork grills, make the salad: Combine the cucumber with the apple, mango and mint in a large bowl. Combine the lime zest with the juice, jalapeno, garlic, brown sugar, fish sauce, tamari, vinegar and salt in a small bowl. Whisk together then pour over the salad (see Cook's Note). Add some of the peanuts, saving the rest for garnish.
  • Top the pork with the salad, mounding it high in the middle of the platter. Sprinkle with the reserved peanuts and a few mint leaves.

This delicious grilled pork is an especially nice dish to do in the fall, when there's an abundance of fresh apples. Prep time doesn't include marinating time.

4 pork chops, 1 inch thick
1 cup apple juice
2 tablespoons lemon juice
1 teaspoon sage
2 tablespoons brown sugar
1 onion, minced
2 -3 firm apples (I use Granny Smith for this)
salt & freshly ground black pepper

Steps:

  • Place meat in a plastic bag.
  • In a small bowl, mix apple and lemon juices, sage, brown sugar and onion and stir until sugar is dissolved.
  • Pour over meat.
  • Close bag tightly and turn to coat chops well.
  • Place in a bowl and refrigerate several hours or overnight.
  • Remove chops from marinade and drain well.
  • Place marinade in a small saucepan, bring to a boil and continue to boil for one full minute.
  • Grill chops over hot coals for 20 minutes, turning and basting with marinade occasionally.
  • Core apples but do not peel.
  • Cut into thick rings.
  • Brush apples with marinade and place on grill around pork.
  • Continue grilling pork and apples until pork is done as desired and apples are tender, about 15 minutes.
  • Remove from grill and sprinkle lightly with salt and pepper.

4 Gala apples
3 tsp. maple syrup
1 tbsp. olive oil

Steps:

  • Prepare grill for covered direct grilling on medium.
  • Place beans on 16- by 12-inch sheet of heavy-duty foil. Fold in half; crimp foil edges to create sealed packet. Toss apples with 1 teaspoon each maple syrup and oil. Rub 1 teaspoon oil all over pork, then sprinkle with 1/4 teaspoon each salt and black pepper.
  • Place packet, apples, and pork on grill; cover. Grill apples 8 minutes, turning once. Transfer apples to large bowl; cool. Grill beans 10 minutes. Transfer packet to plate; open and let cool. Grill pork 15 minutes or until instant-read thermometer inserted into pork registers 145 degrees F, turning occasionally. Transfer to cutting board; let rest 10 minutes.
  • Chop lettuce. In very large bowl, whisk vinegar, mustard, remaining 1 tablespoon oil, 2 teaspoons syrup, and 1/8 teaspoon each salt and black pepper. Add spinach, lettuce, beans, and apples; toss well. Thinly slice pork across grain. Serve with salad.

1 tablespoon packed light brown sugar
Pinch of cayenne pepper
1 large pork tenderloin (about 1 1/4 pounds)
Kosher salt and freshly ground black pepper
3 tablespoons rice vinegar
2 tablespoons honey
1 tablespoon low-sodium soy sauce
1 teaspoon dijon mustard
1 teaspoon grated peeled fresh ginger
1/4 cup plus 2 tablespoons vegetable oil
3 large plums, halved and pitted
1 bunch scallions, trimmed
1/2 small head napa cabbage, chopped (about 5 cups)
4 ounces snow peas, trimmed and chopped (about 1 cup)
1 cup shredded carrots (about 2 carrots)
1 cup bean sprouts, roughly chopped
1 cup chopped fresh mint
1/2 cup chopped roasted salted cashews

Steps:

  • Preheat a grill to medium high. Combine the five-spice powder, brown sugar and cayenne in a small bowl. Butterfly the pork: Slice lengthwise down the center, stopping about ½ inch before cutting all the way through. Open the pork like a book and flatten slightly with your hands. Lay a piece of plastic wrap on top and pound with the flat side of a meat mallet or a skillet until ½ inch thick. Season with salt and black pepper, then rub all over with the five-spice mixture; set aside. (This can be done up to 2 hours ahead; cover and refrigerate.)
  • Make the dressing: Whisk the vinegar, honey, soy sauce, mustard and ginger in a small bowl. Slowly whisk in 1/4 cup vegetable oil until smooth. Refrigerate until ready to serve.
  • Brush the pork with 1 tablespoon vegetable oil. Grill until well marked and just cooked through, about 6 minutes per side. Transfer to a cutting board and let rest at least 5 minutes.
  • Toss the plums and scallions with the remaining 1 tablespoon vegetable oil and season with salt and black pepper. Grill, turning, until lightly charred, about 3 minutes. Transfer to the cutting board.
  • Combine the cabbage, snow peas, carrots, bean sprouts, mint and cashews in a serving bowl. Chop the pork, plums and scallions and add to the bowl along with the dressing; season with salt and black pepper and toss.

Pork and fruit is a classic combination, nearly as old as time, and this recipe is no exception. Here, we've quickly allowed lean pork tenderloin to mingle with a sweet mustardy marinade before getting roasted and sliced and served with a hearty fall salad loaded with sweet oranges and tart apples.

1 large or 2 small pork tenderloins (about 1 3/4 pounds total)
Kosher salt and freshly ground pepper
1/4 cup grainy mustard
2 tablespoons pure maple syrup
1 tablespoon finely chopped fresh sage
3 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
2 navel oranges
1 tart apple, thinly sliced
1/2 head radicchio, thinly sliced
1/2 cup chopped fresh parsley
1/3 cup toasted walnuts, roughly chopped

Steps:

  • Preheat the oven to 425˚ F. Season the pork all over with salt and pepper. Combine the mustard, maple syrup, sage, 2 tablespoons lemon juice and 1 tablespoon olive oil. Rub all over the pork and set aside to marinate while you prepare the salad.
  • Meanwhile, with a sharp paring knife, remove the peel and pith from the oranges. Working over a large bowl, cut along the membranes to remove the segments. Squeeze the membranes to release any remaining juice into the bowl. Add the apple, radicchio, parsley, walnuts and remaining 1 tablespoon each olive oil and lemon juice to the bowl. Season with salt and pepper and toss to combine.
  • Line a rimmed baking sheet with nonstick foil. Add the pork to the pan and drizzle with any remaining marinade. Roast until a thermometer inserted into the center of the pork registers 135˚ F, 15 to 20 minutes. Switch the oven to broil and broil until the marinade is browned, about 2 minutes. Transfer the pork to a cutting board and let rest 5 minutes.
  • Slice the pork and serve with the apple and orange salad.

1 teaspoon fennel seeds
1 teaspoon black peppercorns
1 teaspoon pimenton
4 whole cloves
1 teaspoon light brown sugar
3 bone-in center-cut pork chops (10 to 12 ounces each)
Sauteed Apples:
2 tablespoons sugar
1 teaspoon lemon juice
1 Granny Smith apple, cored and sliced into 1/4-inch-thick slices
1 whole star anise
1 tablespoon unsalted butter
2 tablespoons brandy
Salt
2 cups canola oil, for frying
1/2 cup all-purpose flour
1/2 cup cornstarch
1/2 teaspoon salt, plus more as needed
A few grinds of black pepper
1/2 cup buttermilk
1 large yellow onion, sliced into 1/2-inch rings and separated
Mustard greens, for serving

Steps:

  • There are rubs and there are brines. A brine is a slower process where the rub, sugar and salt are diluted to penetrate the protein and break it down so that the meat is juicy, flavorful and tender after cooked. I love brined pork and chicken, but if I am cooking late and didn't think about it the day before, I will have to do a nice rub on the meat, which is just more concentrated and expedited, and that's what I have here. Pork chops go with so many accompaniments but I do love the acidity of apples or an applesauce with pork chops and the bite of mustard greens. You can use mizuna, or arugula if you cannot find mustard greens. Also, you can put a schmear of hot mustard mixed with a little honey or molasses on the plate instead for the kick. I like onion rings, in general. My other favorite accompaniment to pork chops is kimchee tossed with some fresh fruit such as peaches or plums.
  • To cook the pork chops: Grind all the spices together with the sugar and rub all over the pork chops. Set aside for 30 minutes to an hour at room temperature.
  • Preheat the grill on high or heat a cast-iron skillet over medium-high heat on the stovetop and preheat the oven to 375 degrees (Add 1 tablespoon olive oil to the pan if cooking in cast iron).
  • Cook the pork on one side for 4 to 5 minutes on the grill or in cast iron. Flip over and cook for another 4 to 5 minutes on the grill; if cooking in cast iron, flip the chop and transfer to the oven for 4 to 5 minutes. Set aside to rest for 5 minutes.
  • To cook the sauteed apples: In a medium saute pan over medium-high heat, combine the sugar, 1 tablespoon water and a drop of lemon juice. Cook until sugar caramelizes to golden brown. Turn off the heat and add the apple slices and star anise. Return the pan to medium-high heat, stir in the butter and remaining lemon juice. Saute, stirring, for 2 minutes, adding the brandy in the last minute of cooking with a pinch of salt. Simmer briefly to burn off the alcohol and thicken the caramel. Set aside.
  • To cook the onion rings: Bring the canola oil to 360 degrees F in a large pot. Combine the flour, cornstarch, salt and pepper in a bowl. Pour the buttermilk into a shallow dish or bowl. Dip the onion rings in the flour mixture to dredge, shaking off any excess. Dip in the buttermilk to coat, and then back into the flour mixture. Shake off any excess flour. Working in batches, fry the rings until light golden brown, 5 to 7 minutes. Drain on paper towels and sprinkle with salt.
  • Serve the pork chops with the sauteed apples, onion rings and mustard greens.

1 lemon
4 x 140g pieces pork tenderloin
2 tbsp sage leaves, roughly chopped
3 eating apples , peeled, cored and chopped
1 rounded tsp light muscovado sugar

Steps:

  • Heat grill to high. Grate the zest from half the lemon and squeeze the juice from both halves. Split the pork fillet down the centre, cutting almost all the way through, and open out like a book. Lift onto a baking tray and season with salt, pepper and the lemon zest. Sprinkle with 1 tbsp of the sage. Grill for 8-10 mins, turning once, until cooked through.
  • Meanwhile, pour the lemon juice into a small pan. Add the apple to the pan with the remaining sage, sugar, salt and pepper. Bring to the boil, stirring, then simmer until soft, about 6 mins. Serve with your favourite green veg and potato wedges (recipe, top right).

1 pinch garlic salt
1 pinch ground black pepper
3 tablespoons butter
3 Granny Smith apples, sliced, or more to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Generously season pork tenderloin with garlic salt and pepper.
  • Cook pork on the preheated grill, turning twice on each side, until no longer pink in the center, 6 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pork from grill and cover with aluminum foil; let rest for 5 minutes.
